Wicked Cowboy Candy Ribs

Wicked Cowboy Candy Ribs
Spicy & Sweet, Sticky And Addictive!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 1 hour 30 minutes

Ingredients
1 slab Baby back ribs, sliced individual ribs
1 Tbsp Kinder's Buttery Steakhouse Seasoning
1 jar Wickles Wicked Jalapeño Slices
1/2 cup brown sugar
1/4 cup honey
1 tsp apple cider vinegar 
2 garlic cloves, minced

Cooking Tools
Sheet pan
Medium saucepan 
Baking dish 




Directions
Preheat oven to 375 Degrees F. Place cut ribs on a sheet pan and sprinkle generously with the Kinder's seasoning and bake in the oven or outside grill and bake for 1 hour. while the ribs are baking/ grilling, prepare the sauce: In a saucepan, add; Wickles jalapeño peppers, brown sugar, honey, vinegar and garlic.
Simmer sauce to reduce some liquid and the sugar melts. Remove ribs from oven and transfer to a baking dish and pour the sauce over the ribs and place back in the oven for additional 30 minutes. Remove from oven and let cool slightly before serving.

Kalbi Short Ribs

Kalbi Short Ribs
Korean ( Galbi ) BBQ Beef Ribs, So Flavorful & Tender!
Difficulty: Easy
Prep Time: 24 hours
Cooking Time: 4 minutes

Ingredients 
2-3 lbs Korean style beef short ribs
1/2 cup palm sugar or light brown sugar
3/4 cup soy sauce
1/2 cup water
1/2 cup Mirin (rice wine)
1/2 onion, grated
1 Asian pear, peeled & grated
2 tbsp minced garlic
1 kiwi, peeled & grated
1 tbsp sesame oil
grated black pepper
green onions, sliced for garnish


Cooking Tools
Outdoor grill
Large Ziploc sealable bag 
Small Mixing Bowl

Directions
Whisk together all the ingredients, except the green onions in a mixing bowl and whisk.  place short ribs in the Ziploc bag and pour marinade all over the ribs and coat well. Remove air from bag and seal, place in refrigerator overnight.  Preheat grill to high and remove ribs from bag and scrape off any excess marinade, grill each side for 2 minutes and remove from grill and garnish with sliced green onions.

Dry Aged Steak

Dry Aged Steak
With A Garlic Marrow Butter!
Difficulty: Easy
Prep Time: 2 hours
Cooking Time: 16 minutes



Ingredients
2 Dry-aged steaks, 1 1/2 inch thickness https://www.butchersmarketbluffton.com/
1 Bone marrow halved
1/2 cup butter, softened
3 cloves garlic, minced
1 tbsp minced chives + garnish
1 tbsp minced parsley + garnish
rosemary branches
salt
pepper


Cooking Tools
Outdoor grill
Cast iron pan

Directions
Let steaks come to room temperature before cooking.
First, prepare the Garlic Marrow Butter: Preheat oven to 350 Degrees F.  Place the halved bone marrow on a sheet pan and salt & pepper and bake for 25 minutes.  Remove bone marrow from oven and cool completely.  Scrape bone marrow and place in a small bowl, add; softened butter, minced garlic, chives, parsley, salt and pepper, mix well. Place in refrigerator until ready to use.
Preheat grill on high, place cast iron pan on grill to heat until screaming hot.  Salt and pepper steaks, add 1 tbsp of Garlic Marrow Butter to hot pan and place steaks in pan. Place rosemary branch and a little dollop of GMB on top of each steak. close lid on grill, reduce heat to medium high. (cook according to your desired temperature) I personally cooked mine for 8 minutes on each side. Once you flip your steak, baste the the steak with GMB and rosemary. Remove pan and remove steaks to a cutting board to rest for about 10 minutes. Slice steak and place more GMB and garnish with some minced chives and parsley.

Black Nugget Ribeye

Black Nugget Ribeye

Ingredients
2 ribeye steaks, left whole or cubed for kebobs
1/2 cup soy sauce
1 cup dark brown sugar
1 tsp garlic, minced
1/4 cup dark molasses
1 tbsp vegetable oil
1 tsp Worcestershire sauce
1/2 cup grated onion + juices
splash of red wine vinegar
pepper

Large ziploc bag
Small mixing bowl

The Marinade Make This Steak So Flavorful!
Directions
In a mixing bowl, add; soy sauce, brown sugar, garlic, molasses, oil, Worcestershire sauce, onion, vinegar, pepper then whisk.  Place steaks in ziploc bag and pour marinade over the steaks.  Remove air from bag and seal, place in the refrigerator for at least 7 hours, but can be marinaded overnight.  Preheat outdoor grill and cook steaks to your preferred temperature.

