Everything Yogurt Bagel

Everything Yogurt Bagel
5 Ingredients And No Fuss For A Great Tasting Bagel!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 25 minutes


Ingredients
2 cups All-purpose flour
2 cups plain Greek yogurt
4 tsp baking powder
1/4 cup Everything bagel seasoning mix
1 egg, whisked


Cooking Tools
Medium mixing bowl
Lined sheet pan
Cooling rack 


Directions
Preheat oven 375 Degrees F. In a mixing bowl, add; flour, baking powder and mix. Combine yogurt to the flour and mix first with a fork then with your hands.  Dust counter surface with some flour and knead the dough about 20 times, approximate time about 1-2 minutes. If the dough is too wet then just a little flour in the kneading process. allow the dough to rest for about 15 minutes and cut into 8 equal sections and roll into a ball. Using your finger to punch through the cent of the ball and stretch to create a bagel ring. Brush the bagel with the whisked egg with a pastry brush and dip into the Everything bagel seasoning and place on sheet pan. Repeat with the rest of the dough balls.  Bake in oven for 25 minutes and remove and place bagel on cooling rack. Serve with butter, cream cheese or what we serve is the smoked salmon spread.

Gluten-Free Vanilla Bean Pancakes
No Need To Deprive Yourself Of Awesome Pancakes!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 15-20 minutes

Ingredients
3 3/4 cups Bisquick GF Pancake Baking Mix
3 cups milk
3 Tbsp vegetable oil
3 Tbsp melted butter
3 eggs
3/4 tsp baking powder
1 tsp vanilla bean paste
1 Tbsp honey
butter for greasing

Toppings
whipped cream
mini marshmallows 
fresh berries
maple syrup

Cooking Tools
Large  mixing bowl
Non stick griddle
Parchment lined sheet pan



Directions
Mix all the ingredients together until batter is smooth, set aside for 30 minutes.  Heat griddle on low heat and grease generously with butter. Ladle about a 1/2 cup of batter onto the heated greased griddle, leaving some room for the batter to spread. The batter is thicker than most pancake batters and you should not have runny batter. Allow bubbles to form in the center and edges to get slightly golden before flipping the pancakes. Cook's Note: GF batter need more time to cook than regular pancakes, so temperature regulation is the key to cook the pancakes through without burning the pancakes. Cook pancakes in batches and place on sheet pan as you cook. Can be placed in a warm oven until serving. Serve with your toppings.

Yields: 12 pancakes

Baked Apples

Baked Apples
For a Quick Dessert For The Family!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 20-25 minutes

Ingredients 
6 Granny Smith apples
1/2 cup granola
1/2 cup Muesli
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup slice almonds
1/4 cup honey + drizzle

Cooking Tools
Small mixing bowl
Apple corer or melon baller
Baking dish
Optional
ice cream
whipped cream 


Directions
Preheat oven to 370 Degrees F. Slice top portion and core center of the apple to take out the seeds, leave enough rim to support the filling.
In a mixing bowl, add; Granola, Muesli, cranberries, raisins, almonds & honey, mix well.  Stuff each apple and bake in a shallow baking dish and bake for 20-25 minutes.
Remove from oven and cool, serve with your favorite ice cream or whipped cream.

Brûlée Croissant & Berries

Brûlée Croissant & Berries
With Passion Fruit Buttercream!
Difficulty: Easy
Prep Time: 25- 30 minutes
Cooking Time: 5-7 minutes

Ingredients
2 large croissants 
1/2 cup blueberries
1/2 cup raspberries
4 strawberries, sliced
2 tbsp fine sugar
2 tbsp powdered sugar

Ingredients for Passion Fruit Buttercream
  • ½ cup unsalted butter, at room temperature
  • 2 cups confectioners’ sugar, sifted
  • 1 ½ tsp pure vanilla extract
  • 2 tbsp milk
  • 2 tbsp passion fruit pulp (frozen food section) thawed

 

  • To make the frosting: In a mixing bowl, add; room temperature butter and cream with a hand mixer. Gradually spoon in sugar and mix as you go, once sugar is whipped in, add milk, vanilla extract and passion fruit pulp and continue to whip until fluffy, chill for several hours.

Directions 
Preheat oven to 350 Degrees F. Flatten croissant with a rolling pin, place croissants on sheet pan and bake for 5 -7 minutes. Remove flatten toasted croissants and sprinkle 1 tbsp of sugar evenly on each croissant and using a brûlée torch, caramelize the sugar and cool. Spread or pipe the buttercream on top of each croissant and place berries on top. Dust with powdered sugar and serve.

