Double Chili Cheeseburger

Double Chili Cheeseburger
I Use My Cincinnati Chili Recipe, But Any Chili Will Do!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 1 hour 15 minutes


Ingredients
8 patties Schweid & Sons C.A.B Custom Blend http://schweidandsons.com/products
4 hamburger buns + 4 bottom buns
2 cups Monterrey Jack cheese, shredded
1/2 cup pickled jalapeno slices
Cincinnati Chili http://womanandthewhisk.blogspot.com/2014/05/cinncinnati-chili.html
sour cream
salt
pepper
Cooking Tools
Outdoor grill
Medium pot


Directions
Prepare Cincinnati Chili, without the spaghetti ahead of time. Preheat outdoor grill.  Salt and pepper hamburger patties and place on hot grill and cook for several minutes on each side.  Place shredded cheese equally on each patty.  Take off grill once cheese has melted.  Assemble the double cheeseburger, ladle hot chili on burger and top with jalapenos and sour cream on each burger.

Brioche Burger Bomb

Brioche Burger Bomb
Honestly, Words Cannot Describe! You Just Need To Make It!
Difficulty: Easy

The Golden Egg Yolk Adds Such A Rich Creaminess To This Unique Burger!

Ingredients
1 loaf Brioche, 3/4 inch thick slices
3/4 lb ground beef short rib
1/2 lb pork belly slab,*cooking directions below
1/2 lb ground beef 85/15
2 tomatoes, slice thin
4 eggs
1 1/2 cups baby spring mix; spinach, Swiss chard, arugula
4 slices of Colby/ Monterey Jack cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Lawry's Season salt
1/2 tsp pepper
softened butter for Toasted Brioche
oil for frying eggs
Condiments
ketchup
mayo

Serve With Our Baked Cinnamon Sweet Potato Wedges!
 Directions
*In a small pot, place pork belly slab and enough water to cover.  Cook on low heat for at least 2 hours, remove from liquid and slice 1/2 inch slices and then sear  in a hot frying pan until slightly caramelized.  Set aside until ready to assemble burger.  In a large mixing bowl, add ground beef short rib, ground beef, garlic powder, onion powder, Lawry's seasoned salt and pepper.  Mix beef and seasoning mixture and form into 4 large patties and grill until your liking, add the cheese slices the last minute of grilling.  While the burgers are cooking, prepare the brioche slices by buttering each side and toast them on a hot non stick frying pan until golden brown, you should have 3 slices of toasted brioche per burger.  Fry each egg, salt and pepper to taste, fry in oil over easy, so you have a beautiful golden yolk for the burger.  To assemble the burger: Place one slice of toasted brioche slice on a plate, add burger with melted cheese, tomato slices, spring mix. 2nd toast, spread with ketchup and mayo then lay caramelized pork belly, then the fried egg.  Add the last toasted brioche!!!  Then Enjoy!

Hawaiian Loco Moco

A Lunch Time Favorite!

Ingredients
Hot cooked Japanese Rice
Burgers:
1 pound ground beef (80/20 blend)
1/4 cup diced Maui onion or sweet onion
salt
pepper
Canola oil
Gravy:
2 tbsp unsalted butter
2 cups cremini mushrooms or button mushrooms, sliced
3/4 cup Maui onion or sweet onion, sliced
1 1/2 cups low-sodium beef broth
1 tsp Worcestershire sauce
1 tbsp cornstarch/ 2 tbsp water
1 clove garlic, minced
salt
pepper
Eggs:
Canola oil
4 large eggs
2 to 3 tbsp chopped fresh flat-leaf parsley, for garnish (optional)

Directions
For The Burgers: Mix the ground beef, onions and some salt and pepper in a large mixing bowl. Form 4 medium patties and set aside.
Set a large cast-iron pan over high heat. Add a drizzle of canola oil and set the patties in the pan. Cover pan with a lid (or a second pan) to seal in the moisture and ensure juicy patties. Cook until well browned on first side, 3 to 4 minutes. Then remove the lid, flip over, replace the lid and continue cooking to desired doneness, about 3 minutes for medium-rare. Remove the burgers and keep warm.
For The Gravy:
Add the butter to the pan with the drippings. Sauté the garlic, mushrooms and onions until golden brown, about 5 minutes. Add the beef broth and Worcestershire sauce, bring to a boil and reduce down for 2 to 3 minutes.
In a separate bowl, mix the cornstarch with 2 tbsp of water to make a smooth paste. Slowly add into the gravy, stirring constantly until thickened. Season with salt and pepper. Cover and keep warm until ready for use.
For The Eggs:
Add some canola oil to a nonstick sauté pan over medium heat. Crack in the eggs and cook sunny-side up, 3 to 4 minutes. Remove and keep warm. (You can flip the eggs over-easy if you want them cooked a little more.)
To serve: Place the cooked rice on a plate, place the burgers on top, then the mushroom gravy and finally the egg. Garnish with parsley.
