Cast Iron Blueberry Pancakes

Cast iron Blueberry Pancakes
No Forks, Just Spoons!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 12 minutes



Ingredients
2 cups Bisquick
1/2 tsp baking powder
2 cups milk
2 eggs
1 tsp vanilla extract
1 cup fresh blueberries
4 tbsp butter
powdered sugar
maple syrup

Cooking Tools
4 individual cast iron pans
Medium mixing bowl
Oven 


Directions
Preheat oven on broil for 425 Degrees F.  Place cast iron pans in the oven as it is heating. Whisk together Bisquick, milk, 2 eggs, vanilla extract. Remove heated cast iron pans and allow 1 tbsp butter to melt in each pan.  Pour batter in the heated pans halfway up the side.  Place 1/4 cup blueberries in the center.  Place back in the oven and allow to bake for 10-12 minutes. Dust with powdered sugar and drizzle with maple syrup before serving.

4-5 assorted Heirloom Tomatoes, quartered
8 basil leaves
extra virgin olive oil, drizzle
fresh ground salt
fresh ground pepper

Cooking Tools
Serving platter

Directions
Place cleaned and quartered tomatoes on a serving platter.  Tuck basil leaves in between slices of tomatoes.  Drizzle with olive oil and sprinkle with salt & pepper.

Garden Mac Salad

Garden Mac Salad
Goes Great With Anything You BBQ!
Difficulty: Easy
Prep Time: 2 hours, 30 minutes
Cooking Time: 20 minutes


Ingredients
1/2 box macaroni pasta
1 cup mayonnaise
1 carrot, small dice
2 celery stalks, sliced thin
1 cup onions, small dice
1/4 cup green onions, sliced
4 eggs, hard boiled, diced
1/2 cup frozen peas, thawed
1 tbsp vinegar
1 tsp super fine sugar
pinch smoked paprika
salt
pepper 
Cooking Tools
Medium mixing bowl
Small pot


Directions
Boil eggs, cool and peel.  Cook, drain and rinse pasta. In a mixing bowl, add cooked and cooled pasta, mayonnaise, vinegar, sugar and mix well.  Add in the rest of the ingredients and toss until well coated. Salt & Pepper to taste then chill for 2 hours.
Serves 4-6

Eggplant Parmesan With A Basil Gremolata

Eggplant Parmesan With A Basil Gremolata!

Serve With A Crusty Ciabatta Bread!

Ingredients
1 large eggplant, 1/2" slices
3-4 cups Panko breadcrumbs
32 oz. Marinara sauce
1/2 cup grated Parmesan cheese
8 oz. fresh Mozzarella cheese, sliced thin
vegetable oil for frying
minced parsley for garnish
3 eggs
salt
pepper
olive oil

Basil Gremolata
Ingredients
12 basil leaves
1 clove garlic, minced
1/4 tsp lemon zest
1 small shallot, minced
salt
Directions
Place ingredients in a food processor and mince.

Wooden skewers

Directions
Place eggplant standing up along the sidewalls of a colander.  Sprinkle eggplant with salt, this will bring out the moisture of the eggplant.  Leave in colander for about 45 minutes.  Wipe off moisture and salt from eggplant.  Create a dredging station, one for the whisked eggs and one for the Panko breadcrumbs, you can add some pepper to the breadcrumbs. Coat eggplant slices with the eggs and then through the Panko breadcrumbs and place in a skillet with preheated oil (350 Degrees F.) Fry 2-3 minutes on each side, careful not to burn the breadcrumbs.  Drain on a cooking rack to drain excess oil.  Preheat oven to 350 Degrees F. Assemble the Eggplant Parmesan, Use individual baking dishes. Layering sauce, fried eggplant, sprinkle of Parmesan cheese, Mozzarella cheese, then repeat to make 2 or 3 layers.  Top with Marinara sauce.  Use a skewer to hold the layers in place while it bakes for 30 minutes in the oven.  Remove from oven and remove skewers, garnish with Basil Gremolata, Parmesan cheese and minced parsley.  Drizzle with some olive oil.

