Blueberry Bundt Pancake

Blueberry Bundt Pancake
When You Have To Make Pancakes For A Crowd!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 40-45 minutes


Ingredients
3 cups Bisquick mix
1 1/2 cups milk
3 cups fresh blueberries
1 tsp vanilla extract
1 stick butter, melted
1/2 cup sugar
3 eggs
maple syrup
cooking spray
Cooking Tools
Bundt pan
Medium mixing bowl

Directions
Preheat oven to 350 Degrees F. In a mixing bowl, add; Bisquick mix and milk and whisk. Whisk in eggs, vanilla, sugar, melted butter. Fold in 1 cup of the blueberries into the batter. Spray cooking spray into the bundt pan.  Pour 2 cups of fresh berries into the bottom of the pan.  Pour batter over blueberries and bake in oven for 40-45 minutes.
Once done, remove from oven and invert onto a serving platter.  Serve hot with maple syrup.

Jalapeno & Cheddar Boule

Jalapeno & Cheddar Boule 
Just A Hint Of Heat And Tang Of Cheddar!
Difficulty: Easy
Prep Time: 2 hours
Cooking Time: 45 minutes

Ingredients
2 1/4 cup flour + dusting
1 1/2 packets of fast active yeast
1 cup finely shredded cheddar cheese
1/2 cup jarred jalapeno slices, drained
1 cup warm water
1 tsp sugar
1/2 tsp salt
cooking spray

Cooking Tools
Medium mixing bowl
Parchment lined sheet pan 



Directions
Activate yeast in 1 cup of warm water and sugar in a mixing bowl and let set aside for 15 minutes until bubbly with yeast activation. Pour in flour into yeast and mix, it will be sticky.  Place dough on a floured surface and knead dough ball and start adding the cheddar cheese and jalapeno slices and continue to knead for 5 minutes, use as much flour to create a smooth and not sticky dough. Clean bowl and coat with cooking spray and place dough in the bowl and cover with a towel and place in a warm location for 1 hour. Punch dough down and place on a parchment lined baking sheet and shape the loaf and allow to rise again for 45 minutes. Preheat oven to 425 Degrees F and bake for 45 minutes.
Yields 1 loaf

Japanese Jiggly Cheesecake

Japanese Jiggly Cheesecake

Difficulty: Moderate
Prep Time: 45 minutes
Cooking Time: 1 hour 55 minutes
Chilling Time: 5-6 hours



Ingredients
8 oz. cream cheese
1 stick unsalted butter
13 egg whites
6 egg yolks
1/2 cup whole milk
1 1/4 cup sugar
1/4 cup flour
1/4 cup corn starch
2 tsp vanilla extract
powdered sugar for dusting
1 tsp cream of tarter
cooking spray
hot water
Cooking Tools
Ring form release pan
Parchment paper
Tin foil
1 small mixing bowl
1 medium mixing bowl
1 large mixing bowl
Large round cake pan
Flour sifter
Stand mixer or electric hand mixer
1 small saucepan
Rubber spatula



Directions
Prepare ring form pan, 1st wrap foil around the bottom and side with several layers of foil so water does not penetrate your cake. Cut parchment to line the bottom of the pan and up the sides of the pan, at least a couple of inches higher then the top of rim. Spray cooking spray bottom and sides before placing the parchment to help it stick to the bottom and sides.
Preheat oven to 320 Degrees F.  In a saucepan, melt cream cheese, butter, vanilla and milk.  Whisk ingredients on low heat until smooth; remove from heat to cool. In a small mixing bowl, sift in flour and corn starch, set aside. Place 6 egg yolks into a medium mixing bowl. Once cream cheese mixture is completely cooled, whisk the cream cheese into the egg yolks until smooth. Whisk in the sifted flour/cornstarch into the cream cheese/ egg yolk mixture until silky smooth, set aside.  In a large mixing bowl/Stand mixer, use electric hand mixer, add egg whites and cream of tarter and whisk on high until almost stiff peaks form. Slowly add sugar to the fluffy egg whites while still whisking on high until the sugar is mixed in and the peaks are stiff. Fold in with a rubber spatula the egg yolk, cream cheese mixture into the egg whites.  Fold in small amounts at a time until batter is completely blended ( making sure not to have yellow or white streaks throughout the batter). Pour the batter into the prepare baking dish. Place Ring form into another larger baking pan with hot water. Bake in oven for 25 minutes, then reduced heat to 280 Degrees F  and continue to bake for 1 hour, 30 minutes. ( Do Not Open The Oven!) Remove cake from oven and remove from water, let cool for 5 minutes before releasing the ring and removing the ring and parchment from the sides of the cake. Place on a serving dish and dust with powdered sugar.  Can be served warm or you can chill for 5-6 hours in the refrigerator.
Yields 1 cake

