Ingredients8 Romaine leaves2 cups grape tomatoes, halved1 yellow squash, diced1 1/2 cups carrots, shredded or swirled1 corn on the cob, husk removed2 cups cucumber, diced1 shallot, sliced thin1 cup Edamame1 cup snow pea sprouts5 small cooked beets, quartered1 cup Robusto cheese, dicedsalad dressing

Directions
preheat grill on high and grill corn for 4-5 minutes, rotating occasionally. Remove kernels from the corn and set aside to cool. Trim the base of the Romaine leaves. Put each leaf end to end with it's pair, overlapping to create a boat (will yield 4 boats). Add each remaining ingredients equally in the center among the boats and serve with your favorite dressing.