Ingredients
Watermelon slices
1 cup water
1 cup sugar
10 mint leaves
1 tbsp mint leaves, chopped

Small sauce pan


Directions
In a small sauce pan on low heat, add; water, sugar and mint leaves.  simmer for 15 minutes to reduce liquid.  set aside in a glass container and cool, you can also refrigerate.  Pour Mint simple syrup over watermelon slices and garnish with chopped mint leaves.

Wahoo Mojo de Ajo

Wahoo Mojo de Ajo
Flavorful Fish With A Fantastic Sauce

Ingredients
4   8oz Wahoo, aka Ono
minced parsley or cilantro for garnish
1 cup grape tomatoes, diced

Marinade
3-4 garlic cloves, minced
1 orange, juiced
zest of 1 orange
2 limes, juiced
zest of 2 limes
1/4 tsp Spanish paprika
3 tbsp olive oil
salt
pepper 

Mojo de Ajo Sauce
1/2 cup clarified butter
3-4 cloves garlic, minced
2 limes, juiced
1 orange juiced
salt
pepper 

Wahoo Has The Same Texture Like Swordfish

Small sauce pan

Directions
Place the marinade ingredients into a zip lock bag, then add Wahoo filet.  Marinade Wahoo for 40 minutes.  Preheat grill to medium high and grill Wahoo 3 minutes on each side ( Discard marinade). Cook's Note: Wahoo has very little fat, be careful not to over cook .In a sauce pan, add ingredient of the Mojo de Ajo, and simmer on low for 4-5 minutes.  Place grilled fish on any starch side dish and pour a tbsp of sauce on top of fish.  Garnish with diced tomatoes and minced parsley or cilantro.

4 peaches, skin on, pitted, halved
1/2 cup Ricotta cheese
1/2 cup Mascarpone cheese
1/2 cup powdered sugar
fresh nutmeg

Directions
Place peaches cut side down on preheated grill.  grill for 1-2 minutes.  Remove from gril and remove outside skin, which will come off easy, let peaches cool. In a small mixing bowl, add; Ricotta, Mascarpone, powdered sugar and fresh grated nutmeg (just a pinch). Mix well and dollop over cooled grilled peaches.

Homemade Tater Tots

Ingredients
4 large golden potatoes, peeled
2 tbsp soy sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1 egg
vegetable oil for frying



Cooking Tools
Box grater
Mixing bowl
Large pot
Medium deep frying pan
Sheet pan
Small ice cream scoop 


Directions
In a large pot filled with enough water to cover potatoes. Place potatoes in the pot and bring to a boil. Allow potatoes to boil for  minutes and turn off heat and allow potatoes to sit in the hot water for 1 hour.  Remove potatoes from water, dry off excess moisture.  Grate potatoes on a box grater. Cook's Note: The potatoes will not be fully cooked, which allows for better grating. Place shredded potatoes in a mixing bowl, add; soy sauce, egg, garlic powder, onion powder, black pepper and mix well. Using a ice scream scoop, create uniformed balls.  Preheat oil in a frying pan to 350 Degrees F.  Place 4-5 balls at a time in the hot oil and fry for 3-4 minutes, drain onto a paper towel lined plate, just to drain off excess oil.  Fry in batches and serve hot.

Pan Fried Wreck Fish

Pan Fried Wreck Fish

Ingredients
2 filet Wreck fish, skin removed, de-boned
1 cup flour
1 tsp garlic powder
1 tsp onion powder
1 tbsp parsley, minced
1/2 stick butter
vegetable oil
salt
pepper
Cooking Tools
Shallow frying pan
Medium mixing bowl



Directions
Preheat oil on medium high in pan at least 1/4 of the way up of oil.  Allow butter to melt in the hot oil. In a mixing bowl, mix flour, onion and garlic powder.  Salt and pepper fish on both side and dredge fish on all sides in the seasoned flour.  Shake off excess flour and fry into the heated oil 2-3 minutes on each side depending on the thickness. Remove fish and drain excess oil and garnish with parsley.  Serve with smashed potatoes or rice.

12 slices Prosciutto
Honey Dew Melon, sliced and skin removed
1 tsp parsley, minced
lemon infused olive oil, drizzle

Sharp knife
Directions
Wrap Prosciutto slices around sliced and peeled melon.  Drizzle with olive oil and garnish with minced parsley.
Serves 4
