Pomegranate Balsamic Chicken Wings

Pomegranate Balsamic Chicken Wings
Sweet & Sour With A Bit Of Crunch!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 15 minutes


Ingredients
Dozen cooked plain chicken wings; store bought
1/2 cup green pepper, diced
1/2 cup red /yellow pepper, diced
1/2 cup onions, diced
2 Tbsp Avocado oil
1/2 stick melted butter
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup Pomegranate seeds 
salt to taste
pepper to taste
 


Cooking Tools

All Clad deep pan/wok 


Directions
On medium heat, add; Avocado oil until heated.  Add in Sweet chili sauce, diced onions & peppers and cook for 1 minute, stir to prevent burning.  season with the garlic & onion powder, then add the White Balsamic Reduction.  Salt & Pepper to taste, reduce glaze until slightly thickened and sticky. Pour in butter and mix before adding the cooked chicken wings. Toss the chicken wings in the sauce and add in the pomegranate seeds and cook for a additional few minutes until the glaze thickens and the chicken is evenly heated through.  Garnish with a few pomegranate seeds.

Crispy Parmesan Potatoes

Crispy Parmesan Potatoes
Ingredients
4 Russet Potatoes
Parmesan cheese
garlic powder
onion powder
olive oil
butter
salt
pepper


Cooking Tools
Parchment paper

Directions
Cook's Notes: I did not put measurements down, use your discretion.
Preheat oven to 375 Degrees F. Line sheet pan with parchment paper.
Peel potatoes and cut length wise 1/4" to 3/8" thick. With a paring knife, score cross hatch pattern on one side of potatoes without cutting through the potatoes. Season potatoes with garlic powder, onion powder, salt & pepper on both sides. For each slice of potato, drizzle enough olive oil to cover the bottom of potato. sprinkle enough Parmesan that would cover the length and width of slices potato. Lay score side of potato down onto the olive oil and cheese, a top with a slice of butter. Do this separately with every slice of potato. Bake in oven for 30-40 minutes. Remove from oven and let cool just for a few minutes, then flip over each potato, serve warm as a side dish. Garnish with minced parsley (optional).

French Baguette, split, 6 inch sections
Prosciutto slices
1 cup fresh ricotta cheese
1 tsp honey
1 tsp minced chives + garnish
1 clove garlic, minced
salt
pepper

Directions
In a small bowl, mix; ricotta cheese, honey, chives, garlic, salt & pepper.  Split baguette and spread ricotta mixture and layer Prosciutto slices and garnish with more chives.

Hummus & Fried Flatbread

Hummus & Fried Flatbread
You Will Never Eat Store Bought Hummus Again!
Difficulty: Moderate
Prep Time: 1 hour, 15 minutes
Cooking Time: 30 minutes

Ingredients
14 oz. can Garbanzo beans, drained
1/2 cup reserved bean liquid
2 tbsp. Tahini
2 cloves garlic, finely minced
1/2+ cup extra virgin olive oil
juice of half lemon
zest of half lemon
3/4 tsp cumin
1/4 tsp Harissa
minced parsley for garnish
salt 

Cooking Tools
Food processor

Directions
Place all ingredients in food processor except salt.  Puree until smooth, salt to taste at the end. Plate hummus and garnish with extra garbanzo, drizzle with olive oil, Harissa and minced parsley.
Yields 4 

Fried Flatbread
Ingredients
3 cups All Purpose Flour, sifted
APF for dusting
1 cup warm milk
1 cup warm water
1 tbsp active yeast
1 tbsp sugar
3 tbsp olive oil+ greasing
1 tsp salt
vegetable oil for frying 
Cooking Tools
2 large mixing bowls
Plastic wrap
Flour sifter
Rolling Pin
Cast iron Pan

Directions
In one mixing bowl sift together flour and salt. In another mixing bowl add; warm milk, warm water, sugar and yeast and mix. Cover with plastic wrap and place somewhere warm for 15 minutes to activate the yeast. Once yeast is activated, mix in flour and oil to the active yeast and mix to form into ball. Knead dough for about 5 minutes, you can add more flour if its too wet or sticky. Make a large ball and and drizzle with a little oil on top of dough ball.  Cover with plastic and allow to rise in a warm location.  Once risen, punch down and remove from bowl.  Place on lightly floured surface. Cut into eight pieces and roll into balls. Use a rolling pin to roll out your flat bread. Heat cast iron pan with a 1/4 inch of oil on low heat. Fry each flatbread one at a time for 2 to 3 minutes on each side, drain excess oil on paper towels.

