Syllabub With Fresh Raspberries

Syllabub With Fresh Raspberries
Simply Delicious Dessert From England!
Difficulty: Easy
Prep Time: 1 hour, 15 minutes
Cooking Time: No cooking required


Ingredients
1/2 cup Amontillado Sherry
1/2 cup superfine sugar
1 tsp vanilla extract
2 lemon peels
pinch of salt
1 1/4 cup heavy cream
fresh raspberries
mint leaves for garnish

Cooking Tools
Medium mixing bowl
Electric hand mixer
Piping bag (optional) 



Directions
Whisk, sherry, sugar, vanilla extract, salt and lemon peel.  Place mixture into the refrigerator for 1 hour.  Remove lemons peels and pour heavy cream into the sherry mixture and whip with the mixer until peaks form. Do not let it turn into butter. Spoon into piping bag or dollop into a dessert bowl and dress with fresh raspberries and garnish with mint leaves.
Serves 4

Japanese Fluffy Pancakes

Japanese Fluffy Pancakes
This Will Be A Hit At You Breakfast Table!
Difficulty: Moderate
Prep Time: 20 minutes
Cooking Time: 15 minutes




Ingredients
3/4 cup pancake mix
2 egg yolks
4 egg whites
1/4 cup super fine sugar
1/2 cup milk
1/2 tsp vanilla bean extract
Pam cooking spray
confectioners sugar for dusting
fresh raspberries
maple syrup

Cooking Tools
Large non stick Frying pan with Dome lid
2  3" inch ring mold
2 medium mixing bowl
Electric hand mixer


Directions
In one bowl, add; pancake mix, egg yolk, sugar, milk and vanilla extract and mix well.  In a separate bowl, whisk egg white on high with a electric mixer until stiff peaks.  Fold in egg whites into the pancake mixture until blended, gently fold not to deflate the batter. Heat pan on low, spray interior of rings and pour batter 3/4 the way up. Place lid on the fry pan and cook approx. 10 minutes. Carefully using a spatula or tongs, flip the rings intact and place lid back on the pan and cook a additional 5 minutes.  Cook in batches.  Release pancakes from ring and serve with a dusting of confectioners sugar and fresh raspberries, pour syrup.
Yields 4 pancakes


Spinach Ricotta Flatbread

Spinach Ricotta Flatbread
Grilling Is Not Always For Meat!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 5-7 minutes


Ingredients
store purchased pizza dough
1 cup Ricotta cheese
1/2 cup Spinach dip
1 clove garlic, grated
1/4 cup Parmesan cheese, grated
1/2 cup Gouda cheese, shredded
1/4 cup Pignoli nuts
fresh basil leaves
olive oil
salt
pepper


Cooking Tools
Outdoor grill
Small mixing bowl 

Directions
Preheat outdoor grill on high.  Mix Ricotta cheese, spinach dip and grated garlic and blend.  Prepare raw pizza dough into your preferred shape and lightly coat one side with olive oil. Place oiled side dough onto the preheated grill and grill for 3 minutes then flip.  As the dough is grilling on the other side, start spreading Ricotta spinach mixture evenly on top of dough. then add Parmesan cheese, Gouda cheese, Pignoli, basil leaves, drizzle some olive oil and salt & pepper.  Close lid and reduce heat to medium and grill for 4 minutes until dough is fully cooked.

Crab Corn Bisque

Crab Corn Bisque
Creamy Delicious Bowl Of Goodness!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 20-25 minutes

Ingredients
2 cups lump crab meat
1/2 lb. shrimp, deveined, chopped
2 fresh corn on the cob, kernels removed
4 cups lobster/ seafood stock
1/2 cup white wine
2 cups half & half
1 cup onions, diced
2 cloves garlic, minced
1/2 tsp Old Bay Seasoning
4 tbsp butter, divided
1 heaping tbsp flour
minced parsley for garnish
salt
pepper 

Cooking Tools
Large stock pot
Blender 


Directions
Heat 2 tbsp butter on medium heat and saute onions, garlic and half of the corn kernels.  Pour in the lobster/seafood stock and half & half & seasonings. Simmer to cook onions until tender. Pour liquid mixture into a blender in batches and puree until smooth.  In the same pot, melt the rest of the butter and whisk in flour until smooth. Add back in the blended stock and allow the bisque to thicken slightly.  Add in the rest of the corn, shrimp and crab and simmer for 8 minutes or until shrimp is cooked. Adjust seasoning to suit taste. Garnish bowl of soup with minced parsley.
Serves 4

Bacon & Egg Puffs

Bacon & Egg Puffs
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 25 minutes


Ingredients
2 puff pastry sheets
4 slices bacon, cooked
2 eggs
1 tsp minced parsley
1 tbsp Parmesan cheese
olive oil
salt
pepper

Cooking Tools
2 small round bottom release pans
Small fry pan
Sheet tray 


Directions
Preheat oven 400 Degrees F.  Cut pastry in a round circle, double the size of the bottom release pan.  Cook bacon half way and set aside.  Place puff pastry dough in the pan and fold pleats.  Do not over hang the pan. Line inner circle with bacon and crack one egg into each pan. Sprinkle with Parmesan cheese, salt & pepper and drizzle with olive oil.  Bake in oven for 25 minutes.  Release pan and remove Puffs and garnish with minced parsley.

