Strawberry Whip Cookies

Strawberry Whip Cookies
Only 3 Ingredients To Make These Tasty Cookies!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 35-40 minutes


Ingredients
Duncan Hines Strawberry Supreme Cake Mix 
8 oz. tub Cool Whip, thawed if frozen
1 egg

Optional
Powdered sugar


Cooking Tools
Medium mixing bowl
Parchment lined sheet pan
Hand mixer 
Ice cream scoop

Directions
Preheat oven to 325 Degrees F. Mix the 3 ingredients in a mixing bowl and whip with a electric hand mixer.  using an ice cream scoop, place dollops on a parchment lined sheet pan ( if the batter sticks to the scoop, use Pam cooking spray).  Bake in the oven for 35-40 minutes. Cool completely before dusting cookies with powdered sugar.

Yields 12 cookies

Gluten Free Chocolate Brownies

Gluten Free Chocolate Brownies
Honestly, You Couldn't Tell The Difference!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 25-30 minutes

Ingredients 
2/3 cup Dutch sweet cocoa
1 3/4 cup sugar
1/2 tsp baking powder
3/4 tsp salt
1 cup chopped pecans
1 cup of chocolate chips
3 large eggs
1/2 cup melted plant based butter or butter
1/4 cup cooled coffee
 Cooking Tools

Directions 
Preheat oven to 350 Degrees F.  Whisk all ingredients in a mixing bowl, pour into a well greased baking dish and bake for 25 minutes. Cool, cut and serve.

Sweet Italian Pignoli Cookies

Sweet Italian Pignoli Cookies

Ingredients
1 large egg
2 tsp. pure vanilla extract
1/2 cup olive oil
1/2 cup granulated sugar
1/4 teaspoon fine salt
2 cups all-purpose flour, plus as needed ( sifted)
1/2 cup pignoli nuts ( pine nuts)

Directions
In a mixing bowl add all the ingredients except for the (pignoli nuts), mix and make sure it's well incorporated.  With your hand, roll 2 inch cookie dough balls and place the on a well greased non stick baking pan. Press each ball half way down then sprinkle with pignoli nuts.  Bake for 12 minutes. wait a few minutes out of the oven before you place the cookies on a cooling rack.
Serves 12 cookies
