Strawberry Buttermilk Ice Cream

Strawberry Buttermilk Ice Cream
No Ice Cream Maker, No Problem With This No-Churn Recipe!
Difficulty: Easy
Prep Time: 40 minutes
Cooking Time: No cooking required
Cooling Time: 5 + hours



Ingredients
2 cups fresh strawberry slices
1 1/2 cups heavy cream
1 cup buttermilk
1/2 cup super fine sugar
1 can sweetened condensed milk
1/2 tsp vanilla bean paste


Cooking Tools
2 medium mixing bowls
Electric hand mixer
Container for ice cream














Directions
Add strawberry slices and sugar in a mixing bowl, toss and set aside to create the strawberry juices. Whip the heavy cream and vanilla bean in a separate bowl until whipped.  Mix in sweetened condensed milk and buttermilk into the strawberry mixture. Fold in whipped cream into the strawberry mixture until well incorporated.  Place strawberry ice cream mixture into a container and freeze for 5-6 hours+.

Garden Salad Boats

Garden Salad Boats

Prep Time: 30 minutes
Cooking Time: 4-5 minutes



Ingredients
8 Romaine  leaves
2 cups grape tomatoes, halved
1 yellow squash, diced
1 1/2 cups carrots, shredded or swirled
1 corn on the cob, husk removed
2 cups cucumber, diced
1 shallot, sliced thin
1 cup Edamame
1 cup snow pea sprouts
5 small cooked beets, quartered
1 cup Robusto cheese, diced
salad dressing

Cooking Tools
Outdoor grill 



Directions
preheat grill on high and grill corn for 4-5 minutes, rotating occasionally.  Remove kernels from the corn and set aside to cool. Trim the base of the Romaine leaves.  Put each leaf end to end with it's pair, overlapping to create a boat (will yield 4 boats).  Add each remaining ingredients equally in the center among the boats and serve with your favorite dressing.

Teriyaki Beef Skewers

Teriyaki Beef Skewers

Prep Time: 3 hours, 30 minutes
Cooking Time: 8 minutes


Ingredients
1 Flat Iron Steak
1/2 cup soy sauce
1/4 cup light soy sauce
3/4 cup palm sugar or brown sugar
1/4 cup Mirin
1/4 cup Sake
1/2 tsp grated ginger
2 clove garlic, grated
2 tbsp green onions, sliced

Cooking Tools
Outdoor grill
Skewers
Medium mixing bowl
BBQ brush


Directions
Slice Flat Iron Steak against the grain in thin strips.  In a mixing bowl, add; soy sauce, palm sugar, Mirin, Sake, ginger and garlic.  Whisk ingredients and add beef slices and marinade in the refrigerator for 2-3 hours.  Skewer 2-3 slices of beef strips, depending on the length of skewer.  Grill 3-4 minutes on each side, baste as much sauce as you want on each beef skewer.
Garnish with sliced green onions.

Italian Meatloaf

Italian Meatloaf
A Italian Twist On An American Classic
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 1 hour 15 minutes




Ingredients
1/2 lb. ground pork
1/2 lb. bulk sweet Italian sausage
1/2 lb. ground beef
1 1/2 cups bread crumbs
3 cloves garlic, minced
2 tbsp Worchestershire sauce
1 cup green pepper, small dice
1 cup onion, small dice
2 1/4 cup marinara sauce
1 tsp dried oregano
minced parsley or basil
1 egg
salt
pepper

Cooking Tools
Medium mixing bowl
Large sheet pan
Parchment paper
Small saucepan 




Directions
Preheat oven to 400 Degrees F.  In a mixing bowl, mix; ground por, sausage, beef, garlic, Worcestershire sauce, diced green pepper & onions, 1/4 cup marinara sauce, dried oregano, egg, salt & pepper.  Mix well and place meat mixture onto a parchment lined sheet pan and shape into the shape you want.  Place additional 1/2 cup of marinara sauce on top and spread evenly and bake in oven for 1 hour and 15 minutes.  Heat rest of the marinara sauce in a saucepan and pour over sliced meatloaf. Garnish with minced parsley.

Bear Claws

Bear Claws
Few Ingredients Makes A Fantastic Pastry!
Difficulty: Easy
Prep Time: 15 minutes
Cooking Time: 35 + 40 minutes

Ingredients
1 box puff pastry sheets, thawed
4 tbsp apricot jam
1 cup powdered sugar
1/4 tsp almond extract
1 cup almond slices
4 tbsp water


Cooking Tools
Parchment lined sheet pan
Kitchen scissors
Small mixing bowl



Directions
Preheat oven 375 Degrees F.  Each box of puff pastry has 2 sheet with 2 seams.  Spread jam evenly down the cent of each sheet. Fold over one seam then the other (like folding paper) Press the end seam down slightly.  Cut each folded sheet in half then using scissors, cut each claw (between 5-6). Spread each claw in an slight arch to separate the claws.  You will yield 4 claws in total.  Bake in oven for 35-40 minutes. In a small mixing bowl. add; powdered sugar, almond extract and water and mix. Once glazed are baked, drizzle some icing with a spoon on each claw and sprinkle with almonds. Drizzle more icing on top of almonds
and serve.

Camembert & Apple French Press

Camembert & Apple French Press
Sweetness Of The Apples And Creaminess Of The Cheese!

Cooking Time: 15 minutes


Ingredients
French baguette (2) 6 inch slices/ halved
4 slices of Camembert cheese
1 apple (honey crisp) sliced thin
2 tbsp sugar
2 tbsp butter + greasing
pinch of cinnamon
1/4 tsp vanilla extract

Cooking Tools
Mandolin
Indoor grill pan + heavy press
Small skillet

Directions
In a small skillet, melt butter on high heat.  Saute apple slices in butter with sugar, cinnamon and vanilla. Cook apple until slightly tender, not mushy.  Butter outside of baguette, divide apples and place them on one side of loaf.  Add on the cheese and pour any juices the apples created onto the cheese.  Place top half of bread.  Preheat the grill pan and lay sandwich on pan and lay the press on top to weigh down the sandwich. Cook each side for about a minute or until the cheese starts to melt.

Cannellini Bean & Onion Bruschetta

Cannellini Bean & Onion Bruschetta

Ingredients
6 slices, Italian loaf
1  15oz. can cannellini beans, rinsed & drained
1 cup onions, sliced thin
2 cloves garlic, minced
3-4 tbsp lemon infused olive oil + drizzle
2 tbsp parsley, minced
2 tbsp green onion, minced
zest of 1 lemon
salt
pepper


Cooking Tools
Sheet pan
Medium skillet 


Directions
Preheat oven to 350 Degrees F.  Place bread slices on a sheet pan and drizzle with some oil and bak in oven for 10-12 minutes.  In a medium skillet on medium heat, drizzle olive oil to coat the pan and saute garlic and onions until translucent.  Add in beans, parley and lemon zest.  Saute for 5 minutes, salt & pepper to taste. Place beans on top of toasted bread slices and garnish with minced green onions,  drizzle with some oil before serving