Sticky Mango Chili Ribs

Sticky Mango Chili Ribs
Perfect For Football Game Day!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 1 hour, 45 minutes


Ingredients
1 rack pork ribs
2 cups Mae Ploy Sweet Chili Sauce
1/4 cup bbq sauce
1 ripe mango, diced
1/4 tsp Chinese Five Spice
1 clove garlic, minced
1/4 tsp sesame oil
garlic powder
salt
pepper

Cooking Tools
Sheet tray
Small Food processor
Large skillet 

Directions
Place ribs on sheet pan, Sprinkle with salt, pepper and garlic powder. Bake in convection oven at 350 Degree F.  Bake in oven for 1 hour 30 minutes. Remove from oven and let cool and slice each riblet. In a food processor, add; sweet chili sauce, bbq sauce, fresh mangoes, Chinese Five spice, garlic, sesame oil, salt & pepper. Puree ingredients and pour into skillet. Heat sauce on medium heat and toss in riblets, coat each riblet and cook an additional 10 minutes until the sauce start to caramelize on the ribs.

Mango BBQ Ribs

Mango BBQ Ribs
Make Your Own Tasty BBQ Sauce!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 1 hour

Ingredients
1 rack of ribs
1 ripe mango, diced
1 cup ketchup
1 garlic clove, minced
1/4 cup onions, diced
1 tsp worchestershire sauce
1 tsp apple cider vinegar
3/4 cup brown sugar
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp harissa powder
salt
pepper

Cooking Tool
Outdoor grill
Saucepan
Food Processor


Directions
Preheat outdoor grill on medium low.  Coat ribs evenly with garlic powder, onion powder, Harissa, salt & pepper.  Grill ribs for 1 hour, turning on occasion. Prepare Mango BBQ sauce while the ribs are cooking. Place diced fresh ripe mangoes, ketchup, garlic, onions, worchestershire sauce, vinegar and brown sugar.  Cook on medium heat until mangoes and onions are tender, about 10 minutes. Place sauce ingredients in food processor and puree until smooth.  Pour puree back in saucepan and salt and pepper to taste, keep warm.  Baste ribs with the Mango BBQ sauce the last 15-20 of cooking. Save some sauce to pour on top of cooked ribs.

Pineapple Corn Spoonbread

Pineapple Corn Spoonbread 
One Of Our Favorite BBQ Sidedishes!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time:  50-60 minutes




Ingredients
6 cups pre-made corn bread, cubed
1 can creamed corn
1 can crushed pineapple + juices
3 tbsp butter, melted + greasing
2 eggs
salt
pepper

Cooking Tools
Large mixing bowl
Baking dish 


Directions
Preheat oven to 375 Degrees F.  Whisk eggs, creamed corn, crushed pineapple, butter, salt & pepper.  Toss in cubed corn bread until well coated, let sit for corn bread to absorb some of the liquid.  Bake in oven for 50-60 minutes.  Let stand for 15 minutes before serving. Can be served hot or cold.

Sweet Tea Pork Chops

Sweet Tea Pork Chops
24 Hour Brined Pork Chops!
Difficulty: Easy
Prep Time: 24 hours
Cooking Time: 15-20 minutes




Ingredients
4 thick, bone in pork chops
5 cups cold sweet tea
3/4 tsp garlic powder
salt
pepper
minced parsley

Cooking Tools
Large zip lock freezer bag
Outdoor grill

Directions
Place chops and sweet tea in a zip lock bag and seal with air pressed out.  Place bag in refrigerator for 24 hours.  Remove chops from tea and pat dry.  Season with garlic powder, salt and pepper.  Grill chops (depending on thickness)15-20 minutes.
Let rest for 5 minutes before serving.  Garnish with minced parsley.

