Bacon & Egg Toast

Bacon & Egg Toast
An Easy Low-Carb Breakfast
Difficulty: Easy
Prep Time: 10 minutes
Cooking Time: 5-7 minutes


Ingredients
1 egg
1 bacon, cooked crispy, minced
1 slice whole wheat bread
olive oil for drizzle
1 tsp butter
minced parsley for garnish
cooking spray
salt
pepper

Cooking Tools
Cooking Ring Cylinder
Small non-stick frying pan with lid

Directions
cut bread to the size of the cylinder. Place ring mold on frying pan and spray inside with cooking spray.  Add butter in center and heat on very low. Once butter melts, place cut bread in the cylinder. Crack one egg on top of bread. salt and peeper the egg and place lid on top to cook. Cook for several minutes until whites are opaque. Remove ring and place egg on plate, sprinkle with bacon, minced parsley and drizzle with olive oil.

Bacon & Egg Flatbread

Bacon & Egg Flatbread
Not Just For Breakfast!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 30 minutes


Ingredients
Stonefire Artisan Flatbread https://www.stonefire.com/
4 eggs, whisked
4 bacon strips, cooked & chopped
1 cup smoked Gouda, shredded
1 tbsp Ricotta cheese
2 tbsp onions, sliced thin
1 tsp parsley, minced
olive oil for drizzle
salt
pepper

Cooking Tools
Small mixing bowl
Sheet pan 


Directions
Preheat oven 350 Degrees F.  Hollow out the center of the flatbread, leaving the bottom layer of the flatbread intact. Leave a 1 inch border so the filling does not run out. Whisk eggs in a mixing bowl, add; 1/2 cup of Gouda, Ricotta, chopped bacon, salt& pepper. Pour egg mixture in the center and spread to fill hollowed out areas. Top the egg mixture the rest of the Gouda, onions and minced parsley. Drizzle some olive oil on top of flatbread including the edges.  Bake in oven for 25 minutes.

Bacon & Egg Puffs

Bacon & Egg Puffs
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 25 minutes


Ingredients
2 puff pastry sheets
4 slices bacon, cooked
2 eggs
1 tsp minced parsley
1 tbsp Parmesan cheese
olive oil
salt
pepper

Cooking Tools
2 small round bottom release pans
Small fry pan
Sheet tray 


Directions
Preheat oven 400 Degrees F.  Cut pastry in a round circle, double the size of the bottom release pan.  Cook bacon half way and set aside.  Place puff pastry dough in the pan and fold pleats.  Do not over hang the pan. Line inner circle with bacon and crack one egg into each pan. Sprinkle with Parmesan cheese, salt & pepper and drizzle with olive oil.  Bake in oven for 25 minutes.  Release pan and remove Puffs and garnish with minced parsley.

Ingredients
12 slices bacon
24 baby yellow or red potatoes
minced parsley for garnish
Horseradish cream sauce

Directions
Preheat oven to 370 Degrees F.  Cut bacon slice in half to make 24 smaller slices.  Wrap each potato with a bacon slice with a slight overlap.  Place each wrapped potato seam side down on a sheet pan. Bake in oven for 40 minutes.  Serve with prepared Horseradish cream sauce

Plantain Wrapped In Bacon

Ingredients
1 large ripe plantain, peeled, (sliced 1/2 inch thick)
4 slices apple smoked bacon strips
1/2 cup raw sugar
sliced green onions for garnish

Cooking Tools
Sheet pan with cooling rack insert

Directions
Preheat oven 400 Degrees F.  Cut the bacon strips in half.  Cut plantain on angle, so you have more surface to wrap.  Wrap each plantain with bacon and roll in some raw sugar and place on rack seam side down.  Place in oven and bake for 30 minutes until bacon is caramelized and crispy. garnish with sliced green onions and serve with some Honey Mustard Sauce.
Yields approx. 8

Pork Tenderloin With A Cherry Demi Glace
Ingredients
2 pork tenderloins
3/4 cup Amarena Toschi Cherries in Syrup http://www.toschi.it/en/toschi-tradizionale/amarena/amarena-frutto
1.5 oz. Classic Demi Glace + 4 parts water http://www.morethangourmet.com/pantry-stock-sauces-gourmet-soups/meat-stock-and-sauces/french-demi-glace
1/2 tsp dried thyme
1 tbsp Brandy
1/2 cup crushed pistachios
drizzle of olive oil
1 tsp butter
salt
pepper

Apple Juice Braised Kale & Bacon
 Ingredients
16 oz. kale greens, chopped
3 thick slices of bacon, lardons
4 oz. gourmet blend mushrooms
2 cloves garlic, sliced
1 tbsp olive oil
1 tbsp butter
2 tbsp apple cider vinegar
1 cup apple juice +
1 tbsp sugar
salt
pepper



Serve With Some White & Wild Rice!

Directions
Preheat oven 400 Degrees F.  Place pork tenderloins on the sheet pan whole and drizzle with olive oil.  Season with salt, pepper and thyme and place in the oven and cook for 40 minutes, depending on the thickness of the tenderloins adjust cooking time. In a large skillet, place bacon and saute until cooked and browned.  Add into the skillet the kale, mushrooms, garlic, olive oil, butter, vinegar, apple juice, sugar, salt and pepper.  Place lid on pan and on low heat, cook down the kale.  Occasionally stir the kale with the rest of the ingredients.  Cook for approximately 45 minutes, if the liquid has evaporated before the kale becomes tender, just add more apple juice.
In a small sauce pan on low heat, add in the Classic Demi Glace + 4 parts water (directions on the container) and cook until dissolved.  Add in cherries and Brandy and cook down until it starts to thicken.  Salt and pepper to taste.  Whisk in butter right before spooning the sauce over the pork tenderloins.  Place braised kale down on a serving platter, slice cooked pork tenderloins into 2 inch medallions and ladle Cherry Demi Glace on top.  Garnish with some crushed pistachios.

