Blueberry Lemon Coffee Cake

Blueberry Lemon Coffee Cake
A Perfect Slice With A Cup Of Hot Coffee!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 40 minutes


Ingredients
Duncan Hines Lemon Supreme Cake Mix
3/4 cup coconut oil, melted
juice of half lemon
zest of half lemon
1 cup of water
1 tsp almond extract
3 eggs
2 cups fresh blueberries
Pam cooking spray

Cooking Tools
Bottom release pan
2 medium mixing bowls
Pastry cutter
Whisk 

Directions
Preheat oven to 350 Degrees F. In a whisking bowl, whisk together cake mix, oil, lemon juice, zest, water, extract and eggs.  whisk batter until smooth,then fold in fresh blueberries.  Spray pan with Pam cooking spray evenly.  Pour batter into pan and top with Crumble Topping (recipe below) evenly over cake batter.  Bake in oven for 40 minutes, can broil to for the last minute to a golden brown.
Cool then release from pan.

Crumble Topping
Ingredients
1 cup flour
3/4 cup sugar
1 stick butter, diced 

Directions
Place ingredients in a mixing bowl and use a pastry cutter to cut butter into the flour mixture until crumbles form.  You can also use your hands to create larger crumbles.

Banana Bread

Banana Bread
Delicious & Gluten Free!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 50-60 minutes


Ingredients
2 cups Bob's Red Mill gluten free flour
5 ripe bananas, mashed
2 ripe bananas, sliced long ways
3/4 cup Swerve, sugar replacement
1 stick butter, room temperature
2 eggs
2 heaping tbsp plain yogurt
1/2 tsp vanilla bean extract or paste
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup chopped walnuts
butter cooking spray

Cooking Tools
2 medium mixing bowl
1 large bread loaf pan or 2 medium

Directions
Preheat oven to 350 Degrees F. Grease pans with butter cooking spray. Mix dry ingredient in mixing bowl 1. Mix bananas, sugar, eggs, butter, yogurt, vanilla extract in mixing bowl 2. With a whisk, add dry ingredients into wet ingredients 1/2 cup at a time until mixed well.  Fold in walnuts and pour batter into prepared pans. Lay sliced bananas on top of batter. Bake in preheated oven for 50-60 minutes or until toothpick test come out clean.  Let bread slightly cool before removing and slicing.
Yields 1 or 2 loaves

Berry Crumb Pie

Berry Crumb Pie
Perfect For A Party Of Two!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 30-35 minutes


Ingredients
1 box Pillsbury Pie Crust
2 cups strawberries, halved
1 1/2 cups blueberries
1 1/2 cups black berries
1 1/2 cups flour
1/2 cold stick butter, diced
1 cup sugar, divided
1 tsp vanilla extract

Cooking Tools
2 Small cast iron pan
Small mixing bowl
Pastry cutter
Parchment lined sheet pan

Before you pop in the oven!

Directions
preheat oven to 400 Degrees F. In a small mixing bowl, add; flour, 1/2 cup sugar, diced butter and vanilla extract.  Cut flour mixture with a pastry cutter until it resembles crumbs, you can also use your fingers. Place pastry dough into cast iron, trim off excess dough and create pleates along edges. Place some of the flour mixture just to line the bottom of the pie before adding berries. Equally place berries into each of the dough lined cast iron pans. Sprinkle evenly the rest of the sugar on top of the berries and layer more of the flour mixture on top of the berries.  Place pie on sheet pan and bake in oven for 30-35 minutes or until golden and bubbly.  Completely cool before serving.
Serves 2

Hummingbird Cake

Hummingbird Cake

Cooling Time: 1 hour


Ingredients
3 cups All-purpose flour
1 1/2 cups sugar
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup pecans, chopped
2 large ripe bananas, mashed
1/2 cup canola oil
1/2 cup butter, softened + greasing
1 tsp vanilla extract
3 eggs
1 1/2 cups fresh pineapple, chopped & drained
Edible flowers
Cooking Tools
3  8" cake round pans
2 large mixing bowls
Small mixing bowl
Parchment paper
Flour sifter
Large whisk
Cooling rack
Off- set icing spatula
Hand mixer



Directions
Preheat oven to 350 Degrees F.  Grease cake pans with butter, cut parchment into rounds to fit bottom of pan and grease the parchment paper.  In a large mixing bowl, sift flour, sugar, baking soda, cinnamon, salt and nutmeg.  In a small mixing bowl, mix together the smashed bananas, pineapple, oil, vanilla and eggs. Add all the wet ingredients into the dry ingredients and blend well with a large whisk.  Divide batter among the 3 prepped cake pans.  Bake for 25 minutes, insert wooden toothpick in the center to make sure the toothpick comes out clean.  Cool cake completely on a cooling rack before layering with filling and icing the cake. Once cakes are cooled, cut the cakes to make it more level if necessary.  Spread Pineapple Pecan Filling (recipe below) between layer.  Spread Cream Cheese Icing (recipe below)  Frost icing starting at the top and lightly ice on the sides, leaving the layers exposed.  Cook's Note:  Their will be icing leftover, you can use more icing on the cake or use for other baked goods.  Add edible flowers on top and cascading down the cake.
Serves 6-8


Pineapple Pecan Filling
Ingredients
1 cup pineapple, chopped
1/2 cup pecans, chopped
2 cups of the Cream Cheese Icing

Directions
Remove excess moisture from the chopped pineapple.  Mix all the ingredients together.


