Waffles

Waffles
Build Your Own Waffle Station!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 2 minutes (cooked in batches)

Ingredients
2 2/3 cups whole milk
2 Tbsp vegetable oil
2 Tbsp butter, melted
2 eggs

 

Cooking Tools


Directions
Place all ingredients in a mixing bowl, stir until ingredients are blended.  Cover and wait 15-30 minutes to allow the batter to rise and thicken. Turn waffle maker on and either use a cooking spray or a pat of butter in each waffle slot and add about a 1/2 cup of batter to each slot and close lid. Set to medium, The waffle iron will chime when it is cooked.  Cook waffle in batches and serve it however you like.

Fried Chicken Drumettes

Fried Chicken Drumettes!
Serve This Appetizer In A Fun Waffle Bowl!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 10-12 minutes


Ingredients
1-1 1/2 lbs. chicken drumettes
Artisan waffle bowls (optional)
2 cups flour
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp pepper
2 eggs, whisked
oil for frying
honey for drizzle
minced parsley for garnish

Cooking Tools
Deep fryer
Medium mixing bowl
Small mixing bowl 

Directions
Heat fryer with oil for deep frying to 350 Degrees F.  Mix flour and seasonings in a mixing bowl. Dredge each chicken drumettes into the flour first, then dip into the whisked eggs, then back into the seasoned flour.  Fry the drumettes for 10-12 minutes or until fully cooked.  fry in batches, drain on plate lined with paper towels.  Before serving in waffle bowls, drizzle with honey and garnish with minced parsley.

Belgian Sugar Waffles

Belgian Sugar Waffles
Crunchy & Caramelized Crust, Soft & Chewy Center!
Difficulty: Easy
Prep Time: 1 hour, 30 minutes
Cooking Time: 10 minutes

This Authentic Belgian recipe is served warm throughout the day as more like a snack. These waffles are a richer, denser, sweeter, and chewier waffle.  In Belgium, the waffles are prepared in plain, vanilla and cinnamon varieties by street vendors across the nation. 



Ingredients
3 1/2 cups flour
1 tbsp dry yeast
3/4 cup lukewarm milk
2 sticks butter, room temperature
2 eggs
1 tsp vanilla extract
1/2 tsp salt
1 tbsp sugar
8 oz. pearl sugar  http://www.larsown.com/

No Syrup Needed For This Waffle!

Directions
In the mixing bowl, add lukewarm milk, 1 tbsp sugar and yeast.  Mix yeast and sugar into the milk and set aside to activate the yeast for 15 minutes.  Into the mixing bowl with the activated yeast, add; flour, salt and vanilla and stir with fork.  Mix in the egg one at a time and mix well in between.  Using your hands, mix and knead in room temperature butter a tbsp at a time until well incorporated.  Cook's Note: The texture will be more like cookie dough than batter, very thick.  Let dough rise in a warm location for 1 hour, it will have doubled in size.  Fold in pearl sugar into the dough, small amounts at a time to evenly distribute.  Preheat and grease waffle press and add a ball of dough into each well and cook for 1-2 minutes on medium-high heat.  Time will vary and will have to be adjusted accordingly, depending on the appliance you are using.  Make sure the waffles are cooked through, caramelized and crunchy on the outside and soft and chewy on the inside.

Roast Turkey Stack With Savory Stuffing Waffle
Or Maybe It's Just Thanksgiving In February!
Difficulty: Moderate
Prep Time: 45 minutes
Cooking Time: 2 hours

 
Roast Turkey
Ingredients
5-6 lb. Turkey Breast, bone-in
1 tsp dried thyme
1 tsp crushed rosemary
1 tsp salt
1 tsp pepper
2 tbsp olive oil or melted butter

Deep roaster with rack


Directions
Preheat oven to 350 degrees F.  Rub turkey breast with olive oil or melted butter.  sprinkle seasoning evenly over turkey breast and place on a roasting rack.  Bake turkey for about 2 hours or until when the juices run clear.  Let stand for 15 minutes before slicing.

Savory Stuffing Waffle
Ingredients
4 cups rustic bread, cubed
1 cup onion, diced
1 cup celery, sliced
1/2 tsp dried thyme
1/2 tsp dried crushed rosemary
1/4 cup fresh parsley, chopped
2 tbsp butter
2 cups turkey broth
1 egg
salt
pepper
cooking spray

Cooling rack
Large mixing bowl
Frying pan

Directions
In a skillet add; butter and melt over medium heat.  Add onions, celery, thyme, rosemary and cook until tender.  Add turkey broth to the skillet until heated.  In a large mixing bowl add; cubed bread, and parsley.  Pour the turkey broth with the onions and celery over the cubed bread and allow to soak through.  Mix the bread until it start to falls apart and well blended, as the stuffing cools down, add 1 egg and mix well.  Using an electric waffle press ( follow manufactures direction) spray waffle grill with cooking spray, fill compartments with stuffing mixture and lower lid and cook until nice and golden, with crispy edges.  Remove each waffle and place on cooling rack; repeat. Will yield about 8 waffles.  To assemble this dish, place 1 waffle on serving dish, add slices of roasted turkey breast, then 1 scoop of our Smashed Potato ( recipe in our December post) or mashed potatoes, ladle of our Creamy Turkey Gravy (recipe below), then top with another Savory Stuffing Waffle.

Creamy Turkey Gravy
Ingredients
1 1/2 cups turkey broth
1 tbsp butter
2 tbsp flour
1 cup half & half
pinch of salt

Directions
In a small pot on medium heat melt butter and whisk in flour and cook for about a minute or two.  Whisk in turkey broth and half & half and continue to whisk until the gravy thickens.  If it gets too thick, add more turkey broth until desired consistency.
