Peach Upside Down Sticky Buns

Peach Upside Down Sticky Buns
A Southern,Yummy, Sticky, Peachy, Dessert!
Difficulty: Easy
Prep Time: 45 minutes
Cooking Time: 1 hour




Ingredients
1 bag 20oz. frozen peaches
1 cup light brown sugar + 2 cups light brown sugar
1 tsp vanilla extract
1 cup + 2 cups pumpkin spice pecans
3/4 cup golden raisins
1 box ( 2 sheets) Pepperidge Farms Puff Pastry Sheets, thawed
1/2 stick butter

Cooking Tools
Baking pan
Medium skillet
Parchment lined sheet pan
Cooling rack

Seal 2 Sheets Together

Add Filling Evenly on Pastry Sheets

Cut Into 2 Inch Slices

Before Inverting, Yum!

Directions
Preheat oven 400 Degrees F. In a skillet melt butter and add peaches, brown sugar, vanilla extract and 1 cup whole pecans. Cook on medium heat to reduce liquid until syrup like.  Place cooked peaches in bottom of baking pan.  Unfold pastry sheets and lay end to end.  Press down seams to seal.  Spread 2 cups of brown sugar evenly over the sheets, leaving 1 inch at one end..  Place 2 cups of crushed pecan on top and the golden raisin.  Roll from one end to the other and seal with a little water.  Slice rolls into 2 inch slices and place filling side up on top of the cooked peaches, leaving space between each slice.  Place in oven and bake for 55-60 minutes.  If it start to to brown to much, add a sheet of foil for the last 10 of cooking.  Remove from oven and let cool for a few minutes before inverting onto a parchment lined sheet pan.  Place any loose peach mixture on top of each sticky bun and place each bun on a cooling rack to set.

Mediterranean Yogurt Spread

Mediterranean Yogurt Spread
A Healthy Alternative To The Traditional Cheese Spreads!
Difficulty: Easy
Prep Time: 24 hours
Cooking Time: No cooking required



Ingredients
1 1/2 cups plain Greek yogurt
1/2 tsp garlic, pressed
pinch of salt
3 tbsp honey
2 tbsp pomegranate seeds
1 tbsp pignoli nuts
Flat bread or Naan Bread, sliced

Cooking Tools
Small mixing bowl
cheesecloth
Long wooden spoon
Deep Bowl


Directions

In a small mixing bowl, mix yogurt, salt and garlic.  Place in cheese cloth and and tie on a wooden spoon to hang over a deep bowl, so that any liquid in the yogurt will drip out.  Place in refrigerator for 24 hours.  Remove yogurt from cheese cloth, which now has the consistency of cream cheese.  Place in bowl, drizzle with honey.  Sprinkle pomegranate seeds and pignoli nuts on top.  Serve with heated Naan bread or flatbread.

Alabama White BBQ Sauce Pulled Chicken Sandwich

Alabama White BBQ Sauce Pulled Chicken Sandwich
For Those That Don't Like Traditional BBQ Sauce!

Cooking Time: 25 minutes


Ingredients
4 buns
2 cups iceberg lettuce, chopped
1 cooked rotisserie chicken, pulled chicken meat, no skin
1 onion, sliced
1 garlic cloves, minced
2 tbsp oil
salt
pepper
Alabama White BBQ Sauce 
Ingredients 
1 1/2 cups mayonnaise   
1/4 cup water   
1/4 cup white wine vinegar   
1 tbsp coarsely ground pepper   
1 tbsp Creole mustard   
1 tsp salt   
1 tsp sugar   
2 garlic cloves, finely minced   
2 tsp grated horseradish sauce

Cooking Tools
Medium Skillet
Medium mixing bowl
Small sauce pan

Directions
On medium heat, add oil to the skillet and saute onion slices and garlic for 15 minutes, until browned. Add in the pulled chicken and cook until chicken is also browned.  Salt and pepper chicken to taste. In a small sauce pan, add the ingredients for the white BBQ sauce and heat on a simmer for a few minutes.   You don't want the oil to separate from the mayonnaise. Spoon chicken and onions on a sliced bun and top with a couple of tablespoons of white sauce on top and place some chopped iceberg lettuce.  Serves with Sweet Potato Wedges.

