Chicken Vesuvio

Chicken Vesuvio
Always Trying Ways To Jazz Up Chicken!

Difficulty: Easy
Prep Time: 3 hours, 30 minutes
Cooking Time: 1 hour, 10 minutes



Ingredients
Whole chicken, cut up
2 Idaho baking potatoes, wedges
5 cloves garlic, crushed
1 tbsp Italian seasoning
2 cups white wine
1 cup frozen peas
3 tbsp olive oil
2 tbsp butter
juice of 1 lemon
zest of 1 lemon
minced chives for garnish
salt
pepper

Cooking Tools
Large oven safe skillet/pan
Large freezer bag

Sear And Brown Chicken

Directions
Brine chicken for 3 hours prior (recipe below). Cook's Note: If the chicken breast are large, cut in half.  Preheat oven to 400 Degrees F.  Remove chicken from Brine and pat dry. Sprinkle chicken pieces with Italian seasonings, salt & pepper.  Melt butter and oil on med-high heat and brown chicken pieces and remove. In the same pan, brown the potatoes. Add the chicken pieces on top of the potatoes. Bake in oven for 1 hour. Remove potatoes and chicken onto a serving platter.  Deglaze pan with wine, lemon juice and lemon zest on low heat. Scrape the bits and pieces, Reduce liquid then add in peas and heat through.  Adjust seasoning and pour sauce over chicken and potatoes.  Garnish with minced chives.
Serves 4 


Brine
Ingredients
6 cups cold water
1 cup salt
1 cup sugar

Directions
Mix ingredients and pour over chicken in a freezer bag. Place chicken in refrigerator for 3 hours.


 

Shrimp Pasta With Garlic Wine Sauce

Shrimp Pasta With Garlic Wine Sauce

Cooking Time: 15 minutes


Ingredients
Dried spaghetti (4 servings)
1 lb. large shrimp, shelled, deveined
2 cups broccoli florets
2 cups Campari tomatoes, halved
1 tbsp chives, chopped
5 cloves garlic, minced
3 tbsp olive oil
3 tbsp butter
2 cups, white wine
salt
pepper

Cooking Tools
Large pot
Large skillet 

Directions
Cook pasta in salted boiling water, cook and drain.  In a skillet, melt butter and heat olive oil on medium heat.  Saute minced garlic and broccoli for 2 minutes. Pour in white wine and cook to reduce some of the wine.  Add in the shrimp and cook until pink. Toss in the cooked pasta and let the pasta absorb some of the liquid. Right before serving, add the halved tomatoes.
Serve 4

Almond Rice Pudding

Almond Rice Pudding
Triple Almond Flavor!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 20 minutes


Ingredients
2 cups whole milk + 1/4 cup
3/4 cup sugar
3 egg yolks
2 cup cooked short grain rice
1 tsp vanilla extract
1 tsp almond extract
1/2 cup raisins
1/2 tsp cinnamon + sprinkles
1 tsp corn starch
1/4 cup almond butter
1 cup almond slivers
whip cream

Cooking Tools
Double boiler 



Directions
Put enough water in the bottom half of the double broiler and bring to a boil then reduce to a simmer. In the top half whisk together, milk, egg yolks, sugar, vanilla extract, almond extract and cinnamon. Whisk continuously as it cooks and thickens. Whisk together the 1/4 cup of milk and corn starch and pour into the liquid to thicken even more.  Add in rice and raisins and cook for additional few minutes. Remove from heat and cool. Prepare serving bowls by spreading almond butter around the rim and dipping into the slivered almonds.  Spoon in cooled Almond Rice Pudding into the prepared serving bowl and refrigerate for a few hours until chilled.  Serve with a dollop of whipping cream and sprinkle with some ground cinnamon.

Shakshuka

Shakshuka
A Tunisian Egg Dish That Is Popular In The Middle East & Israel!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 30 minutes


Ingredients
2 cups marinara sauce/ tomato sauce
1/2 red pepper, sliced
1/2 green pepper, sliced
1/2 yellow onion, sliced
1 clove garlic, sliced thin
1 tbsp Meyer lemon infused olive oil
1/2 tsp Paprika
pinch of cumin
pinch of pepper flakes
2 tbsp fresh parsley, chopped
minced chives for garnish
2 eggs
salt
pepper
toast

Cooking Tool
Medium skillet
2 oven safe bowls 



Directions
Preheat oven 400 Degrees F.  In the skillet, heat pan on medium high and add, oil peppers, onions, garlic. Saute until cooked. Pour in marinara sauce and sprinkle in seasoning and chopped parsley, salt & pepper to taste.  Cook for 10 minutes to thicken sauce. Divide sauce into 2 baking bowls and create a well in center. Crack each egg into well and drizzle with some of the oil, salt & pepper and bake in oven for 15 minutes.  Garnish will chives and serve with toast points.

Beef Souvlaki

Beef Souvlaki
Topped With Feta Cream!
Difficulty: Easy
Prep Time: 3 hours
Cooking Time: 8 minutes
Ingredients
1 - 1 1/2 lbs. tri-tip steak, ribeye, filet Mignon, cubed
2 tsp dried oregano
2 tsp garlic, minced
2 tbsp olive oil
1/4 cup lemon juice
1/8 cup red wine vinegar
1/2 tsp Harissa spice
salt
pepper

Cooking Tools
Medium mixing bowl
Wooden skewers
Outdoor Grill
Food Processor 


Directions
Whisk together olive oil, oregano, garlic, lemon juice, vinegar, Harissa & pepper.  Add in cubed beef and marinated 2-3 hours in refrigerator. Skewer the beef and salt the beef. Preheat grill on high and cook beef 3 minutes on each side. Serve on flatbread or rice and drizzle with Feta Cream (recipe below).