Dutch Baby

Dutch Baby 
Sometimes Called A German Pancake, A Bismarck Or a Dutch Puff!
Difficulty: Easy
Prep Time: 15 Minutes
Cooking Time: 25 Minutes

Ingredients
3 eggs, room temperature 
1/2 cup whole milk, room temperature
1/2 cup flour
2 tbsp sugar
2 tbsp butter
pinch of nutmeg
1 cup assorted berries
powdered sugar



Cooking Tools
Blender
2 small (individual) cast iron pan


 
Directions 
Place room temperature ingredients, the eggs, milk, flour, sugar and a pinch of nutmeg into the blender and pulse to blend all ingredients. The liquid will be somewhat runny. Preheat oven at 450 Degrees F. and place cast iron pans in the oven to heat. Once iron pans are screaming hot, remove from oven and add 1 tbsp butter into each pan until melted. Pour evenly the the liquid batter into hot buttered pans and immediately place back in oven and bake for 20 minutes, then reduce heat to 300 Degrees F for an additional 5 minutes. Remove from oven and cool slightly before adding fresh berries and dust with powdered sugar. Cook's Notes If you are using a large cast iron pan, double the amount of ingredients. It is very important to use room temperature ingredients for the edges to rise high.

Sausage Gravy & Biscuits

Sausage Gravy & Biscuits
A Southern Breakfast Staple!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 20 minutes

Ingredients 
1/2 lbs. bulk breakfast sausage
3 tbsp butter
2 tbsp flour
1 cup milk
1 cup heavy cream
salt
pepper

Cooking Tools
Medium non-stick pan
8 inch round non-stick cake pan
Mixing bowl


Directions 
In a frying pan on medium heat, saute and cook sausage, breaking up into small pieces. Cook sausage until golden brown, add butter and toss until melted. Sprinkle in flour and toss into meat until flour is absorbed into the butter and fat. Pour in milk & cream and still until the gravy thickens, reduce to a simmer. if you want thinner gravy, add more milk.  Adjust seasoning with salt and pepper to taste. Pour over biscuits and serve.


Biscuits
Ingredients
2 cups Bisquick baking mix + dusting
2/3 cup milk or butter milk
1 tbsp vegetable oil
1 stick butter

Directions
Preheat oven to 370 Degrees F.  in a mixing bowl, add Bisquick, milk and oil. Form into a soft dough ball and place on a board or counter that it lightly dusted with baking flour. Form dough ball into a disk slightly smaller than the cake pan and cut into wedges. Place butter in cake pan and place in oven until butter is melted and bubbly, pull pan out and place wedges of dough in pan and using a pastry brush and brush up the sides and top of dough with some of the melted butter.  Place in oven and bake for 18-20 minutes until golden brown.

Serves 4

Cinnamon Roll Biscuits

Cinnamon Roll Biscuits
With A Orange Buttercream Icing!
Difficulty: Easy
Prep Time: 30-40 minutes
Cooking Time: 20-25 minutes


Ingredients 
4 cups Bisquick Mix + dusting
1 cup buttermilk
1 stick butter, grated/shaved
1 tsp cinnamon
1/2 cup sugar
1 tsp baking powder

Cooking Tools
Sheet pan, non-stick or Silpat
Box grater
Rolling Pin
Zester 



Directions
Preheat the oven to 400 Degrees F. In a mixing bowl, add; flour mix, cinnamon, sugar, baking powder, butter and slowly add buttermilk.  Mix until you form a large ball, place ball on a floured surface. Roll out dough (picture below) Once rolled out, sprinkle with more cinnamon.  Cut into 5-6 strip, same size and roll like a jelly roll. Place each roll seam side down on a baking sheet and place in the oven and bake for 20-25 minutes. Once baked, remove and cool, top with Orange Buttercream Icing. (recipe below)
Yields 5-6 Biscuits

 



Orange Buttercream Icing
Ingredients 
2 sticks butter, room temperature
1 1/4 cup confectionery sugar
1 tsp vanilla extract 
1 tsp orange extract
zest of 1 orange

Cooking Tools
Medium mixing bowl
Hand mixer

Directions
Place all ingredients in a mixing bowl and whip with a hand mixer until smooth.

