Frozen Berries With Hot Chocolate Caramel Sauce

Ingredients
2 cups fresh strawberries, halved
1 cup fresh blueberries
1 1/2 cups raspberries
1 can Dulce de leche
1/2 cup semi sweet chocolate chips

Cooking Tools
Small sauce pan
Sheet trays
Directions
Place cleaned and dried berries on a sheet pan and place in the freezer for a few hours.  Right before serving, Melt chocolate ans Dulche de leche in a saucepan on low heat.  Place frozen berries in a serving bowl and pour hot caramel over top, serve immediately.

Spinach Stuffed Chicken With Parsnip Puree

Ingredients
8 boneless, skinless chicken thighs
2 boxed frozen spinach, thawed & drained
1 cup onions, small dice
1 garlic clove, minced
1/2 cup grated Parmesan cheese
2 tbsp butter
3 tbsp olive oil + drizzle
salt
pepper

Parsnip Puree
Ingredients
8-10 parsnips, peeled & diced
1/2 cup onion, dice
1 clove garlic
1 1/2 cups whole milk
1/2 stick butter
pinch of nutmeg
sat
pepper 
Directions
Place all ingredients in a pot on medium low heat with lid on and cook until soft.  Use an emersion blender to create a puree. Adjust any seasoning.

Directions
In a frying pan, add butter and olive oil to medium heat.  Saute spinach, onions, garlic until tender and all water has evaporated.  Toss in cheese, nutmeg and salt & pepper to taste.  Set aside to cool. Stuff each thigh with spinach mixture and close seam with wooden skewers.  Place each thigh into a greased baking dish and coat with some olive oil and salt& pepper on top.  Bake in oven for 50-60 minutes.  Place sliced chicken on top of Parsnip puree and pour some of the cooking juices on to sliced thighs.

2 cups grape tomatoes, sliced
1 cup fresh mango, small dice + juices
1 avocado, diced
2 tbsp red onion, minced
juice of 1 lime
1 tbsp minced parsley
1 tbsp minced cilantro
1 tbsp minced green onions
1 tbsp minced jalapeno peppers (optional)
tortilla chips
salt

Directions
Place all diced ingredients and lime juice in a mixing bowl and let stand at room temperature before serving.

Berry Crumb Pie

Berry Crumb Pie
Perfect For A Party Of Two!

Ingredients
1 box Pillsbury Pie Crust
2 cups strawberries, halved
1 1/2 cups blueberries
1 1/2 cups black berries
1 1/2 cups flour
1/2 cold stick butter, diced
1 cup sugar, divided
1 tsp vanilla extract

Cooking Tools
2 Small cast iron pan
Small mixing bowl
Pastry cutter
Parchment lined sheet pan

Before you pop in the oven!

Directions
preheat oven to 400 Degrees F. In a small mixing bowl, add; flour, 1/2 cup sugar, diced butter and vanilla extract.  Cut flour mixture with a pastry cutter until it resembles crumbs, you can also use your fingers. Place pastry dough into cast iron, trim off excess dough and create pleates along edges. Place some of the flour mixture just to line the bottom of the pie before adding berries. Equally place berries into each of the dough lined cast iron pans. Sprinkle evenly the rest of the sugar on top of the berries and layer more of the flour mixture on top of the berries.  Place pie on sheet pan and bake in oven for 30-35 minutes or until golden and bubbly.  Completely cool before serving.

Ingredients
4  8oz. filet mignon, cubed
1 red onion quartered
8 oz. button mushrooms, halved
1 zuccini, sliced & halved
1 yellow squash, sliced & halved
10 oz. Baby sweet peppers, assorted
minced green onion, garnish
vegetable oil
salt
pepper

Marinade
Ingredients
1 cup low sodium soy sauce
1/4 cup Mirin
1 tsp fish sauce
2 garlic cloves, pressed
3/4 cup brown sugar
1/2 tsp sesame oil
pepper

Large freezer bags
Wooden skewers (long)
Outdoor grill


Directions
Whisk all the ingredients for the marinade. Place filet cubes into the freezer bad and pour in the marinade. Marinade in refrigerator for 2 hours. prepare your vegetable and coat with a little vegetable oil, salt & pepper.  Make your kabobs alternating meat and vegetable on the skewers. Preheat grill on high and grill for 4 minutes on each side, flipping only once.  Let rest before serving and garnish with minced green onions..