Warm Winter Salad

Warm Winter Salad
Not All Salads Are Equal, This Is One Of My Favorites!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: No cooking required


Ingredients
4 cups baby spinach leaves
1 cup roasted red beets, diced
1 small shallot, sliced thin
4 pitted dates, sliced
herb goat cheese, chunks
1/4 cup honey roasted walnuts
1 small apple, sliced thin
Marzetti poppy seed dressing, warmed https://marzetti.com/products/poppyseed-salad-dressing/

Cooking Tools
Medium mixing bowl

Directions
Dress spinach leaves with warm (not hot, or the spinach will wilt) Poppy seed dressing in a mixing bowl right before serving. Place dressed spinach in serving bowls and layer the rest of the ingredients on top.
Serves 2 

Warming up salad dressing adds another flavor profile to your salad!

Mile High Blueberry Pie

Mile High Blueberry Pie
Combination Of Fresh And Cooked Blueberries!
Difficulty: Easy
Prep Time: 30 minutes

Chilling Time: 4+ hours


Ingredients
Pillsbury ready made rolled pie dough
3 lbs fresh blueberries
1 1/2 cup super fine sugar
1/2 cup cornstarch
1 tbsp vanilla extract
zest of 1 lemon
1 tbsp fresh lemon juice
whipped cream
Cooking Tools
Pie pan
Stock pot
Large mixing bowl
Blind baking beads

Directions
Preheat oven 350 Degrees F. Blind bake pie dough for 30 minutes until done.  Use baking beads so the center does not puff up.  In a stock pot, add; 1/2 of the blueberries, sugar, cornstarch, sugar, vanilla extract and lemon juice and mix over medium high heat until blueberries cooks and thickens. Remove from heat and chill until completely cooled and very thick. Fold in the rest of the fresh berries and lemon zest and place in cooled pie shell and chill pie. Serve pie with whipped cream.
Yields 1 pie


 

Ham & Cranberry Sliders

Ingredients
Smithfield Maple Glazed Ham slices
6-8 Kings Hawaiian buns
1/4 cup leftover cranberry sauce
1/2 cup shredded cheddar cheese
1 egg
1/2 cup milk
1/4 tsp maple pumpkin spice
2 tbsp butter, melted
2 tbsp maple syrup

Cooking Tools
Baking dish
Small mixing bowl
Pastry brush 


Directions
Preheat oven to 350 Degrees F. Use some of the melted butter to grease bottom of baking dish. Slice bread in half and place bottom half in prepared baking dish. Whisk together egg, milk and spice in a small mixing bowl and then pour evenly over bread. Layer ham slices, then cranberry sauce, then top with shredded cheddar cheese evenly. Then place top half of bread on top. Brush rest of melted butter and maple syrup on top of buns.  Bake in oven for 30-35 minutes. Let rest for 15 minutes before slicing and serving.

Ingredients
Brioche bread, sliced 3/4-1 inch slices
1/2 jar Biscoff Cookie Butter https://www.shopbiscoff.com/biscoff-cookie-butter
1 cup semi-sweet chocolate chips + topping
4 eggs
3/4 cup milk
2 tbsp sugar
1/2 tsp cinnamon
1 tbsp melted butter
powdered sugar

Cooking Tool
Bread loaf pan
Shallow mixing bowl 


Directions
Preheat oven 350 Degrees F. Between 2 slices of Brioche, spread cookie butter and sprinkle with chocolate chip evenly, creating a sandwich. Make 5 sandwiches then whisk together eggs, milk, sugar and cinnamon in a whisking bowl. Prepare loaf pan by greasing all sides with the melted butter. Dip each sandwich on all sides in the egg mixture an place each sandwich upright next to each other. Pour any egg mixture left on top of the bread. let the bread soak up the mixture for 15 minutes before placing in oven.  Bake in oven for 45 minutes, let cool before taking the loaf out on a serving platter.  garnish with powdered sugar and chocolate chips.
Yields 1 loaf

Bahamian Coconut Banana Toast

Bahamian Coconut Banana Toast
With A Heavenly Caramel Sauce!

Ingredients

3-4 bananas, sliced
1 cup sugar
3/4 cup heavy cream
butter for greasing

Cooking Tools
Medium skillet/ frying pan
Small sauce pan

Directions
Toast sliced bread with some butter in a frying pan, toast golden brown on both sides.
Place sugar in a saucepan on low heat and melt to a golden brown, then whisk in heavy cream to create a caramel sauce.  Toss bananas in the caramel sauce and Pour over each toasted bread evenly and dollop with Sweet Ricotta Cream (recipe below) right before serving.



