Summer Berry Pudding

Summer Berry Pudding
Summer Is Almost Over, So Get Your Berries On!
Difficulty: Easy
Prep Time: 45 minutes
Cooking Time: 5 minutes
Cooling Time: 6-8 hours


Ingredients
1 loaf of Brioche 
3 cups strawberries, sliced
3 cups blueberries + garnish
2 cups blackberries
juice of 1/2 lemon
1 cup sugar
whip cream

Cooking Tools
Round deep dish or loaf pan
Large saucepan


Directions
Cut loaf into 1/2 inch slices, cut off crust and slice into triangles. In a saucepan add berries, lemon juice and sugar and heat for 2-3 minutes and set aside to cool, create enough berry liquid. Pour some of the berry liquid on the bottom of dish.  Line a single layer of the Brioche to cover the bottom. Add enough berries to cover Brioche. Alternate layers of Brioche and berries with the last layer of Brioche. Cook's Note: If you want to invert the pudding, line the bottom and sides of dish with plastic wrap! Place plastic on top and a small plate and use a large can to weigh it down.  Refrigerate for 6-8 hours before serving.  Garnish with some fresh blueberries and fresh whip cream.

Pavlova

Pavlova
Dessert Of New Zealand, The Delicate Meringue is light and crispy, The Fresh Berries Makes This Dessert A Delight!
Difficulty: Moderate


Ingredients
4  egg whites  
1/4 tsp cream of tartar  
1  cup sugar  
2  cups  whipped cream (ready made is fine)
For Berries  
4 -6  tablespoons sugar
1 cup strawberries cut in quarters
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 cup kiwi, diced
1 cup mangos, diced

Beautiful Meringue Shells!

Directions
Preheat oven to 290 Degrees F.  In a large mixing bowl add egg whites and whip with a electric hand mixer.  Add cream of tarter until light peaks form, add sugar 1 tbsp at a time while you are whipping until 1 cup of sugar is whipped and the meringue is stiff peaks.  On a parchment lined baking sheet, dollop meringues into dessert shells with a well in the center.  Place in oven and bake for 1 hour and 20 minutes.  take out and transfer to a cooling rack.  In a large mixing bowl place all the fruit and toss in sugar and set aside until sugar has melted completely.  To serve; place meringue shell on a plate, now some whipped cream in center of well, then place 1 cup of fresh berries on top.  Serve immediately!!

Strawberry Shortcake

Strawberry Shortcake
An Absolute Must For The Summer!
Difficulty: Easy


Ingredients
1 loaf of Pound Cake
1 large container of strawberries
1/2 cup sugar
1 tbsp fresh lemon juice

Directions
Using a cookie cutter; slice and then cut rounds of pound cake to fit jelly jars (2 slices per jar).  Wash, trim and slice strawberries and place in large mixing bowl with sugar and lemon juice.  Mix strawberries and set aside to draw out the natural juices.  Place pound cake in jar, alternating with strawberry mixture; repeat. Then top with fresh whip cream (Recipe below).
Serves 4
Whipped Cream
Ingredients
2 cups heavy whip cream
1/2 cup super fine sugar
Directions
In a cold mixing bowl, place heavy whipping cream, using a hand mixer whip the cream on medium at first then high. The last 2 minutes of whipping, add the sugar. Place in piping bag for more decorative flair.
