Bourbon Stout Chili

Bourbon Stout Chili
Beer In Chili Is Magical!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 1 hour



Ingredients
1 1/2 lbs ground round beef
1 cup red kidney beans, rinsed and drained
1 cup pinto beans, rinse and drained
2 dried Ancho chilies, *( hydrated and pureed)
1 tbsp jalapenos, seeded, minced (optional)
1 cup green pepper, diced
3/4 cup red pepper, diced
1 cup onion, diced
5 cloves garlic, minced
1 1/2 cups Bourbon Stout Beer
1 29 oz. can tomato sauce
1 14 oz.  can diced tomatoes
1 4.5 oz. green chilies, chopped
1/2 cup sofrito base
2 heaping tbsp chili powder
1 tsp cumin
1/2 tsp pepper
1/2 tsp salt
1/2 tsp cinnamon
1 tbsp raw sugar
minced parsley for topping
shredded cheddar cheese for topping

Cooking Tools
Large pot 

Directions
In a large pot on medium heat, cook ground beef, drain any excess fat.  Add onions, peppers, jalapenos (optional), garlic and saute for a few minutes.  Add tomato sauce, diced tomatoes, sofrito, green chilies, chili powder, cumin, salt, pepper, cinnamon, sugar and beer; cook for 15 minutes on low.  Add the beans and cook for additional 40 minutes on a low simmer.  Serve with a sprinkle of minced parsley and shredded cheese on top the bowl of chili.

Chicken Barley Chili

Chicken Barley Chili
Perfect On A Cold Winters Night!
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 35 minutes





Ingredients
1 cup onions, diced
1  14oz. can diced tomatoes
1  14oz. can stewed tomatoes
1 cup tomato sauce
3 cups chicken stock 
1 cup quick cook barley
1 tbsp chili powder
1 tsp chipotle powder
2 clove garlic, minced
1 cup canned black beans, rinsed & drained
3 cups cooked chicken, diced
1/2 cup frozen corn
1 tbsp sugar
1 tsp smoked paprika
1/2 tsp oregano
1/4 cup cilantro, chopped
2 tbsp olive oil
lime wedges, garnish
salt
pepper

Cooking Tool
Medium stock pot 

Directions
On medium heat, add olive oil to pot and saute onions for a few minutes. Add in all the ingredients except the cooked chicken and cook for 20 minutes. Stir in chicken and cook for additional 10 minutes.  Adjust seasoning to taste.  Garnish with lime wedge and squeeze lime juice into the chili.
Serves 4

Double Chili Cheeseburger

Double Chili Cheeseburger
I Use My Cincinnati Chili Recipe, But Any Chili Will Do!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 1 hour 15 minutes


Ingredients
8 patties Schweid & Sons C.A.B Custom Blend http://schweidandsons.com/products
4 hamburger buns + 4 bottom buns
2 cups Monterrey Jack cheese, shredded
1/2 cup pickled jalapeno slices

sour cream
salt
pepper

Outdoor grill
Medium pot


Directions
Prepare Cincinnati Chili, without the spaghetti ahead of time. Preheat outdoor grill.  Salt and pepper hamburger patties and place on hot grill and cook for several minutes on each side.  Place shredded cheese equally on each patty.  Take off grill once cheese has melted.  Assemble the double cheeseburger, ladle hot chili on burger and top with jalapenos and sour cream on each burger.
Serves 4

White Chicken Chili

White Chicken Chili
Perfect For Those Who Do Not Like Tomato Based Chili!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 35 minutes


Ingredients
4 cups cooked rotisserie chicken, chunks
1 1/2 cups green pepper, diced
1 1/2 cups onion, diced
1/2 cup cilantro leaves, chopped
2 cloves garlic, sliced
 1 1/2 cups canned garbanzo beans, drained, rinsed
1 1/2 cups canned cannellini beans, drained rinsed
1 cup canned green chilies, diced
1 cup avocado, diced
1 cup yellow tomatoes, diced
4 cups chicken broth
2 tbsp olive oil
2 tsp cumin
2 tbsp tomatillo salsa
salt
pepper 

Cooking Tools
Stock pot

Directions
Heat stock pot on medium heat, add; olive oil, green pepper, onion, garlic and saute for 5 minutes. Add into the pot, chicken, cilantro, beans, green chilies, chicken stock, cumin, tomatillo salsa, salt and pepper to taste.  Cook for 30 minutes to reduce liquid.  You can create a thicker chili by smashing some beans and mixing throughout the chili.  Garnish with diced avocado and  yellow tomatoes.

Chipotle Black Bean Chili

Chipotle Black Bean Chili
This Recipe Can Be Easily Converted To A Vegetarian Chili!