Crispy Smashed Potatoes

Ingredients
16 baby red potatoes
16 pats of butter
olive oil
garlic powder
dried oregano
dried tarragon
salt
pepper

Cooking Tools
Large stock pot
Parchment lined baking sheet 

Directions
In a stock pot add potaoes and cold water to cover potaoes and set temperture on high to boil for approx. 30 minutes or longer until potatoes are cooked but not falling apart. Preheat oven to 420 Degress F. Drizzle oil on parchment lined baking sheet, add potatoes and using a spatula, smash down to flatten potatoes. Drizzle with additional oil and lay a pat of butter on each potato.  Sprinkle each potatoes with garlic powder, dried oregano and tarragon.  Salt and pepper potatoes.  Bake in oven for 30 minutes or until edges are crispy.

Walnut Caramel Monkey Bread

Ingredients
1 Pillsbury Grand biscuit dough
1 cup brown sugar
1/4 cup caramel sauce
1 stick butter, melted
3/4 cup walnut bits
1/2 cup raisins

Cooking Tools
Tin bread loaf pan
2 Small mixing bowls



Directions
Preheat oven to 400 Degrees F. Uncan biscuit dough and seperate each biscuit dough and cut into fourths.  Spread caramel sauce evenly at the bottom of loaf pan. Sprinkle with some walnuts and raisins.  Dip each dough into the melted butter and roll into brown sugar.  Place each ball into loaf pan.  Sprinkle walnut and raisins inbetween dough balls.  Do not press down, layer until all dough balls are used.  Bake in oven for 30 minutes.  Remove from oven and let cool for 15 minutes and place a plate on top and invert loaf.

Ingredients
1 box Duncan-Hines Yellow butter cake mix
1 box vanilla pudding mix
2 cups canned crushed pineapple plus juices
1 cup sweetened coconut flakes + 2 cups topping
3/4 cup evaporated milk
1 tsp vanilla extract
7 tbsp room temperature butter
3 eggs

Cooking Tools
Bottom release pan
Large mixing bowl
Electric hand mixer


Directions
Preheat oven 350 Degrees F.  Place all ingredients in a mixing bowl and mix until well blended.  Grease pan and pour batter.  Bake in oven for 1 hour, turn off oven and let cake remain in oven for additional 10 minutes.  Cool cake completely and top with Sweetened coconut flakes.  Refrigerated cake is also delicious.

Ingredients
2 Wood Fired Naan Bread
2 cups Hummus, store bought or homemade
8 oz. spring mix greens
1/2 cup roasted red peppers, small dice
1 shallot, sliced thin
2 cups grape tomatoes, sliced
1 cup feta cheese
olive oil, drizzle
1 tsp dried oregano
salt
pepper

Cooking Tools
Outdoor grill



Directions
Preheat grill on high.  Grill Naan bread about 2 minutes on each side. ( Naan bread can be found in the bakery section of some grocery stores). Remove bread and cool slightly before spreading hummus evenly on each Naan bread.  Layer with spring mix greens, tomatoes, shallots, red peppers and Feta cheese.  Sprinkle dried oregano on top, drizzle with olive oil.  Salt and pepper to taste.

Ingredients3 cups flour
1 stick cold butter, diced
1 cup sugar
16 oz. fresh blueberries
1 tsp vanilla extract


Cooking Tools
Pastry cutter
Medium baking dish
Medium mixing bowl

Directions
Preheat oven to 350 Degrees F.  In a mixing bowl, add; flour, diced cold butter, sugar and vanilla.  Use the pastry cutter to cut butter into the flour, then use your hands to create pea size and larger clump ( This will create your bottom and top crust).
Put half of the crumbs to line the baking dish, add the blueberries evenly spread out.  Add the rest of the crumb topping evenly on top of the blueberries.  Bake in the oven for 40 minutes.  Let cool to room temperature then cut & serve.

2 cups vanilla bean Greek yogurt
2 apples, small dice
1 13 oz can Dulce de Leche
2 tbsp fresh lemon juice
mint leaves for garnish

Directions
Place diced apple in small mixing bowl and toss with lemon juice.  Heat skillet on medium and saute apple to draw out moisture,  Cook apple until slightly tender but not mushy.  Add in the Dulce de Leche, a lttle or alot, until melted.  Remove apples from heat and let cool.  Layer apples at the bottom of dessert cups and add yougurt on top.  Garnish with mint leaf.

