Pimento Potato Poppers

Pimento Potato Poppers
A Southern Twist!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 20 minutes


Ingredients
2 cup leftover cooked mashed potatoes (cold)
1/2 cup Vidalia onions, small dice
2 cloves garlic, pressed
1/2 cup green, red or yellow peppers, small dice
1/2 cup Pimento cheese spread
2 tbsp butter
1 cup flour
1 cup Panko bread crumbs
2 eggs, whisked
vegetable oil
salt
pepper 

Cooking Tools
3 bowls
Deep fry pan
Medium mixing Bowl
Small skillet 

Directions
In a skillet, melt butter and saute onions, peppers and garlic until tender. In a mixing bowl, mix mashed potatoes, the sauteed vegetables with the butter and Pimento cheese and blend well. Make small potato balls.  Make a dredging station with bowl: flour, whisked eggs and Panko. Dip each ball into flour, then eggs, then Panko.  Heat oil to 350 Degrees F. Fry each ball until golden brown.

Brunswick Stew

Brunswick Stew

Prep Time: 30 minutes
Cooking Time: 40-45 minutes


Perfect One Pot Meal!

Ingredients
3 cups cooked pulled pork
1 cup onions, large dice
1 can roasted diced tomatoes
1 1/2 cups fresh corn kernels
1 garlic clove , minced
2 cups potatoes, diced
1 1/2 cups frozen lima beans
4 cups chicken stock
3/4 cup BBQ sauce
3 tbsp butter
minced parsley for garnish
salt
pepper

Cooking Tools
Large pot

Serve With Crusty Bread

Directions
In a large pot on medium heat, melt butter.  Add in potatoes, onions and saute for 10 minutes. Pour in the chicken stock and add in the rest of the ingredients.  Cook on low for for 40-45 minutes uncovered.

Red Velvet Cupcakes

Red Velvet Cupcakes
With Cream Cheese Icing!
Difficulty: Easy
Prep Time: 40 minutes
Cooking Time: 20-25 minutes


Ingredients
2 1/2 cups flour
1 3/4 cups sugar
1 tsp baking soda
1 tsp salt
1 1/2 tbsp cocoa powder
1 vegetable oil
1/2 cup butter, softened
1 cup buttermilk, room temp
2 eggs, room temp
2 tbsp red food coloring
1 tsp white distilled vinegar
1 tsp vanilla extract
3/4 cup pecans, crushed 

Cooking Tools
2 large mixing bowl
1 medium mixing bowl
Hand held mixer
Sifter
Cupcake Tin
Foil cupcake liners


Directions
Preheat oven to 350 degrees. Sift the first five ingredients together. In another bowl, slowly mix together the rest of the ingredients for the cupcakes. Add the dry ingredients to the wet and mix until well combined using a hand held mixer. Fill foil lined muffin tins about 3/4 full. Bake for 20-25 minutes, turning the pans once at the halfway mark. Stick a toothpick in the middle to see if it comes out clean. Cool cupcakes completely before frosting (recipe below) and sprinkle with crushed pecans.
Yields 1 dozen

Cream Cheese Frosting
Ingredients
16 oz. cream cheese, softened
1 cup butter, softened
1 tsp vanilla extract
4 cups powdered sugar, sifted

Directions
In a medium mixing bowl, whip cream cheese, butter, and vanilla until smooth. Add the sugar slowly. Mix on high until well blended and whipped fluffy.

Red, White & Blue Shortcake

Red, White & Blue Shortcake
Happy 4th Of July!!!
Difficulty: Easy
Prep Time: 40 minutes
Cooking Time: 30-35 minutes

 
Shortcake
Ingredients
2 cups flour
1 cup sugar
1 cup butter, small dice + greasing
2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1 egg
1 tsp vanilla extract
homemade whipped cream or pre-made


Cooking Tools
(2) Medium mixing bowls
Pastry cutter
Baking dish
Hand mixer
Biscuit cutter

Directions
Preheat oven to 325 Degrees F.  In a medium mixing bowl, add; flour, baking powder, salt and butter. Using a pastry cutter, cut butter into the flour until the butter is the size of small pebbles.  Add in sugar, milk, egg and vanilla extract and mix well.  There will be tiny lumps of butter in the batter and the batter will be thick.  Place batter into a greased baking dish and bake for 30-35 minutes, use a toothpick to check the center of the cake, it it comes out clean, then its done.  Cool in pan until your ready to cut out shortcake rounds with biscuit cutter or squares. Place shortcake rounds on a serving dish and place berry mix (recipe below) on top with some of the juices from the berries and a dollop of whip cream.  You can layer the shortcake as high as you want.
Serves 4-6

Berry Mixture
Ingredients
3 cups fresh strawberries, quartered
2 cups fresh blueberries
1/2 cup sugar

Directions
In a mixing bowl add all ingredients and toss, let sit at room temperature until sugar dissolves and strawberries create their own juices.