Ingredients
Smithfield Maple Glazed Ham slices
6-8 Kings Hawaiian buns
1/4 cup leftover cranberry sauce
1/2 cup shredded cheddar cheese
1 egg
1/2 cup milk
1/4 tsp maple pumpkin spice
2 tbsp butter, melted
2 tbsp maple syrup

Cooking Tools
Baking dish
Small mixing bowl
Pastry brush 


Directions
Preheat oven to 350 Degrees F. Use some of the melted butter to grease bottom of baking dish. Slice bread in half and place bottom half in prepared baking dish. Whisk together egg, milk and spice in a small mixing bowl and then pour evenly over bread. Layer ham slices, then cranberry sauce, then top with shredded cheddar cheese evenly. Then place top half of bread on top. Brush rest of melted butter and maple syrup on top of buns.  Bake in oven for 30-35 minutes. Let rest for 15 minutes before slicing and serving.

Mini Blueberry Pop Tarts

Mini Blueberry Pop Tarts

Ingredients
Refrigerated Pillsbury Pie Rolls
1 cup fresh blueberries
1/2 cup sugar
1 egg
2 tbsp water

Cooking Tools
Parchment paper
Sheet pan
Cookie cutouts
Pastry brush 

Directions
Preheat oven to 350 Degrees F. Roll out pie dough and cut 2 squares ( whatever shape you desire) per pop tart. Place some blueberries in center, sprinkle with a tsp. of sugar making sure to leave an edge to seal and press the top piece. Whisk together egg and water to create a egg wash.  Use a pastry brush and brush egg wash around the entire edge and place the second crust on top and seal with fork prongs. Brush each Pop Tart with some additional egg wash to create a golden crust. Place on parchment lined sheet pan and bake in oven for 30 minutes.  Let cool before serving.
Yields 12+

Ingredients
16 oz. fresh figs
1/2 cup apple juice
3/4 cup raw sugar
1/2 tsp vanilla bean extract
2 tbsp pectin

Cooking Tools
Medium saucepan
Jam jars



Directions
In a saucepan, add; figs, juice, sugar.  Cook down for 15 minutes, break down figs as they cook.  Add in vanilla and pectin and cook for additional minute.  Cool down and place in jam jars.  Refrigerate and store Fig jam in the refrigerator.

Camembert & Apple French Press

Camembert & Apple French Press
Sweetness Of The Apples And Creaminess Of The Cheese!

Ingredients
French baguette (2) 6 inch slices/ halved
4 slices of Camembert cheese
1 apple (honey crisp) sliced thin
2 tbsp sugar
2 tbsp butter + greasing
pinch of cinnamon
1/4 tsp vanilla extract

Cooking Tools
Mandolin
Indoor grill pan + heavy press
Small skillet

Directions
In a small skillet, melt butter on high heat.  Saute apple slices in butter with sugar, cinnamon and vanilla. Cook apple until slightly tender, not mushy.  Butter outside of baguette, divide apples and place them on one side of loaf.  Add on the cheese and pour any juices the apples created onto the cheese.  Place top half of bread.  Preheat the grill pan and lay sandwich on pan and lay the press on top to weigh down the sandwich. Cook each side for about a minute or until the cheese starts to melt.

Ingredients
1 dozen chicken wings & drumettes
1 tsp garlic powder
1 tsp onion powder
1/2 stick butter
1 cup sweet chili sauce
2 tbsp Sriracha sauce
1 tbsp Gochuchang
1/2 tsp ginger, grated
green onion, chopped for garnish
salt
pepper

Small sauce pan
Medium mixing bowl 

Just Double The Recipe For More Wings!

Directions
Preheat oven to 350 Degrees F.  Place chicken wings on sheet pan and sprinkle with garlic powder, onion powder, salt & pepper.  Toss until evenly coated with seasoning. Bake in the oven for 45 minutes, tossing wings on occasion to brown on all sides.  Melt butter, sweet chili sauce, Sriracha, Gochuchang and ginger.  Heat on low and whisk. Place cooked chicken wings in a mixing bowl, pour sauce on top and toss wings until evenly coated.  Place in serving bowl and garnish with chopped green onions.

