Burrata With Caramelized Donut Peaches
Makes For A Perfect Summer Appetizer!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 10 minutes

Ingredients
2 Burrata
5-7 Donut peaches, ripe, not mushy 
1/4 cup sugar
1 tsp apple cider vinegar 
minced parsley, garnish
olive oil for drizzle

Focaccia Bread

Directions
Cut peaches into cubes and place on heated pan and saute until some juices run out.  Sprinkle in the sugar, vinegar and continue to saute until sugar melts and starts to caramelized, remove from heat and cool.  Place cut open Burrata on a serving dish and place cooled peaches over Burrata.  Garnish with minced parsley, drizzle with olive oil and serve with Focaccia bread.

Grilled Peaches With Sweet Ricotta
Smokey, Rich & Creamy

Cooking Time: 4 minutes




Ingredients
4 peaches, skin on, pitted, halved
1/2 cup Ricotta cheese
1/2 cup Mascarpone cheese
1/2 cup powdered sugar
fresh nutmeg

Cooking Tools
Outdoor grill
Small mixing bowl


Directions
Place peaches cut side down on preheated grill.  grill for 1-2 minutes.  Remove from gril and remove outside skin, which will come off easy, let peaches cool. In a small mixing bowl, add; Ricotta, Mascarpone, powdered sugar and fresh grated nutmeg (just a pinch). Mix well and dollop over cooled grilled peaches.

Upside Down Peach Pullman Cake
A Whole New Level Of Goodness!

Cooking Time: 1 hour





Ingredients
1 1/2 bags frozen peaches
3/4 - 1 cup brown sugar
1 tsp vanilla extract
1/8 tsp cinnamon
pinch of nutmeg
1/2 stick butter + greasing
whip cream for topping

Cake:
Ingredients
1 box Duncan Hines Yellow Cake Mix
1 box Jiffy corn bread mix
1 cup water
1/3 cup milk
1/3 cup oil
1/2 stick butter, melted
4 eggs

Directions
Preheat oven 350 Degrees F.  In a skillet on medium heat, add; butter, peaches, brown sugar, vanilla, cinnamon, nutmeg and cook until sugar is melted and peaches are cooked. Set aside peach mixture to cool.  In a large mixing bowl add all the ingredients for the cake batter and use a hand mixer until well incorporated.  Grease Pullman loaf, add peaches and all the juices to line the bottom of the pan.  Pour cake batter gently into the Pullman loaf, not to disturb the peaches.  Place Pullman Loaf lid on and bake in oven for approximately 45 minutes, use a toothpick test in the center of the loaf.  If it does not come out clean, place back in the oven without the lid on. Adjust cooking time.
Let the cake cool slightly and with caution, invert onto a serving platter.  Serve slices at room temperature with whip cream.

Peach Glazed Roasted Ham

Peach Glazed Roasted Ham
Just In Time For Easter Dinner!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 3 hours

 
Ingredients
6 lb. bone-in fresh ham
1/4 cup soy sauce
10-12 whole cloves
pepper

Peach Glaze
Ingredients
1 cup peach nectar
1/2 cup brown sugar
1/2 stick butter
3/4 cup peach/apricot preserve
1/4 tsp cinnamon
pinch of ground clove
pinch of nutmeg
2 cups frozen peach slices

Cooking Tools
Roasting pan
skillet
Pastry brush



Directions
Preheat oven to 375 Degrees F.  Cut fresh ham, slicing 1/4 inch deep into the fat-side.  Slicing across the the ham 1 inch apart and repeat going the opposite direction, creating a crosshatch pattern.  Rub soy sauce all over the ham, grind some pepper and insert whole clove in between the crosshatch pattern.  Place in oven and cook for 3 hours. for the last hour, brush peach glaze (just the glaze not the peaches) over the ham every 15-20 minutes. Reserve some of the glaze for pouring with the peaches before serving!  Let ham rest for about 10 minutes before carving.

For the Peach Glaze: In a skillet, add butter and sugar on low heat.  When the sugar starts to melt, add peach nectar, peach preserve, cinnamon, ground cloves, nutmeg and frozen peach slices.  Cook for 20 minutes on a simmer.