Ingredients
1/2 cup Feta cheese crumbles
2 tbsp plain yogurt
2 tbsp sour cream
1/4 tsp lemon zest
1 tbsp lemon juice
salt
pepper

Directions
Place all ingredients in food processor and blend until creamy.

Sweet & Sour Grouper

Sweet & Sour Grouper
This Pan Asian Recipe Is Packed Full Of Flavors!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 15 minutes


Ingredients
2  10oz. filet Grouper
3/4 cup Ponzu sauce
1 tbsp soy sauce
1/2 tsp sesame oil
1 tsp fish sauce
1 tbsp raw sugar/ palm sugar
1 tsp ginger, chiffonade
1/2 tsp lemon grass paste (Gourmet Garden)
micro greens, garnish
2 tbsp vegetable oil
salt

Cooking Tools
Nonstick skillet
Small saucepan 

Directions
Salt Grouper sparingly on both sides.  Heat skillet/ frying pan on medium high with the vegetable oil, sear fish  and cook fish 4 minutes on each side (depending on thickness).
Let fish rest for a few minute before pouring sauce on top.  In a sauce pan, add; Ponzu sauce, sesame oil, fish sauce, sugar, ginger, lemon grass.  Cook sauce on a simmer for 10 minutes, adjust seasoning to suit taste.  Remove ginger and discard (optional). Plate fish and spoon sauce on top, garnish with micro greens.  Serve  the Sweet & Sour Grouper with rice. Cook's Note: Ponzu sauce can be found at an Asian grocery store.

Kugel

Kugel
A Traditional Jewish Noodle Pudding!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 50 minutes


Ingredients
3 cups cooked wide egg noodles (cooked & chilled)
3 eggs
1/2 cup cottage cheese
1/2 cup sour cream
1/2 cup sugar + sprinkle
1 tsp vanilla extract
1/2 tsp cinnamon + sprinkle
3 tbsp butter, melted
1/2 cup raisins
pinch of salt
2 tbsp apple jelly, melted

Cooking Tools
6 count large muffin tin
Paper muffin liners
Medium mixing bowl
Pastry brush 


Directions
Preheat oven to 370 Degrees F.  Whisk  together eggs, cottage cheese, sour cream, sugar, vanilla extract, cinnamon, salt and melted butter in the mixing bowl.  Fold in cooked noodles and raisin.  Mix until well coated.  Divide noodles evenly in muffin liners. Sprinkle each Kugel with cinnamon and sugar.  Bake in oven for 50 minutes.  Let rest and cool for 1 hour. Using a pastry brush, dab melted apple jelly on the top of the baked Kugel with a pastry brush for a beautiful sweet shine.

Seafood Puttanesca

Seafood Puttanesca
Just Perfect For The Seafood Lover!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 35 minutes

 
Ingredients
1 box Linguini pasta
4 cups Marinara sauce
1 can roasted diced tomatoes
1 lb. medium shrimp shelled/ deveined
1/2 lb. scallops
8 oz. filet, Grouper or Mahi Mahi, chunks
1 lb. clam or mussels (optional)
1 small red onion, sliced thin
6 gloves garlic, sliced thin
1/4 cup capers
2 anchovies filet
1/2 cup Kalamata olives, pitted, halved
1/8 tsp red pepper flakes
1/4 cup white wine
2 tbsp olive oil
minced parsley for garnish
salt
pepper

Cooking Tools
Large stock pot
Large skillet with lid 

Directions
Cook pasta according to directions in salted water, drain. In a skillet saute onions, garlic and anchovies in the olive oil until translucent. Add in wine and deglaze. Pour in the marinara sauce, roasted tomatoes, capers, Kalamata olives, red pepper flakes. Cook for 10-15 minutes on medium heat to bring the flavors together. Add in seafood and let poach in the sauce for 8 minutes with lid on, salt and pepper to taste. Toss in cooked pasta and mix until well coated. Serve pasta with garnish of fresh parsley.

Beef Tataki

Beef Tataki
The Steak Is So Tender It Melts In Your Mouth!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 5 minutes

Ingredients
8 oz. Filet Mignon
1 tbsp black sesame seeds
1 green onion, sliced
1 cup micro greens
1/2 cup Ponzu sauce
sesame oil for drizzle
chili oil for drizzle (optional)
1 tbsp vegetable oil
salt

Cooking Tools
Skillet/ Frying pan

Directions
Heat skillet on high, roll filet in the black sesame seeds evenly. Sear meat until brown crust on all sides, leaving center very rare.  Let meat rest for 5 minutes and slice thin. Arrange meat on a serving dish and pour Ponzu around the beef, not on it. Garnish with green onions and micro greens.  Drizzle a small amount of sesame oil and chili oil. Sprinkle with some salt.  Cook's Note: Ponzu sauce can be bought at a Asian grocery store, or International section of your local super market.
