Apple Dumplings

Apple Dumplings
Recipe Inspired From Pioneer Woman, Food Network
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 45 minutes



Ingredients
2 Pillsbury croissant rolls (in tube)
2 Granny Smith apples, peeled, cut into 8ths
1 1/4 stick butter
1 cup sugar
1/2 tsp vanilla extract
pinch of cinnamon
3 oz. lemon lime soda

Cooking Tools
Baking dish
Small pot 


Directions
Preheat oven to 350 Degrees F.  Melt butter in a small pot on low heat, add; sugar, cinnamon and vanilla. Remove from heat. Remove croissant from tubes, wrap each triangle around each apple slice, starting from the wide end then roll to the narrow end. Line in baking dish and pour sugar mixture evenly on top of apples.  Pour soda evenly between the apples and bake in oven for 45 minutes.  Remove from oven to let cool and to allow the juices to re-absorb back into the dumplings.
Serves 4-6

Fast Food Chain Redo, But Better!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 3 hours



Ingredients
1 slab baby back ribs
1/4 cup brown sugar
1 tsp chili powder
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cinnamon
1 tsp onion powder
BBQ sauce
sesame seed buns

Cooking Tools
Foil
Sheet pan 


Directions
Preheat oven to 325 degrees F. Evenly coat ribs with brown sugar, chili powder, garlic powder, salt, pepper, cinnamon, onion powder.  Wrap ribs in foil tightly.  Place on sheet pan and bake for 2 1/2 hours.  Remove ribs from oven and open foil.  Remove each rib bone out without tearing the meat.  Discard the rib bones and baste the rib meat with the BBQ sauce front and back and place back in the oven for 30 more minutes with the foil left open.  Slice the rib meat to fit size of bun.

Ice Cream Cake Parfait

Ice Cream Cake Parfait
Create a Second Dessert With Leftover Cake!
Difficulty: Easy
Prep Time: 15 minutes
Cook Time: 10 minutes


Ingredients
leftover chocolate cake, small cubes
chocolate chip ice cream
3/4 cup heavy cream
2 cups semi-sweet chocolate chips
1 tsp butter
whipped cream (optional)

Cooking Tools
Bain Marie 


Directions
In a Bain Marie add water to the bottom half and place the top half on top and place on berner on medium high heat.  whisk together chocolate chip and heavy cream until melted into a thick creamy chocolate sauce.  Add in a pat of butter and whisk until melted, this will make the sauce nice and glossy.  In a serving glass or bowl, add; cubed chocolate cake, ice cream scoops, then top with chocolate ganache, then add a second layer. top with whip cream (optional).

Tomato Toast

Tomato Toast

Ingredients
French baguette
small tomatoes on vine
olive oil
Balsamic vinegar
salt
pepper

Cooking Tools
Sheet pan 


Directions
Preheat oven to 350 Degree F.  Place tomatoes on a sheet pan and drizzle with olive oil, salt & pepper.  Bake in oven for 10-15 minutes.  Spread roasted tomato on a slice of bread, splash with some Balsamic vinegar (optional).
Serves 2 


Snapper Romesco

Snapper Romesco
The Romesco Sauce Is Heavenly!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 35 minutes

Served Over A Potato Galette!

Ingredients
2 Snapper filet
1 large roasted red bell pepper from a jar
2 garlic clove, smashed
1/2 cup slivered almonds, toasted
1/4 cup hazelnuts
1/2 cup roasted tomato purée
2 tbsp flat-leaf parsley, chopped
2 tbsp Sherry vinegar
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 cup olive oil + greasing
salt
pepper

Food processor
Baking dish

































Directions
Preheat oven to 350 degrees F.  Place Snapper in a oil lined baking dish.  Place rest of the ingredients in a food processor and pulse to mince ingredients. Slather Romesco sauce over entire snapper and bake in oven for 35 minutes. ( The Snapper Romesco was served over a Potato Galette).