Ingredients
1/2 lb. Chorizo sausage, bulk
1/4 lb. ground beef
4 cups chunky salsa
4 cups  beef stock
1 15 oz. canned black beans, rinsed and drained
1 15 oz. canned pinto beans, rinsed and drained
1 small can, chipotle chili peppers in Adobo sauce
1 1/2 cups onions, diced
1 1/2 cups green peppers, diced
1 1/2 cups potatoes, peeled, diced
1/2 cup corn
1 4 oz. can green chili, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
1 tsp dried oregano
1 tbsp sugar
salt
pepper
1 avocado, diced (garnish)
cheddar cheese, shredded (garnish)
sour cream (optional)

Directions
In a small mixing bowl, add; chorizo sausage and ground beef and mix by using you hands, (no need to add seasoning, the chorizo has plenty of seasoning in them). Make small meatballs and place them on a skillet and brown on all sides, set aside.  In a large stock pot, add; salsa, beef stock, black beans, pinto beans, chipotle peppers, potatoes. onions, green peppers, garlic, corn, chili powder, cumin, dried oregano, sugar, salt and pepper to taste.  Cook over medium-low heat, add chorizo beef meatballs.  Cook uncovered for about 45 minutes to an hour, you want the liquid to reduce some.  Place in serving bowls and garnish with avocado & shredded cheese.

Mexican Hot Chocolate Chili

Mexican Hot Chocolate Chili
Try Something Different For Your Next Pot Of Chili!
Difficulty: Easy


Ingredients
1 1/2 lbs ground round beef
1 cup red kidney beans, rinsed and drained
1 cup pinto beans, rinse and drained
2 dried ancho chilies, seeded *( hydrated and pureed)
1 tbsp jalapeños, seeded, minced (optional)
1 cup green pepper, diced
3/4 cup red pepper, diced
1 cup onion, diced
5 cloves garlic, minced
1 1/2 bricks of Abuelita Mexican Hot Chocolate
1 29 oz. can tomato sauce
1 14 oz. can diced tomatoes
1 4.5 oz. green chilies, chopped
1/2 cup sofrito base
2 heaping tbsp chili powder
1 tsp cumin
1/2 tsp pepper
1/2 tsp salt
1/2 tsp cinnamon
green onion, sliced for topping
queso fresco cheese for topping


Directions
In a large pot on medium heat, cook ground beef, drain any excess fat.  Add onions, peppers, jalapeños (optional), garlic and sauté for a few minutes.  Add tomato sauce, diced tomatoes, ancho puree *(directions below), sofrito, green chilies, chili powder, cumin, salt, pepper, cinnamon and the Abuelita hot chocolate bricks; cook for 15 minutes on low.  Add the beans and cook for additional 40 minutes on a low simmer.  Serve with a sprinkle of queso fresco and green onions on top the bowl of chili.
Serves 6

Ancho Chili Puree 
Hydrate Seeded Ancho Chili In 1 1/2 Cups Of Boiling Water For 20 Minutes.

Puree Hydrated Ancho Chili With 1/4 Cup Of The Hydrating Liquid.

Cincinnati Chili

Cincinnati Chili
Difficulty: Easy

Serves A Crowd!


Ingredients
4 tbsp olive oil, divided
3 cups chopped onion
6 garlic cloves chopped
3 lbs ground round
2 tbsp. unsweetened cocoa powder
2 tsp allspice
3 tsp cinnamon
1 tsp cayenne pepper
1/4 tsp ground cloves
4 cups beef stock
1/3 cup tomato paste
3 tbsp apple cider vinegar
2 tbsp chili powder
1 tbsp dried oregano
3 tbsp brown sugar
1 tbsp Worcestershire
salt
pepper
4 tbsp parsley chopped
1lb spaghetti, cooked
1 15 oz. can dark kidney beans, rinsed and drained
finely shredded cheddar cheese for garnish
1/2 cup chopped onions (optional for garnish)
Directions
Heat 2 tbsp of olive oil in a large deep skillet over medium heat.  Add onions and garlic and sauté for 10 minutes until tender.  Add ground beef, break apart and cook additional 15 minutes.  Add cocoa and  next four ingredients; stir for 4 minutes.  Stir in 4 cup of beef stock and next 6 ingredients, bring to a boil and reduce heat to a simmer.  Simmer uncovered until thickened and stir often and simmer for an hour.  Spoon off any fat that rises and season with salt and pepper.
Meanwhile cook pasta, drain and transfer to a large bowl and toss with 2 tbsp of olive oil and drained kidney bean.  Salt and pepper to taste.
Divide spaghetti among serving bowls.  Top with chili and garnish with shredded cheddar cheese, chopped onion and some parsley.
Serves 8
