Bacon & Egg Puffs

Ingredients2 puff pastry sheets4 slices bacon, cooked2 eggs1 tsp minced parsley1 tbsp Parmesan cheeseolive oilsaltpepper
Cooking Tools2 small round bottom release pansSmall fry panSheet tray
Directions
Preheat oven 400 Degrees F. Cut pastry in a round circle, double the size of the bottom release pan. Cook bacon half way and set aside. Place puff pastry dough in the pan and fold pleats. Do not over hang the pan. Line inner circle with bacon and crack one egg into each pan. Sprinkle with Parmesan cheese, salt & pepper and drizzle with olive oil. Bake in oven for 25 minutes. Release pan and remove Puffs and garnish with minced parsley.