Roasted Lemon Chicken & Vegetables

Roasted Lemon Chicken & Vegetables
Simple, Yet Elegant!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 60-70 minutes

Ingredients
1 6-7 lb. chicken roaster
1 lemon, sliced thin
zest of 1 lemon
juice of 1 lemon
8 oz cups brussel sprouts
4 potatoes, chunks
1 onion quartered
1 tsp fresh thyme leaves
1 tsp fresh rosemary leaves
salt
pepper
olive oil

Parchment lined sheet pan 


Directions
Preheat oven to 350 Degrees F.  Separate the skin from the meat of the chicken breast gently. Lay lemon slices between the chicken breast and the skin. Place cut vegetables around the chicken.  Drizzle olive oil, lemon juice on chicken and vegetables. season with salt and pepper and sprinkle herbs and lemon zest on vegetables. Bake in oven for 1 hour- 1 hour 10 minutes.

Chicken Cabbage Rolls
A Rustic Hearty Dish!

Prep Time: 45 minutes
Cooking Time: 50-60 minutes


Ingredients
6 Savoy cabbage leaves, blanched
2 tbsp olive oil
1 lb. ground chicken thighs
1 cup carrots, small dice
1 cup celery, small dice
1 cup green peppoer, small dice
1 cup onions, small dice
1/2 cup chives, minced
2 garlic cloves, small dice
2 cups cooked rice
1/2 cup parmesan cheese
1 jar Marinara sauce
1/4 tsp cinnamon
1 cinnamon stick
salt
pepper

Large skillet

Directions
Preheat oven to 375 Degrees F.  Saute ground chicken in olive oil in skillet on medium heat until browned. Add in carrots, celery, green pepper, onions, chives, garlic, and saute until vegetables are tender.  Toss in rice, cheese cinnamon, salt and pepper to taste. Dry blanched cabbage leaves and stuff with chicken and roll. Lay stuffed cabbage seam side down. Top with cinnamon stick and Line some of the marinara sauce in the baking dish, then pour more Marinara sauce on top and bake in oven for 35-40 minutes.

Slow Cooker Rigatoni Bolognese

Slow Cooker Rigatoni Bolognese
6 Hours Of Not Slaving Over A Stove!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 5-6 hours



Ingredients
1 lb. bulk pork Italian sausage
1/2 lb ground pork
1 cup carrots, minced
1 cup celery, minced
1 cup onion, minced
3 cloves garlic, minced
6 cups spaghetti sauce
1 tsp dried oregano
1 tsp dried basil
3 inch Parmesan cheese rind
grated Parmesan cheese for garnish
1 tbsp sugar
1 box Rigatoni pasta
salt
pepper

Cooking Tools
Large skillet
Slow cooker
Large pot 

Directions
In a skillet, brown the Italian sausage and ground pork until browned. Place browned pork mixture, minced carrots, minced celery, minced onions, minced garlic, spaghetti sauce, oregano, basil, Parmesan cheese rind and sugar.  Place on medium-low and cook for 5-6 hours.  Cook pasta according to directions; drain.  Toss pasta in the Bolognase sauce and garnish with grated Parmesan cheese.  Salt and pepper to taste.

S'mores French Toast

S'mores French Toast
Something A Little Decadent In The Morning!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 15 minutes

Ingredients
4 thick slices white bread, Brioche, Challah
2 cups Keebler graham cracker crumbs
1 cup Jett Puff Marshmallow spread
1/2 cup semi-sweet chocolate chips
2 eggs, whisked
1/2 cup milk
butter
maple syrup

Cooking Tools
Nonstick skillet
2 Small mixing bowl
Sheet tray 

Directions
Preheat oven to 400 Degrees F. In a mixing bowl, whisk; eggs and milk. Add graham cracker crumbs in the other mixing bowl.  Spread Marshmallow spread thick or thin on sliced bread, top with the other slice.  Dip sandwich into the egg mixture, soak on all sides.  Place dipped bread into the crumbs and coat on all sides. Melt butter on medium heat, and fry french toast a few minutes on each side.  Pkace on sheet pan and bake in oven for 10 minutes.  Sprinkle chocolate chips and drizzle with maple syrup.
