Berry Caramel Angel Food Cake

Berry Caramel Angel Food Cake
Beautiful, Delicious & Easy!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 15 minutes


Ingredients
1 Angel Food Cake (store bought) 
3-4 cups assorted fresh berries
1/4 cup super fine sugar
whip cream

Caramel Sauce
Ingredients
1 cup light brown sugar
1/4 cup evaporated milk
1/2 stick butter
1 tsp vanilla extract
pinch of salt 

Cooking Tools
Small sauce pan
Medium mixing bowl


Directions
In a small sauce pan, add; brown sugar, milk, butter, vanilla extract, salt and stir on low heat until desired consistency.  Remove sauce from heat and cool. In a mixing bowl, add; berries, sugar and toss until sugar dissolves.  Place mixed berries on top of Angel Food Cake and drizzle with Caramel sauce.  Top with whip cream if desired.
Serves 6

Mushroom Bread Pudding

Mushroom Bread Pudding
Makes A Lovely Main Dish!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 1 hour 15 minutes


Ingredients
8 oz. assorted mushrooms
1 onion, small dice
4 garlic cloves, fine mince
1/2 Brioche loaf, cubed
6 eggs, separated
2 cups Guyere cheese, shredded
2 cups milk
1 stick butter
salt
pepper

Cooking Tools
Large skillet
1 large mixing bowl
1 medium mixing bowl
Bottom release deep dish pan
Hand mixer 

Directions
Preheat oven 350 Degrees F.  In a large skillet, melt butter on medium heat.  Saute mushrooms until soft, add onions, garlic and cook for additional 10 minutes, add salt and pepper.  Set aside cooked ingredients to cool.  Separate eggs whites and use a hand mixer until stiff peaks, set aside.  In a separate mixing bowl, add; egg yolks and milk, whisk.  Add in bread cubes and let soak. Add in cooled mushroom mixture and cheese to the bread & eggs, mix well.  Fold in egg whites into bread mixture until well incorporated. Place in greasing bottom release pan and bake for 45 minutes.  Slightly cool before releasing pan.
Serves 6

Seasonal Salad

Seasonal Salad
Always Trying To Jazz Up My Salads!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 15 minutes



Ingredients
3 whole Romaine heads, halved, cleaned
3 avocado, halved, pit removed
3 eggs, hard boiled, halved
2 cups grape tomatoes, halved
1 1/2 cups English cucumber, diced
1 cup grilled corn kernels
1/2 cup rd onion, sliced thin
5 sliced cooked bacon, diced
1 cup white cheddar cheese, diced
Favorite salad dressing

Cooking Tools
Medium sauce pan
Small frying pan
Grill 


Directions
Prepare ahead by boiling eggs, frying bacon and grilling corn. Compose salad on the plate, line halved Romaine lettuce and place all ingredients on top. Place hard boiled eggs in avocado halves.
Serves 6

Hassleback Sweet Potatoes

Ingredients
3 large sweet potatoes
1 stick butter, melted
pinch cinnamon
pinch nutmeg
1/2 tsp Herb De Provence
1 tsp minced parsley

Cooking Tools
Baking sheet

Directions
Preheat oven 400 Degrees F.  Slice 1/2 inch slices down the sweet potatoes.  Melt butter in microwave then mix in seasonings.  Use half of the butter mixture to baste potatoes before baking. Bake for 45-50 minutes.  Baste again out of the oven before serving.
Serves 6


 

Almond & Parmesan Cheese Crackers

Almond & Parmesan Cheese Crackers

Ingredients
1 3/4 cup almond flour
1/2 cup Parmesan cheese
1 large egg
1/2 tsp garlic power
pinch salt
fresh cracked pepper


Cooking Tools
Small mixing bowl
2 sheets parchment paper
Baking Sheet
Rolling pin



















Directions
Preheat oven to 350 Degrees F.  Place ingredients in mixing bowl and mix. Create a flat disk and roll out between parchment 2 parchment sheets with a rolling pin to a thickness of a nickle.  Cut with a knife into squares, place on baking sheet and bake for 15 minutes. Cool then use for canapes. For best consistency, make in batches.

Sweet Tea Pork Chops

Sweet Tea Pork Chops
24 Hour Brined Pork Chops!
Difficulty: Easy
Prep Time: 24 hours
Cooking Time: 15-20 minutes




Ingredients
4 thick, bone in pork chops
5 cups cold sweet tea
3/4 tsp garlic powder
salt
pepper
minced parsley

Cooking Tools
Large zip lock freezer bag
Outdoor grill

Directions
Place chops and sweet tea in a zip lock bag and seal with air pressed out.  Place bag in refrigerator for 24 hours.  Remove chops from tea and pat dry.  Season with garlic powder, salt and pepper.  Grill chops (depending on thickness)15-20 minutes.
Let rest for 5 minutes before serving.  Garnish with minced parsley.
Serves 4





Bourbon Stout Chili

Bourbon Stout Chili
Beer In Chili Is Magical!

Prep Time: 30 minutes
Cooking Time: 1 hour



Ingredients
1 1/2 lbs ground round beef
1 cup red kidney beans, rinsed and drained
1 cup pinto beans, rinse and drained
2 dried Ancho chilies, *( hydrated and pureed)
1 tbsp jalapenos, seeded, minced (optional)
1 cup green pepper, diced
3/4 cup red pepper, diced
1 cup onion, diced
5 cloves garlic, minced
1 1/2 cups Bourbon Stout Beer
1 29 oz. can tomato sauce
1 14 oz.  can diced tomatoes
1 4.5 oz. green chilies, chopped
1/2 cup sofrito base
2 heaping tbsp chili powder
1 tsp cumin
1/2 tsp pepper
1/2 tsp salt
1/2 tsp cinnamon
1 tbsp raw sugar
minced parsley for topping
shredded cheddar cheese for topping

Cooking Tools
Large pot 

Directions
In a large pot on medium heat, cook ground beef, drain any excess fat.  Add onions, peppers, jalapenos (optional), garlic and saute for a few minutes.  Add tomato sauce, diced tomatoes, sofrito, green chilies, chili powder, cumin, salt, pepper, cinnamon, sugar and beer; cook for 15 minutes on low.  Add the beans and cook for additional 40 minutes on a low simmer.  Serve with a sprinkle of minced parsley and shredded cheese on top the bowl of chili.
