Breakfast Bagel

Breakfast Bagel
Breakfast On The Go! 
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 30 minutes

Ingredients 
2 plain bagels 
2 eggs
1/4 lb. breakfast sausage (bulk)
2 tbsp. diced onion
1/4 cup shredded cheddar cheese 
2 tbsp minced cilantro
2 Tbsp butter, melted 
salt
pepper

Cooking Tools
Small mixing bowl
Non-stick fry-pan 
Baking sheet tray

Directions
Preheat oven to 350 degrees F.  Just slice the cap portion of the bagel, leaving majority of the bagel intact.  Scoop out the center portion of the bagel, just enough to hold the egg mixture. In a non-stick frying pan cook the breakfast sausage until fully cooked, let cool.  In a small mixing bowl, whisk eggs, onions, cheese, minced cilantro, the cooled breakfast sausage, melted butter, salt & pepper. Spoon in egg mixture into the hollowed out bagel and place on a sheet tray and bake in the oven for 20-25 minutes.
Serves 2

Honey Chocolate Chip Cookies

Honey Chocolate Chip Cookie

Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 14 minutes


Ingredients
6 Tbsp. unsalted butter or Vegan butter, softened 
1/3 cup sugar
1/2 cup brown sugar
3 Tbsp honey
2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 Tbsp apple cider vinegar 
1/2 cup sweetened condensed milk
2 cups Gluten-free flour
2 cups semi-sweet chocolate chips

                                                                 1/4 cup coffee (optional)  


Cooking Tools 
Large mixing bowl
Sheet pan
Parchment paper or Silpat 
Medium ice cream scoop






Directions 
Preheat oven to 350 Degrees F. In a large bowl, beat butter, sugars, honey, vanilla, salt, baking soda, baking powder, sweetened condensed milk, coffee, vinegar until smooth. Add in flour and incorporate into the wet ingredients.  Fold in the chocolate chips until evenly distributed.  use an ice cream scoop and place on lined sheet pan and bake in the oven for 14 minutes.  Remove from oven and wait 5 minutes to transfer to a wire rack to cool.

Yields 1 dozen

The Most Decadent Mac & Cheese

The Most Decadent Mac & Cheese
This Delicious Recipe Is Not For The Faint Of Heart, This Is A Staple For Any Holiday Meal Or Even A BBQ!
Difficulty: Easy
Prep Time: 1 hour
Cooking Time: 1 hour

Ingredients
1 box macaroni 
3 cups heavy cream
1 stick cold butter, small cubes + 1 tbsp melt butter
1 cup shredded Gouda cheese
1 cup shredded Gruyere or Emmental cheese
1 cup shredded Fontina
1 cup shredded sharp Cheddar cheese
1 cup shredded white Cheddar cheese
1 cup shredded Mexican blend cheeses
1/2 cup grated Parmesan
1 cup of Velveeta cheese, cubed
1 level Tbsp garlic powder
1 level Tbsp onion powder
1 tsp salt
1/2 tsp black pepper
1/4 tsp ground nutmeg

2 egg yolks (optional)

 

Topping 
1 Tbsp melted butter

Directions
Preheat oven to 350 Degrees F.  Cook macaroni according to directions on box.  Drain pasta and quick rinse with cold water.  Drain and dry completely your pasta and let it come to room temperature. In a large mixing bowl, add in; pasta, the cubed butter, cream, egg yolks and seasonings & mix, add cups of cheese one by one, folding it in as you put in each shredded cheese and Velvetta.  Grease bake dish or dishes with a little melted butter and place the macaroni in the dishes. Melt some butter and add to bread crumbs and toss, sprinkle on top of the macaroni .  Bake in oven for about 40 minutes until hot and bubbly and has a golden crust.
Serves 8-10

Christmas Brunch!

 Christmas Brunch is a tradition in our household, Our family and guest arrive to our home anticipating what I have made before the morning festivities of opening the presents under the Christmas tree! I try to add something different every year but stick with some of the tried and true dishes that they expect every Christmas!



 



Waffles

Waffles
Build Your Own Waffle Station!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 2 minutes (cooked in batches)

Ingredients
2 2/3 cups whole milk
2 Tbsp vegetable oil
2 Tbsp butter, melted
2 eggs

 

Cooking Tools


Directions
Place all ingredients in a mixing bowl, stir until ingredients are blended.  Cover and wait 15-30 minutes to allow the batter to rise and thicken. Turn waffle maker on and either use a cooking spray or a pat of butter in each waffle slot and add about a 1/2 cup of batter to each slot and close lid. Set to medium, The waffle iron will chime when it is cooked.  Cook waffle in batches and serve it however you like.