Chicken & Waffles

Chicken & Waffles
This Southern Charmer Is Great Anytime Of The Day!
Difficulty: Moderate
Prep Time: 1 hour
Cooking Time: 1 hour

This Fried Chicken Recipe Is Slightly Different Than Our Southern Fried Chicken.
 
Fried Chicken
Ingredients
1 to 2 1/2-pound chicken, cut into pieces
3 eggs
1/2 cup whole milk
2 cups all purpose flour
1/2 tbsp pepper
1 tbsp garlic powder
1 tbsp onion powder
1/2 tbsp salt
1/2 tbsp Lawry's seasoned salt
1 tsp paprika
Oil, for frying, preferably peanut oil
Cooking Tools
Deep Fryer or Deep cast iron fryer
Sheet trays with cooling rack
Zip lock bag
Electric Waffle Iron


Directions
In a medium size bowl, beat the eggs with the milk.  In an extra large zip lock bag, combine the flour, pepper, garlic powder, onion powder, salt and paprika. Season the chicken with the Lawry's seasoned salt.  Dip the seasoned chicken in the egg, place in bag and shake, coat well in the flour mixture. (Place a few chicken pieces at a time, repeat) Place coated chicken pieces on a sheet tray with cooling rack.  By using a rack, the coated chicken will not get wet spots underneath the chicken as it sits before frying.
Heat the oil to 350 degrees F in a deep frying or cast iron pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp ( Do not overcrowd). Dark meat takes longer then white meat. It should take dark meat about 15 minutes, white meat around 10-12 minutes.  Check chicken for doneness.  Place chicken on tray of paper towels to remove excess oil.  Serve hot!
Serves 4 to 6
Waffles
Ingredients
2 cups Bisquick mix
1 1/3 cups milk
2 tbsp butter, melted
1 egg
1 tsp vanilla
cooking spray
maple syrup

Directions
In a large mixing bowl; add Bisquick, milk, melted butter, egg and vanilla.  Whisk until well blended. Spray the preheated waffle iron with cooking spray and ladle batter into each waffle compartment and shut the lid; cook until golden, will usually take about 2 minutes.  To assemble Chicken & Waffles:  Lay 1 or 2 waffle on a serving plate, Place some fried chicken pieces on top of waffles, drizzle with some maple syrup!

Smothered Pork Chops

Smothered Pork Chops
The Vidalia Onions Creates An Aromatic Sauce!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 1 hour 10 minutes



 Ingredients
4 Thick cut bone-in pork chops
2 Vidalia or sweet onions, sliced thin
2 tbsp olive oil
1 tbsp butter
1 tsp dried thyme
1 tsp garlic, finely minced
1 1/2 cups beef stock
salt
pepper

Cooking Tools
Large oven proof skillet with lid
Directions
Preheat oven 375 Degrees F.  Salt and pepper pork chops, on medium heat; add olive oil, butter and sear pork chops on each side until golden brown.  Add garlic, onions, thyme and beef stock.  Place lid on top and bake in oven for 1 hour.  Serve Pork chop with mashed potatoes and ladle the juices created by the onions and beef stock over the the pork chops and potatoes.

Memphis BBQ Spaghetti

Memphis BBQ Spaghetti
Could This Be The Next Southern Staple!?
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 30-40 minutes 


 Ingredients
2 tbsp olive oil 
1 onion, sliced thin 
1 green bell pepper, sliced thin 
2 garlic cloves, minced 
1 1/2 cups barbecue sauce
2 cups marinara sauce 
1 box spaghetti, cooked 
1  lb smoked pork, diced or pulled 
hot sauce (optional)
Directions
Cook pasta according to directions on package, reserve 1 cup of the pasta cooking liquid, drain pasta and set aside.  In a large cast iron pan or skillet, add olive oil on medium heat and saute onions, green pepper and garlic until slightly tender.  Add to the skillet BBQ sauce, marinara sauce and the cooked smoked pork and cook on medium heat until nice and bubbly.  toss in cooked pasta and coat well with the sauce mixture and cook for additional 10 minute on a low simmer. ( If the sauce is to thick, add the reserved pasta water to thin out the sauce.)  Dash of hot sauce for heat (optional).  Serve Hot!

Smokey Collard Greens

Smokey Collard Greens
With Smoked Turkey Wing!

Ingredients
1 bag, cut collard greens
4-5 cups chicken stock
1 smoked turkey wing
pepper
Directions
In a large stock pot with lid on medium-low heat; add all ingredients.  Cook with lid on for 1 1/2- 2 hours until collards are nice and tender.
Serves 4