Garden Mac Salad

Garden Mac Salad
Goes Great With Anything You BBQ!
Difficulty: Easy
Prep Time: 2 hours, 30 minutes

Ingredients
1/2 box macaroni pasta
1 cup mayonnaise
1 carrot, small dice
2 celery stalks, sliced thin
1 cup onions, small dice
1/4 cup green onions, sliced
4 eggs, hard boiled, diced
1/2 cup frozen peas, thawed
1 tbsp vinegar
1 tsp super fine sugar
pinch smoked paprika
salt
pepper 
Cooking Tools
Medium mixing bowl
Small pot


Directions
Boil eggs, cool and peel.  Cook, drain and rinse pasta. In a mixing bowl, add cooked and cooled pasta, mayonnaise, vinegar, sugar and mix well.  Add in the rest of the ingredients and toss until well coated. Salt & Pepper to taste then chill for 2 hours.
Serves 4-6

Hawaiian Teriyaki Chicken

Hawaiian Teriyaki Chicken
A Hawaiian Twist On A Japanese Classic!
Difficulty: Easy
Prep Time: 3 hours +
Cooking Time: 1 hour



Ingredients
1 whole chicken cut up
1 can pineapple slices in syrup
2 cups soy sauce, divided
2 garlic grated garlic, divided
1 tsp grated ginger, divided
1 cup raw sugar, divided
1 cup Sake, divided
1/2 cup mirin, divided
!/2 cup Ponzu sauce, divided
1 cup fresh orange juice, divided
1 tbsp cornstarch
1/2 cup water
green onion slices for garnish
pepper

Cooking Tools
1 large mixing bowl
Outdoor grill
Medium sauce pan



Directions
To create the marinade for the chicken: whisk in a mixing bowl, Half of the pineapple syrup, 1 cup soy sauce, 1 grated garlic clove, 1/2 tsp grated ginger, 1/2 cup raw sugar, 1/2 cup Sake, 1/4 cup Ponzu sauce, 1/2 cup orange juice and pepper.  Add in the marinade the cut up chicken and refrigerate for 3 hours.  To create the sauce: In a saucepan, add; Half of pineapple syrup, 1 cup soy sauce, 1 grated garlic clove, 1/2 tsp grated ginger,1/2 cup raw sugar, 1/2 cup sake, 1/4 cup mirin, 1/4 cup Ponzu sauce, 1/2 cup orange juice, 4 pineapple slices (diced).  Bring to a bowl and reduce heat and cook down for 5 minutes. Mix cornstarch and water to create a slurry and whisk into the hot Teriyaki sauce and cook until thickened. Preheat outdoor grill and remove chicken from marinade (dispose the marinade) and place on hot grill and reduce heat.  Cook until chicken for about 45 minutes + or until done.  Grill pineapple slices for the last 5 minutes of grilling chicken. Baste chicken in the Teriyaki sauce for the last 10 minutes of cooking. Reserve some of the Teriyaki sauce to pour on top. Place chicken on a serving platter, add grilled pineapple slices and pour the rest of the sauce on top. Garnish with sliced green onions.

Alabama White BBQ Sauce Pulled Chicken Sandwich
For Those That Don't Like Traditional BBQ Sauce!
Difficulty: Easy

Cooking Time: 25 minutes


Ingredients
4 buns
2 cups iceberg lettuce, chopped
1 cooked rotisserie chicken, pulled chicken meat, no skin
1 onion, sliced
1 garlic cloves, minced
2 tbsp oil
salt
pepper
Alabama White BBQ Sauce 
Ingredients 
1 1/2 cups mayonnaise   
1/4 cup water   
1/4 cup white wine vinegar   
1 tbsp coarsely ground pepper   
1 tbsp Creole mustard   
1 tsp salt   
1 tsp sugar   
2 garlic cloves, finely minced   
2 tsp grated horseradish sauce

Cooking Tools
Medium Skillet
Medium mixing bowl
Small sauce pan

Directions
On medium heat, add oil to the skillet and saute onion slices and garlic for 15 minutes, until browned. Add in the pulled chicken and cook until chicken is also browned.  Salt and pepper chicken to taste. In a small sauce pan, add the ingredients for the white BBQ sauce and heat on a simmer for a few minutes.   You don't want the oil to separate from the mayonnaise. Spoon chicken and onions on a sliced bun and top with a couple of tablespoons of white sauce on top and place some chopped iceberg lettuce.  Serves with Sweet Potato Wedges.

Guava & Pineapple BBQ Meatballs

Guava & Pineapple BBQ Meatballs
A Great Recipe For The Next Potluck!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 5 hours


 Ingredients
1 lb. ground round beef
1/2 lb. ground pork
1/2 cup Panko breadcrumbs
1/2 cup water
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp pepper
1 tbsp minced parsley + garnish
1 egg

Cooking Tools
Large mixing bowl
Parchment lined sheet pan
Slow Cooker


Directions
Preheat oven to 425 Degrees F.  In a large mixing bowl, add all the ingredients and knead well.  Make golf ball size meatballs and place on sheet pan and bake for 35 minutes.  Transfer into the slow cooker with the Guava Pineapple BBQ Sauce (recipe below). Cook meatballs in the slow cooker on high for 4 hours.  Place in a serving bowl and garnish with parsley.