Sweet Ricotta Cream
Ingredients
1 cup Ricotta cheese
1/2 cup whipped cream cheese
1/2 cup powdered sugar
pinch grated nutmeg
1 tbsp rum (optional)

 Directions
Whisk ingredients until creamy, refrigerate a few hours before serving.

2 Granny Smith Apples, peeled & sliced thin
1 3/4 cup flour
1/4 cup dry quick cook oatmeal
1 1/4 stick butter, diced
1 cup sugar
1 tsp vanilla extract
pinch of nutmeg
3/4 cup Dulce De Leche
whip cream or ice cream (optional)





Cooking Tools
10 baking paper cups

Directions
Preheat oven to 350 Degrees F.  In a large mixing bowl; combine, flour, oats, sugar & butter.  Using a pastry cuter to cut in butter to create small pebbles then use your hand to create crumbles by squeezing the flour and butter together. In a small bowl use a mandolin to slice apples thin. Add in nutmeg and vanilla extract and toss to coat apples. Place cups on sheet pan and place some of the flour mixture to the bottom of each baking cup, add some apple slices up half way.  Place 2 tsp of Dulce De Leche on top of apples. Top off each cup with the rest of the flour mixture. ( you can go above the baking cup, as the apples cook, it will sink down. Place in oven and cook for 30-40 minutes.  Let cool before serving, can be removed from cup or eat it right from the baking cup.  Can be served with whip cream or ice cream.

Mini Blueberry Pop Tarts

Mini Blueberry Pop Tarts

Ingredients
Refrigerated Pillsbury Pie Rolls
1 cup fresh blueberries
1/2 cup sugar
1 egg
2 tbsp water

Cooking Tools
Parchment paper
Sheet pan
Cookie cutouts
Pastry brush 

Directions
Preheat oven to 350 Degrees F. Roll out pie dough and cut 2 squares ( whatever shape you desire) per pop tart. Place some blueberries in center, sprinkle with a tsp. of sugar making sure to leave an edge to seal and press the top piece. Whisk together egg and water to create a egg wash.  Use a pastry brush and brush egg wash around the entire edge and place the second crust on top and seal with fork prongs. Brush each Pop Tart with some additional egg wash to create a golden crust. Place on parchment lined sheet pan and bake in oven for 30 minutes.  Let cool before serving.

Ingredients
2 large ripe bananas, smashed
1 cup plain yogurt
2 eggs
3/4 cup maple syrup 
2 tsp baking powder
2 tsp cinnamon
1 tbsp vanilla extract
1 cup milk
3 cups quick cook oatmeal + topping
1/2 tsp salt
1/2 cup blueberries

Cooking Tools
Muffin tin
Muffin liners
Medium mixing bowl 

Directions
Preheat oven to 350 Degrees F. In a mixing bowl, whisk together; bananas,yogurt, eggs, maple syrup, cinnamon, baking powder, vanilla extract, milk, salt & oatmeal. Place muffin liners in muffin tin.  Pour batter into each muffin liner 3/4 full. Place 4-5 blueberries on top and sprinkle some dry oatmeal on top of each muffin and bake in oven for 35-40 minutes.
Yields 6 large or 8 medium or 12 small

Orecchiette Pasta With Sweet Potato & Swiss Chard

Orecchiette Pasta With Sweet Potato & Swiss Chard
Drizzle Of Fragrant Parsley Oil!
Difficulty: Easy
Prep Time: 40 minutes
Cooking Time: 25 minutes


Ingredients
1 box Orecchiette pasta
1 sweet potato, peeled & cubed
1 bunch Swiss Chard, chopped, no thick stems
1/4 cup roasted pumpkin seeds
1/2 cup olive oil
1/2 stick butter
pinch of red pepper flakes
2 clove garlic, pressed paste
Parmesan Cheese shavings
salt
pepper

Cooking Tools
Large stock pot
Nonstick skillet/frying pan


Directions
Cook pasta in boiling salted water according to box directions, drain & set aside.  Cook cubed sweet potatoes with some olive oil, salt & pepper until tender but not mushy.Do the same with the Swiss Chard & garlic and set aside in a warm location until pasta is done. Once pasta is drained, place in frying pan with olive oil, butter, red pepper flakes, salt & pepper, Toss in cooked sweet potato and Swiss Chard, toss lightly. Place pasta on serving plate and sprinkle with some pumpkin seeds, Parmesan cheese shavings an drizzle with Parsley oil (recipe below) and Balsamic vinegar.
Serves 4

Parsley Oil
Ingredients
1 tbsp minced parsley
1/4 cup olive oil
1/2 grilled lemon juice (optional)
pinch salt
pinch of sugar
1 tbsp white wine vinegar
Balsamic vinegar 

Cooking Tools
Mixing Bowl 

Directions
Whisk all ingredients except Balsamic in a mixing bowl, let set for and hour in room temperature, drizzle on pasta and dollop with some Balsamic vinegar.