1 shot symple syrup
2 slices kumquat

15 kumquats, sliced into rings
2 cups Bombay Gin

Directions
In a mixer, add; ice, Kumquat gin, Vermouth and simple syrup. Shake and pour into Martini glass and garnish with sliced Kumquats from the mason jar.

Ingredients
2 lbs ground Turkey/7% fat
1 cup onions, diced
3/4 cup roasted red pepper, diced
2 garlic cloves, minced
1/2 cup green pepper, diced
1/2 cup Ranch dressing
1/4 cup ketchup
3/4 cup Panko bread crumbs
1/4 cup olive oil
1/2 tsp onion powder
1 egg
salt
pepper

Ranch Sauce
Ingredients
1/2 cup Ranch dressing
1/2 cup heavy cream
1 tsp butter
2 tbsp cream cheese
salt
pepper

Bread loaf
Large mixing bowl
Small saucepan


Directions
Preheat oven to 350 degrees F.  In a large mixing bowl, place all the ingredients for the meatloaf and mix very well.  Place meat mixture in a loaf pan and shape.  Bake in oven for 1 hour- 1 hour and 15 minutes.  In a small saucepan, heat all the ingredients for the Ranch Sauce until a simmer and bubbly.  Remove Turkey Meatloaf and cool slightly before removing from the loaf pan onto serving platter. Pour hot Ranch sauce on top before serving.

Country Fried Pork Chops & Grits

Country Fried Pork Chops & Grits

Ingredients
6 boneless pork chops/cutlets
3 cups Panko bread crumbs
1 cup flour
3 eggs, whisked
1 tsp garlic powder
1 tsp onion powder
vegetable oil
2 cups grits
1 tbsp green onions, sliced
butter
salt
pepper

Cooking Tools
Deep skillet/ Cast iron pan
Medium skillet
Medium pot with lid
3 large shallow plates (dredging)
Meat mallet 
Directions
Pound each pork cutlet on both side until thin. Create a dredging station with the plates, one for whisked eggs, flour and Panko. Season pork cutlet evenly with garlic powder, onion powder, salt & Pepper. Dredge cutlets in flour first, then the eggs and coat with Panko. Place vegetable oil inside deep skillet/ cast iron pan, 2 inches deep. Heat to 350 Degrees F.  Fry pork cutlets 4-5 minutes on each side. Drain pork cutlets on paper towels to drain off excess oil. Repeat with other cutlets.  Cook grits according to directions. Place cutlet on cooked grits and top with Black Eye Pea Gravy and garnish with sliced green onions.
Serves 4 


Black Eye Pea Gravy
Ingredients
1 can black eye peas, rinsed & drained
1 heaping tbsp flour
4 tbsp butter
1/2 tsp garlic powder
1/2 tsp onion powder
1 1/2 cups milk
1/2 heavy cream
1/2 chicken broth
salt
pepper

Directions
In a skillet, melt butter on medium low heat and whisk in flour and cook for 2 minutes, careful not to burn or turn brown. whisk in the milk, cream and broth until it thickens. Add in peas and seasonings and cook on low for 5 minutes.

Chicken Lasagna Roll-Ups

Chicken Lasagna Roll-Ups

Ingredients
8 Lasagna noodles
2 cups cooked chicken, diced
1/2 cup onions, diced
2 garlic cloves, minced
1 cup carrots, diced
1 cup zuccini, diced
1 cup asparagus, diced
2 cups Ricotta cheese
1/4 grated Parmesan cheese
3 tbsp olive oil
minced parsley
1 egg yolk
salt
pepper

Cooking Tools
Medium skillet
Baking dish
Large Pot
Medium pot

Directions
Preheat oven 350 Degrees F. Cook lasagna noodles according to directions. Wipe off any moisture before spreading ingredients.  Heat olive oil and saute vegetable and garlic until slightly tender then add cooked chicken, salt and pepper to taste and set aside. Mix Ricotta, egg yolk and grated Parmesan cheese. Spread cheese mixture evenly among each cooked lasagna noodles.  Evenly layer sauteed vegetables & chicken on the cheese layer and roll.  Place each roll in a baking sheet and top with the Bechamel sauce and bake in the oven for 40 minutes. garnish with minced parsley.

Bechamel Sauce
Ingredients
1 stick butter
2 tbsp flour
2 cups of milk
salt
grated Parmesan cheese for topping

Directions
Melt butter in a pot on medium low heat, do not brown the butter.  whisk in flour and cook for additional 2 minutes. Pour in the milk and whisk until the flour dissolves into the milk, raise cooking temperature to medium and continue to whisk until the milk thickens. Salt to taste.

frozen bread dough, thawed
3 tbsp butter, melted
3 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp dried oregano
dried parsley flakes
salt
pepper

Small baking dish
Pastry brush

Directions
Preheat oven to 350 Degrees F.  Make 8 elongated strips of 6" inches long ropes.  Tie each rope in a knot a tuck any over hang underneath the not.  Place each not in a greased baking dish.  Mix melted butter, olive oil, garlic powder, oregano, parsley flakes, salt and pepper. Coat each knot with the butter mixture with the pastry brush and bake in oven for 45 minutes.