Ingredients
8 tbsp simple syrup
8 slices cucumber
4 slices orange
8 slices lime
8 slices lemon
8-10 mint leaves
6 cups carbonated water
ice cubes

Directions

Place 2 tbsp of simple syrup in each glass.  Simple syrup is equal amounts of white sugar to water and heated until melted, then cooled. Pour in carbonated water and stir, leave enough room for citrus and ice cubes.  Place in equal amounts of cucumber and citrus slices in each glass and top with mint leaves.
Serves 4 

Caramelized Figs & Prosciutto Salad

Caramelized Figs & Prosciutto Salad
So Simple, So Pretty, So Tasty!

Ingredients
6 cups field greens
6-8 fresh Black figs, halved
8 slices Prosciutto 
1 shallot, sliced thin
1/2 cup sugar
Sweet Italian Dressing
Cooking Tools
Small non-stick skillet




DirectionsPreheat skillet on high heat.  Dip cut side of fig in sugar and place sugar side down into skillet and caramelize for 1 minute.  Set aside figs to cool.  Place field green in bowls.  Take a slice of Prosciutto and create rosettes and place in bowl.  Compose figs and shallots around rosettes and serve salad with Sweet Italian Dressing!

Ricotta Zucchini Meatballs

Ricotta Zucchini Meatballs
Minus the Meat, But Not The Flavor!  The Perfect Alternative For Ovo-Lacto Vegetarians!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 30-35 minutes


Ingredients
3 medium zucchini, grated
1 yellow onion, grated
3 garlic cloves, finely minced
3/4 cup ricotta cheese
1/2 cup freshly grated Parmesan + garnish
1 cup panko breadcrumbs
1/2 tsp salt
1/4 tsp pepper
1/2 tbsp Italian dried herbs
1/4 cup fresh basil
pinch of nutmeg
1 egg 
olive oil
3-4 cups pasta sauce
1 box angel hair pasta, cooked
minced parsley for garnish

Cooking Tools
Large mixing bowl
Box grater
Cheese cloth
Oven safe large skillet 




Directions
Preheat oven 400 Degrees F.  Grate the zucchini and onions on the large holes of a box grater.  Place grated zucchini in cheese cloth and squeeze as much liquid from the zucchini as you can.  Place zucchini in mixing bowl and add; minced garlic, ricotta cheese. Parmesan, breadcrumbs, dried herbs, nutmeg, egg, salt and pepper.  Shape mixture into golf ball size balls.  Drizzle oil  just enough to coat bottom of the skillet and pan fry the balls for 5-8 minutes and turn to brown all sides. Pour pasta sauce over the zucchini balls and add in basil leaves and bake in the oven for 20 minutes.  Serve with with angel hair pasta tossed in some of the sauce.

Sweet & Tangy Mustard Chicken

Sweet & Tangy Mustard Chicken
Served With Roasted Butternut Squash!

Ingredients
whole chicken, cut up
1/2 cup Taste Elevated Sweet & Tangy Mustard Seeds http://tasteelevatedshop.com/product/sweet-n-spicy-mustard-seeds/
1/2 cup honey
1 tbsp apple cider vinegar
3 tbsp apple juice
1/2 tsp fresh ginger + juices, grated
2 cloves garlic, grated
sprigs tarragon leaves
olive oil, drizzle
3 tbsp butter, melted
4 cups butternut squash, peeled & cubed
1 red onion, quartered
salt
pepper
Cooking Tools
Sheet pan
Small mixing bowl
Grater
Basting brush


Directions
Preheat oven 400 Degrees F.  Place cut up chicken, butternut squash, onions and tarragon sprigs on sheet pan and drizzle with olive oil and melted butter.  Salt and pepper evenly over chicken and vegetables and place in oven for 20 minutes.  In a small mixing bowl add; sweet & tangy mustard seeds, honey, apple cider vinegar, apple juice, grated ginger, garlic and whisk.  Baste chicken with the mustard mixture after 20 minutes of chicken cooking. Baste chicken again after another 20 minutes for final basting. Cook for a total of 1 hour- 1 hour 10 minutes.  Serve chicken with the roasted butternut squash.