Chicken & Noodles

Chicken & Noodles
This Is A Cross Between A Stew And A Soup!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 45 minutes

Ingredients
4 cups Rotisserie chicken, pulled
1 bag Kluski egg noodles https://www.mrsweiss.com/en-us/products/3466/KluskiEggNoodles.aspx
6-7 cups chicken broth
3 carrots, cubed
2 celery stalks, diced
1 onion, diced
1 cup frozen yellow corn
1 garlic clove, minced
2 tbsp green onions, chopped
1/2 tsp dried thyme leaves
minced parsley for garnish
1 heaping tbsp corn starch
salt
pepper

Cooking Tools
Stock pot 

Directions
Heat chicken stock in pot, add; carrots, celery, onions and cook on a simmer until slightly tender. Add in chicken, noodles and cook until noodles are almost done ( approx. 20 minutes). Add in corn, garlic, thyme, green onions, salt and pepper. Cook until noodles are done. The last five minutes, create a slurry with the cornstarch and 1/2 cup of water, then add to the Chicken & Noodles to thicken. Garnish with minced parsley.

Chocolate Pear Cake

Chocolate Pear Cake
A Box Cake Mix Can Be Elevated To Something Elegant!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 50-60 minutes



Ingredients
Betty Crocker Dark Chocolate Cake Mix
3-4 whole pears, peeled, stem on
1 cup milk
3/4 cup softened butter
1/4 cup vegetable oil + greasing
2 tsp almond extract
3 eggs
confectioners sugar for dusting

Cooking Tools
Nonstick loaf pan
Parchment paper
Medium mixing bowl 

Directions
Preheat oven 350 Degrees F.  Whisk together dry and liquid ingredients until well blended. Grease loaf pan and line the long side of pan with parchment paper allowing for some overhang (this allows for easier lifting of the cake out of the pan). Pour some batter to line bottom of pan.  Place 3-4 pears in the center of the bake pan allowing for space in between. Pour the batter slowly and evenly around the pears. Bake in oven for 50-60 minutes, insert toothpick to see if it comes out clean. Remove from oven and let rest in pan for 15 minutes before removing.
Yields 1 loaf

Roasted Red Pepper Hummus

Roasted Red Pepper Hummus
Serve With Some Warm Pita Or Naan Bread!

Ingredients
15 oz. can Garbanzo beans, drained
1 whole roasted red pepper (jarred),chopped
2 tbsp Tahini (sesame paste)
1/2 cup olive oil
1/4 tsp smoked paprika
1/4 tsp Harrisa powder
2 cloves garlic, finely mince
juice of 1/2 lemon
salt
pepper

Cooking Tools
Food processor

Directions
Place all ingredients in food processor and puree until smooth, you can reserve some beans and chopped pepper for garnish.  Adjust seasoning to suit your taste. Drizzle with olive oil, serve with pita or Naan bread.

Cheddar Cheese Puffs

Cheddar Cheese Puffs
Light, Crispy & Cheesy! 
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 30-35 minutes

Ingredients
1 box puff pastry dough (frozen)
2 cups cheddar cheese, shredded
1 cup Parmesan cheese, grated
1 tsp garlic powder
1/2 tsp onion powder
1 tsp dried oregano
olive oil
salt
pepper

Cooking Tools
Sheet pan
Small mixing bowl
Popover baking pan
Pastry brush


Directions
Preheat oven to 400 Degrees F. Thaw and unfold pastry sheets (2). In a mixing bowl, add; cheddar, Parmesan, garlic powder, onion powder, oregano, salt & pepper. Toss ingredients and spread an even layer of the cheese mixture between the two sheets. Roll loosely from end to the other, seal the edge with a tiny bit of water. Cut each role into 3 logs. Drizzle inside each popover tin and using a pastry brush, spread oil up the sides. Place each third into the pan, not to press down too much. Drizzle a small amount of oil on top of each roll and sprinkle some Parmesan cheese.  Bake in oven for 30-35 minutes.
