Pastalaya

Pastalaya
A Delicious Blend Of Pasta & Jambalaya!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 30 minutes

Ingredients 
1 box Fettuccine noodles
1 andouille sausage, sliced thin
2 cups rotisserie chicken, ( white & dark meat) pulled
1/2 lb. medium shrimp, shelled & deveined
1 cup onion, diced
1 cup green pepper, diced
1 cup celery diced
1 large tomato, diced
2 garlic cloves, minced
1 tbsp tomato paste
1 1/2 cups chicken broth
2 tsp+ Ragin Cajun seasoning
2 tbsp olive oil
2 tbsp butter
1 cup heavy cream
pepper
hot sauce (optional)
minced parsley for garnish
1 cup Parmesan cheese



Cooking Tools
Large pot
Large deep frying pan

Directions
In a stock pot, cook pasta according to box directions. Prep the ingredients, In a large deep frying pan on medium heat, add olive oil. add in the sausage and saute until golden brown then remove and set aside.
Into the oil, add; onions, green pepper, celery and garlic.  Saute vegetables until slightly tender then add in broth, seasoning, butter, cream, chicken and the cooked sausage, simmer on low heat for about 5 minutes then add in tomato paste and mix to thicken sauce. The last 2 minutes of cooking, add in shrimp and tomatoes, then drain pasta and add to the sauce and toss until sauce thickens and coats all of the pasta. Remove from heat and add cheese and toss pasta. serve on platter or plate and garnish with minced parsley and a splash of hot sauce.

Toad In A Hole

Toad In A Hole
Breakfast of Champions!
Difficulty: Easy
Prep Time: 10 minutes
Cooking Time: 20 minutes



Ingredients
1 cup Bisquick Pancake Mix
1/2 cup milk
1 egg
6 sausage links
2 tsp butter
maple syrup 

Cooking Tools
2 individual cast iron pans
Small mixing bowl


Directions
On medium low heat, cook sausage links (3) per pan.  Fully cook the sausage, remove any excess grease, but leave some to coat bottom. In a mixing bowl, add; pancake mix, milk, egg and whisk until well blended.  Pour batter equally in to the pans with the cooked sausage and cook on medium low heat. Wait until air bubbles appear on the top and golden crusty on the bottom to flip.  Cook about 3 minutes on each side.  Serve with in the pans with some butter and maple syrup.

Baked Paccheri & Sausage

Baked Paccheri & Sausage
I Love Using Different Cuts Of Pasta!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 1 hour


Ingredients
1 bag Paccheri pasta
5 Italian sausage links, cut into 1" pieces
1 jar marinara sauce
2 cloves garlic, minced
1 cup onions, diced
8 oz. Mascarpone cheese
1 cup Parmesan cheese
1 tbsp minced parsley, garnish

Cooking Tools
Large stock pot
Large skillet
4 individual baking dishes

Directions
Preheat oven 350 Degrees F.  Boil water in stock pot, salt water and cook pasta according to directions.  In a skillet on medium heat, add sausage pieces.  Saute sausage until browned and then add garlic and onions.  Saute sausage, onions and garlic until onions are translucent.  Pour in the marinara sauce and simmer for 10 minutes. Incorporate Mascarpone cheese in and mix well with the Marinara sauce.  Drain pasta and place into the Marinara sauce and toss until well coated.  Place equally into baking dishes and bake for 30 minutes.  Sprinkle Parmesan cheese on top of pasta for the last 5 minutes of baking.  Garnish with minced parsley and serve hot.

Jacked Up Franks & Beans

Jacked Up Franks & Beans
A Whole New Whiskey Twist On A Classic Staple!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 2 hours 15 minutes


Ingredients
1/4 lb pork shoulder or pork belly, cubed
12 oz Kielbasa smoked sausage, sliced or cubed
1 cup onions, diced
1 cup green pepper, diced
1 clove garlic, minced
1 15 oz canned great northern beans, rinsed & drained
1 15 oz canned pinto beans, rinsed & drained
1 cup canned black eyed peas, rinsed & drained
1 cup ketchup
1 cup Jack Daniel's BBQ Sauce
1 1/2 cups beef stock
1/2 cup Jack Daniel's Whiskey
3 tbsp brown sugar
1 tsp Worcestershire sauce
1 tbsp vegetable oil
1/4 tsp pepper 

Cooking Tools
Medium Dutch oven or cast iron pot


Directions
Trim off any excess fat from the pork shoulder or pork belly. On high heat, add oil to bottom of Dutch oven and place cubed pork and sear and brown on all sides.  Add in the smoked sausage and sear for additional few minutes.  Add in the remaining ingredients and mix well.  Lower heat to a simmer, cover and cook for 2 hours.  Stir ingredients occasionally, so not to burn the beans at the bottom of the pot. The beans will thicken as it cooks. Minced parsley for garnish (optional).

Banger & Mash With A Scotch Egg

Bangers & Mash With A Scotch Egg
A Hearty English Meal!
Difficulty: Moderate

Served With Traditional Mashed Potatoes And Garnished With An Fried Onion Ring!
Ingredients
4 bangers (English Sausage)
1 lb. bulk breakfast sausage
4 hard boiled eggs, peeled and chilled
2 cups flour
2 cups fine, dry bread crumbs
4 eggs, beaten
4 cups vegetable oil for frying

Directions
Preheat oven to 375 degrees F.  In a skillet on medium heat, cook bangers until done ( split in half, optional) set aside.  Form a patty in your hand with the first portion. Flatten patty, place egg inside, and keep rolling egg and meat in the palms of your hands, until a thin layer of meat coats the eggs. Repeat this procedure until all the eggs are coated with pork mixture. Chill 20 minutes. Dredge chilled, coated eggs first in flour, then in eggs and bread crumbs. 
Heat oil in a large stockpot or saucepan to deep fry temperature (350 degrees F). Fry eggs, 2 or 3 at a time, until golden brown, 3 to 5 minutes. Drain on paper towels. Transfer to a roasting pan and bake 10 minutes.  Serve the English breakfast, lunch or dinner with mashed potatoes with brown gravy and garnish with a fried onion ring.

Bucatini With Italian Sausage

Bucatini With Italian Sausage
A Very Rustic, Hearty & Flavorful Dish!
Difficulty: Easy


Ingredients
1 package Bucatini pasta, cooked according to directions.
3 fresh sweet Italian sausages, cooked and sliced
1 green pepper, seeded and sliced
1 red pepper, seeded and sliced
1/2 large yellow onion, sliced
2 baby eggplants, cubed
4 cloves garlic, sliced thin
1/2 cup kalamata olives, pitted and halved
2 cups of fresh marinara sauce
10 fresh basil leaves, whole
2 tbsp fresh oregano leaves
3 tbsp butter
4 tbsp olive oil
salt
pepper

Directions
In a large skillet, add olive oil and butter, sauté eggplant first for a few minutes, then add; onions, green pepper, red pepper and garlic.  Cook vegetables until slightly tender. Add basil leaves, oregano, marinara sauce, kalamata olives, salt and pepper and simmer for additional 5 minutes.  Add cooked sausage and cooked and drained pasta, then toss and cook for additional minute so the marinara sauce reduces and coats all the pasta.  Adjust seasoning to taste.
Serves 6