Cream Cheese Icing
Ingredients
2 8oz. package cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla extract
6 cups confectioners sugar

Directions
In a large mixing bowl, beat with a hand mixer the cream cheese, butter, vanilla extract until creamy.  Gradually add confectioner sugar until completely incorporated.

Double Chili Cheeseburger

Double Chili Cheeseburger
I Use My Cincinnati Chili Recipe, But Any Chili Will Do!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 1 hour 15 minutes


Ingredients
8 patties Schweid & Sons C.A.B Custom Blend http://schweidandsons.com/products
4 hamburger buns + 4 bottom buns
2 cups Monterrey Jack cheese, shredded
1/2 cup pickled jalapeno slices
Cincinnati Chili http://womanandthewhisk.blogspot.com/2014/05/cinncinnati-chili.html
sour cream
salt
pepper
Cooking Tools
Outdoor grill
Medium pot


Directions
Prepare Cincinnati Chili, without the spaghetti ahead of time. Preheat outdoor grill.  Salt and pepper hamburger patties and place on hot grill and cook for several minutes on each side.  Place shredded cheese equally on each patty.  Take off grill once cheese has melted.  Assemble the double cheeseburger, ladle hot chili on burger and top with jalapenos and sour cream on each burger.
Serves 4

Strawberry Cake

Strawberry Cake
The Perfect Dessert For The Summer!
Difficulty: Easy
Prep Time: 25 minutes 
Cooking Time: 45-50 minutes
Cooling Time: 2-3 hours 


Ingredients
1 box white cake mix
1 (3 oz.) box strawberry-flavored instant gelatin
1 1/2 cups fresh strawberries, pureed
3 cups fresh strawberries, halved for topping
1 tsp vanilla extract
4 large eggs
1/2 cup vegetable oil
1/4 cup butter melted
1/4 cup water
2-4 drops red food coloring (optional)
Fresh whipped cream

Cooking Tools
9 inch spring form pan
Hand mixer
Food processor

Directions
Preheat oven to 350 degrees F. Lightly grease pan and set aside.  Puree strawberries in the food processor, to yield 1 1/2 cups.  In a large bowl, combine cake mix and gelatin. Add pureed strawberries, vanilla extract, eggs, oil, butter and water.  You can add food coloring to make the cake batter more red. Beat at a medium speed with an electric hand mixer until smooth. Pour into prepared pan, and bake for 45 minutes, or until a wooden pick inserted in the center comes out clean. Completely cool cake in pan and release sides of pan and remove.  Place fresh whipped cream on top of cooled cake and layer with fresh strawberry halves.  Serve immediately.

Sunday Pot Roast

Sunday Pot Roast
This Recipe Is A Family Favorite!
Difficulty: Easy

The Roast Is Fork Tender!

Ingredients
6 lb. chuck roast
5-6 medium carrots, peeled and cut
5-6 celery, peeled and cut
1 onions, quartered
8 medium red potatoes, halved
4 cloves garlic, minced
1 tsp thyme
salt
pepper
olive oil

Directions
Preheat oven 380 Degrees F.  In a large deep pan (I use disposable aluminum pan for easy clean-up)  Place chuck roast in pan. In a large mixing bowl add vegetables, garlic and drizzle oil to coat; toss and place in pan surrounding the chuck roast.  Sprinkle with salt, pepper and thyme.  Use foil to cover pan and seal the edges.  Cook for 3 hours and remove foil and add Brown Gravy (recipe below) over all the pot roast and place back in oven without foil cover and cook for additional 1 1/2 hours.  Remove roast and vegetable from baking pan without gravy to a serving platter.  You can use the pan gravy, minus the excess fat as the gravy for the Pot Roast.
Serves 4-6

A Chuck Roast Is The Perfect Cut Of Beef For This Recipe.

Brown Gravy
Ingredients
2 cups water  
2 tsp Better than beef bouillon  
1/4 tsp ground black pepper  
1/4 tsp Kitchen Bouquet  
2  tbsp butter  
1/2 tsp garlic powder  
1/4 tsp onion powder  
Thickener
2  tbsp cornstarch  
3  tbsp cold water

Directions
Boil all ingredients in a pot together, except for thickener.
Once the mixture boils, mix the cold water and cornstarch into a slurry paste in a small bowl. You may need to add a tiny bit more water, but it should be the consistency of runny glue.  Slowly pour in thickener, while stirring. Continue boiling for 2-3 more minutes, still stirring. Remove from heat and let cool to thicken more.
