Airline Chicken

Airline Chicken
Served With A Sausage Potato Hash!
Difficulty: Easy
Prep Time: 4 hours, 15 minutes
Cooking Time: 30 minutes +


Ingredients
6 Airline cut chicken breast, skin on  https://en.wikipedia.org/wiki/Airline_chicken
1 bottle Zesty Italian dressing
2 cloves garlic, pressed
juice of 1 lemon
juice of 1 orange
1 tbsp sugar
1/4 tsp pepper

Cooking Tools
Large mixing bowl
Grill


Directions
Whisk together; dressing, garlic, lemon juice, orange juice, sugar and pepper. Place Airline chicken in mixing bowl to marinade for 3 hours in the refrigerator. Remove from
marinade and let come to room temperature for 1 hour. Preheat grill and grill chicken on medium high heat. First grill skin side up with the small drumstick straight up. Flip once, approx. total cooking time is about 30 minutes, depending on the thickness of the chicken. Adjust the cooking time accordingly.

Fig Preserve Cake With A Buttermilk Glaze
Gluten Free Does Not Have To Be Boring!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 60-75 minutes

Ingredients
1 1/2 cups sugar
1 cup gluten free flour
1/2 cup coconut flour
1/2 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp ground nutmeg
1 tsp cinnamon
1 tsp ground allspice
1 tsp ground cloves
1/2 tsp ground ginger
3 eggs
1 cup vegetable oil
1/4 cup butter, melted
1 cup buttermilk
1 tbsp vanilla
1 (11.5 oz.) jar fig preserve
1/2 cup chopped pecans

Cooking Tools
Large mixing bowl
Bundt pan


Directions
Preheat oven to 350 Degrees F.  Combine dry ingredients in a mixing bowl, add; oil, eggs & melted butter, mixing well. Add in buttermilk, vanilla, Fig preserve and pecans.  Pour batter into a greased & floured Bundt pan. Bake for 1 hour to 1 hour 15 minutes.  let cool for 15 minutes before removing from pan. Drizzle warm Buttermilk glaze on top before serving.

Buttermilk Glaze
Ingredients
1/4 cup Buttermilk
1/2 cup sugar
1/4 tsp
1 1/2 tsp cornstarch
1/4 cup butter
1 1/2 tsp vanilla bean extract


Cooking Tools
Small saucepan



Directions
Combine ingredients into a saucepan and bring to a boil and remove from heat. Whisk until smooth. 

Pimento Potato Poppers

Pimento Potato Poppers
A Southern Twist!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 20 minutes


Ingredients
2 cup leftover cooked mashed potatoes (cold)
1/2 cup Vidalia onions, small dice
2 cloves garlic, pressed
1/2 cup green, red or yellow peppers, small dice
1/2 cup Pimento cheese spread
2 tbsp butter
1 cup flour
1 cup Panko bread crumbs
2 eggs, whisked
vegetable oil
salt
pepper 

Cooking Tools
3 bowls
Deep fry pan
Medium mixing Bowl
Small skillet 

Directions
In a skillet, melt butter and saute onions, peppers and garlic until tender. In a mixing bowl, mix mashed potatoes, the sauteed vegetables with the butter and Pimento cheese and blend well. Make small potato balls.  Make a dredging station with bowl: flour, whisked eggs and Panko. Dip each ball into flour, then eggs, then Panko.  Heat oil to 350 Degrees F. Fry each ball until golden brown.

Japanese Rolled Omelet

Difficulty: Easy
Prep Time: 10 minutes
Cooking Time: 10 minutes



Ingredients
3 eggs
1 tbsp water
2 tbsp Mirin
1 tbsp green onions, chopped
pinch of Dashi granules
vegetable oil
salt

Cooking Tools
Tamagoyaki pan or nonstick frying pan
Small mixing bowl 


Directions
Whisk together all the ingredients except oil. Pour small amount of oil in the pan on low heat. Pour in a 1/3 of the eggs in the pan, spread the egg mixture thin, as it firms, roll the omelet from one end to the other. Pour another third on the opposite side of the rolled omelet. As the egg mixture cooks, continue to roll the omelet back, repeat until egg mixture is gone. Cut and serve omelet.