Guava Pineapple BBQ Sauce
Ingredients
4 cups Passata (strained tomato sauce)
4 cups BBQ sauce
1 cup guava paste
3 cups fresh pineapples, chunks
1 onion, diced
1 green pepper, diced
2 cloves garlic, minced

Directions
Place all ingredients in a slow cooker on high, mix well.

Ingredients
1 rack baby back ribs
1/4 tsp salt
1 tsp onion powder
1 tsp garlic powder
pepper 

Cooking Tools
Outdoor grill

Directions
Preheat grill on high then turn down to low.  Season the ribs evenly with salt, pepper, onion and garlic powder.  Place ribs on a high rack and cook for 1 hour, turning on occasion.  Remove rib and let rest for 5 minutes before slicing.  Place sliced ribs back on the grill and cook for additional few minutes.

Mango BBQ Ribs

Mango BBQ Ribs
Sweet, Tangy & Fruity!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 1 hour, 30 minutes


Ingredients
2 racks of pork ribs
1 bottle your favorite BBQ sauce
1/4 cup mango vinegar http://winecountrykitchens.com/store/napa-valley-vinegar/sweet-mango-vinegar-8.2-fl-oz/
1/4 cup pomegranate mango Pom Wonderful juice
2 tbsp dark brown sugar
1/4 tsp cinnamon
2 cloves garlic, pressed
fresh grated nutmeg
salt
pepper

Cooking Tools
Outdoor grill or oven
Medium sauce pan
Sheet pan
Directions
Place ribs on a sheet pan and salt and pepper ribs. Preheat grill on high then reduce temperature to medium-low.  In the oven preheat to 375 Degrees F.  Place on grill and cook for 1 hour 30 minutes on the highest rack. Cook in the oven for the same amount of time, you can put it on broil the last few minutes of cooking to brown the top.  In a sauce pan add; BBQ sauce, mango vinegar, juice, brown sugar, cinnamon, some grated nutmeg, salt and pepper to taste and cook on low for about 15 minutes. Reserve some BBQ sauce for topping off the ribs right before serving. Baste ribs every 15 minutes.  Let ribs rest for 10 minutes before slicing.  Top ribs with the reserved BBQ sauce.

Baked Potato Salad

Baked Potato Salad

 Ingredients
5 cups cold leftover mashed potatoes
3/4 cup onions, diced
3/4 cup celery, sliced
2 hard boiled eggs, chopped
1 cup mayonnaise
2 tbsp butter + greasing
1 tsp mustard powder
salt
pepper

Cooking Tools
Medium skillet
Baking dish
Medium mixing bowl


Directions
Preheat oven to 375 Degrees F.  In a skillet, melt butter and saute onions and celery for 5 minutes on low heat.  In a mixing bowl, add; mashed potatoes, the sauteed onions and celery, hard boiled eggs, mayonnaise, mustard powder, salt and pepper to taste.  Mix well and place in greased baking dish and bake in oven for 30-35 minutes.

Jacked Up Franks & Beans

Jacked Up Franks & Beans

Ingredients
1/4 lb pork shoulder or pork belly, cubed
12 oz Kielbasa smoked sausage, sliced or cubed
1 cup onions, diced
1 cup green pepper, diced
1 clove garlic, minced
1 15 oz canned great northern beans, rinsed & drained
1 15 oz canned pinto beans, rinsed & drained
1 cup canned black eyed peas, rinsed & drained
1 cup ketchup
1 cup Jack Daniel's BBQ Sauce
1 1/2 cups beef stock
1/2 cup Jack Daniel's Whiskey
3 tbsp brown sugar
1 tsp Worcestershire sauce
1 tbsp vegetable oil
1/4 tsp pepper 

Cooking Tools
Medium Dutch oven or cast iron pot


Directions
Trim off any excess fat from the pork shoulder or pork belly. On high heat, add oil to bottom of Dutch oven and place cubed pork and sear and brown on all sides.  Add in the smoked sausage and sear for additional few minutes.  Add in the remaining ingredients and mix well.  Lower heat to a simmer, cover and cook for 2 hours.  Stir ingredients occasionally, so not to burn the beans at the bottom of the pot. The beans will thicken as it cooks. Minced parsley for garnish (optional).
Serves 6