Creamy Avocado Deviled Eggs

Creamy Avocado Deviled Eggs

Ingredients
6 hard boiled eggs
1 avocado, diced
2 heaping tbsp mayonnaise
1 heaping tbsp sour cream
1 tsp white vinegar
1/2 tsp fine sugar
pinch chili powder + garnish
minced parsley, garnish
salt

Food processor
Piping bag with tip

Directions
Place eggs in a pot and cover with cold water.  Bring water to a start of a boil and turn off heat.  Let it sit for 12 minutes, then drain and run cold water on the eggs to stop the cooking process.  Peel and halve the eggs (long ways or upright). Place yolk in a food processor along with the diced avocado, mayonnaise, sour cream, vinegar, sugar, salt and chili powder.  Pulse on high until creamy and smooth.  Place egg mixture into piping bags and fill each egg.  Garnish with chili powder and minced parsley.
Yields 6 or 12

Hush Puppies

Ingredients
1 (8.5 oz.) box Jiffy Corn Muffin Mix
1 1/2 cups self rising flour
2 eggs
1 cup milk
1/4 cup green onions, sliced thin + garnish
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
vegetable oil for frying

Cooking Tools
Medium mixing bowl
Deep frying pan
Small ice cream scoop




Directions
In a mixing bowl, add; corn muffin mix, flour, eggs, milk, green onions, garlic powder, onion powder, salt and pepper.  whisk well, making sure there is not lumps.  Pour enough oil in deep fryer, or pan, so the hush puppies can float. Heat oil to 325 Degrees F.  Using a ice cream scoop, dollop 3-4 into the heated oil and cook for 4 minutes, turning to cook evenly.  Remove and drain on some paper towels. Cook in batches, do not over fill. Garnish with green onions.

Pain Perdu

Ingredients
1 French Baguette
7 eggs
2 cups milk
1 tsp vanilla extract
1 tsp almond extract
1/2 tsp cinnamon
1/4 tsp fresh grated nutmeg
2 tbsp superfine sugar
butter for frying
1 cup powdered sugar
maple syrup (optional)

Cooking Tools
Medium mixing bowl
Medium non-stick skillet
Sheet pan 


Directions
Preheat oven to 400 Degrees F.  Slice baguette approximately into 2-2 1/2 inch rounds.  In a mixing bowl, add; eggs, milk, vanilla extract, almond extract, cinnamon, nutmeg, superfine sugar and whisk well.  Place bread into the egg mixture and coat well.  Soak bread for 10 minutes to absorb the egg mixture.  In a skillet, on medium heat, melt enough butter to coat bottom of pan.  Take each bread slice out of the liquid and fry cut sides a few minutes to a light golden brown.  Place each fried slice on a sheet pan and bake in oven for 15-20 minutes.  Remove from oven and cool slightly before dusting with powdered sugar.  can be served with syrup.

Avocado Toast

Ingredients
2 avocado, pulp removed
1 clove garlic, minced
3 tbsp olive oil + drizzle
juice of 1 lemon
1 cup micro greens
6 slices Ciabatta bread
salt 

Cooking Tools
Grill pan
Food processor


Directions
Drizzle olive oil on the slices of Ciabatta bread.  Grill bread until nice and toasted, set aside.  In a food processor, add the peeled avocado pulp, minced garlic and the olive oil and pulse until semi-smooth.  Salt avocado mixture to taste.  Place whipped avocado onto the grilled toast and top with some micro greens.

Mediterranean Rice Pudding

Mediterranean Rice Pudding
A Simple Twist On A Classic Recipe, Best Served Warm!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 20 minutes
 

Ingredients
2 cups cooked white rice
1 1/4 cups sugar
3 cups whole milk
3 eggs, whisked
1/4 tsp cinnamon + dusting
1 tsp vanilla extract
1/4 tsp almond extract
fresh grated nutmeg
1 cup golden raisins
1/4 cup dried figs or strawberries, small dice
1/4 cup dried Medjool dates, small dice
1/4 cup fresh mangoes or pineapples, small dice
1/4 toasted almond slices
1/4 cop toasted coconut flakes 

Cooking Tools
Medium sauce pan
Small mixing bowl


Directions
On low heat, simmer milk, sugar, vanilla and almond extract.  In a small mixing bowl, whisk eggs.  Once sugar has melted in the simmered milk, add a small amount of hot milk into the the bowl with the whisked eggs (tempering the eggs) and whisk vigorously. Pour the entirety of the whisked eggs and milk back into the sauce pan with the simmering milk and whisk vigorously so the eggs don't scramble!.  Whisk continuously until milk begins to thicken.  Mix in the rice, cinnamon, nutmeg, raisins and heat through. Take off heat and let come to room temperature or slightly warm.  Place in serving bowl and top with dried figs, strawberries, dates, mangoes or pineapple, almond slices and toasted coconut flakes.  Dust with cinnamon and serve at room temperature or warm.