Waffles

Cooking Time: 2 minutes (cooked in batches)

Ingredients
2 2/3 cups whole milk
2 Tbsp vegetable oil
2 Tbsp butter, melted
2 eggs

 

Cooking Tools


Directions
Place all ingredients in a mixing bowl, stir until ingredients are blended.  Cover and wait 15-30 minutes to allow the batter to rise and thicken. Turn waffle maker on and either use a cooking spray or a pat of butter in each waffle slot and add about a 1/2 cup of batter to each slot and close lid. Set to medium, The waffle iron will chime when it is cooked.  Cook waffle in batches and serve it however you like.

Slice passion fruit and scoop up pulp. Layer your bowl with yogurt, passion fruit and granola.

Eggs & Hash

 Eggs & Hash
A Quick Breakfast From Leftover Baked Potatoes!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 15 minutes



Ingredients
2 cooked baked potatoes, cubed
1/2 yellow onion, large dice
4 green onions, chopped
2 eggs
1/4 tsp garlic powder
2-3 tbsp grape seed oil
2 tbsp butter
1/4 tsp Harissa
pinch of red pepper flakes (garnish)
balsamic glaze (optional)
minced parsley (garnish)
salt
pepper


Cooking Tools
Large frying pan with lid


 

Directions
On a medium-heat, melt butter and oil until it sizzles.  Add in, cubed baked potatoes (you can leave on skin or peel potatoes if the skin is to hard), I usually used cold leftover potatoes from the night before. Also add in onions, green onions and the seasonings.  Saute until potatoes start to crisp and the onions are tender. Create 2 wells in the potatoes and add each egg into a separate well.  salt and pepper top of eggs and place lid and reduce heat to medium-low and cook eggs for a few minutes. Serve up each egg with potatoes and garnish with minced parsley, pepper flakes and optional drizzle of balsamic glaze.

Kiseki Souffle Pancakes

Kiseki Souffle Pancakes
The Japanese Miracle Pancakes Are Just Heavenly!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 20 minutes

 Ingredients
6 egg whites
5 egg yolks
1/2 cup sugar
1/4 cup milk
1/4 tsp vanilla extract
1/4 tsp cream of tartar
maple syrup
fresh fruit (optional)
vegetable oil for greasing
cooking spray
Cooking Tools
Large non-stick frying pan with lid
2 medium mixing bowl
Electric hand mixer
1 cup /measuring cup 

Directions
Place 5 egg yolks, sugar, milk and vanilla in a mixing bowl and whisk together. Place 6 egg whites & cream of tartar in a separate mixing bowl and using a hand mixer, whip on high until stiff peaks form.  Fold in egg whites into the yolk mixture gently without losing the fluffy volume. Incorporate until evenly folded. In a non-stck pan, lightly grease pan with vegetable oil, heat on a very low setting/simmer.  Spray the inside of the measuring cup with cooking spray and scoop up the batter and place in pan, cook 3 to a batch.  Place lid on top and cook for 4-5 minutes. Spray spatula with cooking spray to flip pancakes over gently.  Place lid back on and cook for an additional 4 minutes.  Serve immediately with syrup.

Ingredients
Brioche loaf, 1" slices (6)
1/2 cup coconut oil, softened
1 tbsp cinnamon
1/2 cup sugar
sliced strawberries (optional)

Cooking Tools
Small bowl
Nonstick frying pan 


Directions
Mix coconut oil, cinnamon and sugar, blend well.  Spread each slice of bread on both sides with the mixture.  On medium low heat, fry bread slices until golden brown on both sides and crispy. Serve with sliced strawberries.

Banana Coconut & Pecan Bread

Banana Coconut & Pecan Bread
What To Do With Over Ripe Bananas!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 45-50 minutes



Ingredients
4 large ripe bananas, smashed
1 banana, slice in half
1 3/4 cup flour
3/4 cup sugar
1 cup coconut oil, melted
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp allspice
1 tsp vanilla bean extract
1 cup sweetened coconut flakes
1/2 cup chopped pecans
2 eggs
Pam cooking spray

Cooking Tools
Large mixing bowl
Small mixing bowl
12 count muffin tin or
1 bread loaf pan
Muffin liners (optional)



Directions
Preheat oven to 350 Degrees F. Smash the bananas in a small whisking bowl. Mix dry ingredients: flour, sugar, baking powder,cinnamon & allspice. Whisk in the rest of the ingredients until blended well. Spray muffin tin or bread loaf with the cooking spray. Pour batter evenly into loaf or muffin pan and place either sliced banana on top of batter or banana slices on top of each muffin. Bake in oven for 45-50 minutes. Eat warm or at room temperature. Top with coconut flakes if so desired.
Yields 1 loaf or 12 muffins