Bacon, Lettuce & Fried Green Tomato Sandwich
A Fried Twist On This Classic Sandwich!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 25-30 minutes

 
Ingredients
8 slices, rustic bread
8 slices apple wood bacon, thick cut
8 tsp apple jelly
bibb lettuce leaves
2 green tomatoes, 8 slices
1 cup self rise flour
1/2 cup milk
1/4 cup water
1/2 tsp salt
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
pepper
Mayonnaise
butter
oil for frying

Cooing Tools
Fryer or deep skillet
Parchment lined baking sheet
Mixing Bowl

Directions
Preheat oven to 370 Degrees F. Lay strips of bacon on parchment lined sheet pan.  Spread 1 tsp of apple jelly on top side of each bacon strip and place in oven to bake for approximately 25 minutes.  The jelly will start to caramelize, do not let it burn. Remove from oven and transfer each slice of bacon to a plate.  In a mixing bowl, add; flour, milk, water, salt, paprika, onion and garlic powder.  Whisk until the batter is smooth, should resemble thinner pancake batter. Heat 1/2 inch deep oil in skillet on medium high heat. Dip green tomato in the batter on both sides, let excess batter drip off before placing in the oil.  Do not overcrowd pan with tomatoes, it's best to fry in batches. cook for a minute or two on each side and remove and place on paper towel lined plate to absorb the excess oil. Butter and grill bread slices.  Assemble the sandwich and add mayonnaise and pepper (optional).

Quiche Lorraine

Quiche Lorraine
Serve It For Breakfast, Lunch And Dinner!
Difficulty: Easy

Serve With A Spring Salad.
 
Ingredients
1 prepared pie dough
6 ounces thick cut bacon, cut into narrow strips (or “ lardons”)
3 large eggs
2 large egg yolks
1 1/4 cups half-and-half
1/4 cup green onions, chopped
1/4 tsp salt
1/4 tsp ground white pepper
Pinch freshly grated nutmeg
1 cup grated Gruyere or Swiss

Directions
Preheat the oven to 375 Degrees F. Place pastry pie dough in a 8-9 inch pie dish.
Line the pastry with parchment paper and fill with pie weights or dried beans. Bake until the crust is set, 12 to 14 minutes. Remove the paper and weights and bake until golden brown, 8 to 10 minutes. Remove from the oven and cool on a wire rack. Leave the oven on.
In a medium skillet, cook the bacon until crisp and the fat is rendered, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Discard the fat or reserve for another use. Arrange the bacon evenly over the bottom of the baked crust. In a large bowl, beat the eggs, yolks, green onion and half and half. Add the remaining ingredients and whisk to combine. Pour into the prepared crust and bake until the custard is golden, puffed, 30 to 35 minutes. Remove from the oven and let cool on a wire rack for 15 minutes.

Fried Grits With Bacon Maple Syrup

Fried Grits With Bacon Maple Syrup
Difficulty: Easy


Ingredients
grits ( prepare according to directions)
5 slices of bacon, diced
1 cup maple syrup
salt
pepper
2 tbsp  butter
Directions
Cook grits in a large pot according to directions.  Spray bread loaf pan with cooking spray, place cooked grits into loaf pan and let cool to set.
The grits will become firm as it cools and will take the form of the loaf pan.  In a frying pan cook the bacon until done and slightly crispy; add maple syrup and cook 10 minutes longer on low temp., set aside.  Once the grits have completely cooled and formed, take grits out of the pan and slice 3/4 inch to 1 inch slices.
In a separate frying pan, add butter on medium low heat, not to burn the butter.  Add slices of grits to pan, add salt and pepper, cook 3 minutes on each side or until its nice and golden crispy on each side.  Place on a serving platter and ladle bacon maple syrup on top.
Serves 6-8

Soft Scramble And Apple Jelly Bacon Croissant
Difficulty: Easy

Ingredients
4 croissant
6 eggs
1/2 cup whole milk or half and half
8 slices bacon
1/2 cup apple jelly
2 tbsp butter
salt
pepper

Directions
Prepare bacon by laying the bacon on a rack (cooling rack can be used) place on top of a sheet pan (prevents the bacon from sticking and the fat will drip away).  Spread apple jelly on the top side of the bacon.  Bake at 375 degrees F for about 25 minutes or until caramelized.  Crack the eggs in a mixing bowl, add milk, salt, peeper and whisk.
Melt butter in non stick frying pan on low heat.  Add the whisked egg, cook low and slow until it is a soft scramble. (don't overcook). Remove bacon from oven and cool slightly.  Slice croissant length wise, place soft scramble on croissant then bacon and then the top half of the croissant.

Bacon Wrapped Stuffed Chicken

Ingredients
6 Boneless chicken thighs
2 cups sautéed spinach
12 slices bacon strips
1/4 cup pine nuts
1/2 cup feta crumbled
2 cloves garlic sliced
4 tbsp olive oil
salt
pepper to taste
Directions
Sauté fresh spinach with olive oil until cooked down and moisture is gone, add garlic slices and pine nut, salt, pepper until tender, set aside until cool, add feta. Pound out the boneless chicken thigh slightly larger than original size. stuff the thigh with spinach mixture like a package and wrap with bacon.  bake uncovered 370 degrees for approx. 40-45 min. until done.