Grilled Salmon Orzo Salad

Grilled Salmon Orzo Salad

Ingredients
4 salmon filet
1/2 box Orzo pasta
2 cups assorted grape tomatoes, sliced
1 shallot, sliced thin
1 cup roasted red pepper, diced
1/2 English cucumber, diced
1/2 cup chopped parsley + garnish
2 cups pea sprouts
2 slices lemon, sliced
salt
pepper


Lemon Vinaigrette
Ingredients
3/4 cup olive oil
1/3 cup lemon juice
1 tbsp super fine suagr
salt
pepper 



Cooking Tools
Indoor grill pan
Large mixing bowl
Small mixing bowl
Medium pot



Directions
Cook Orzo pasta according to directions, drain and rinse with cold water. Set pasta aside to drain. Salt and pepper salmon filet.  Preheat grill pan on high and lay salmon on grill pan and sear for a minute, then lower heat to medium high and cook for 3-4 minutes before flipping,  Cook about 3 minutes on the other side and remove from heat.  In a small bowl, whisk together the Lemon Vinaigrette.  In a large mixing bowl, add cooled pasta, tomatoes, shallots, red pepper, cucumber, parsley, pea sprouts, salt and pepper.  Add in Lemon Vinaigrette and toss until well coated.  Salt and pepper to taste if needed.  Place Orzo Salad on a platter, lay grilled salmon on top, garnish with lemon slices and minced parsley.  This salad can be served room temperature or cold.

Creamy Butternut Squash Penne

Creamy Butternut Squash Penne

Ingredients
1 box Penne pasta
2 bags frozen diced butternut squash
3/4 cup onions, minced
1 garlic clove, minced
1 cup milk
1/2 cup heavy cream
1/2 stick butter
2 tbsp olive oil
fresh grated cinnamon
fresh grated nutmeg
1 cup grated Parmesan cheese + garnish
minced parsley for garnish
salt
pepper

Cooking Tools
Large stock pot
Medium sauce pan
Immersion blender
Small grater


Directions
Boil and cook pasta according to directions, drain.  In a skillet on medium heat, melt butter and olive oil.  Saute onions and garlic in a medium saucepan until translucent.  Add in butternut squash and cook until it is mashable, about 10 minutes. Pour in milk, heavy cream, cinnamon, nutmeg.  Reduce heat and simmer until it starts to thicken.  Use a immersion blender and blend until pureed. Cook's note: If the sauce is thick, just add more cream to thin.  Once sauce is pureed, add in Parmesan cheese and whisk well, salt & pepper to taste.  Pour over drained hot pasta in individual bowls and top with grated Parmesan cheese and minced parsley.

Tomato Pesto Rolls

Tomato Pesto Rolls
No Need To Spend Hours In Making This Bread!

Ingredients
Pillsbury French Bread roll
8 sun dried tomatoes in olive oil
1/4 tsp dried oregano
1 glove garlic, minced
1/2 cup olive oil + drizzle
1 tbsp Pignoli nuts
2 tbsp Parmesan cheese
salt
pepper 

Cooking Tools
6 count muffin tin
Small food processor
Rolling pin 


Directions
Preheat oven 375 Degrees F. In a food processor, add sun dried tomatoes, oregano, garlic, olive oil, nuts, salt and pepper,  Pulse until fine mince.  Add in Parmesan cheese and pulse for 30 seconds.  Remove French dough from tube csn and cut into 6 equal pieces. Roll out dough into a round circle.  Spread Tomato Pesto evenly on each round.  Roll from one end to the other and tuck in sides.  Drizzle tin to grease bottom and place each roll and drizzle with olive oil, sprinkle a bit of salt, pepper and dried oregano.  Bake in oven for 25 minutes or until golden brown.

Madeira Cake

Madeira Cake
Serve With A Glass Of Madeira Wine!

Ingredients
2 sticks unsalted butter (softened)
1 cup superfine sugar + sprinkling
grated zest and juice of 1 unwaxed lemon
3 large eggs
1 1/3 cups self-raising flour
2/3 cup almond flour
1 cup candied lemon peel (optional)
Madeira wine (optional)

Cooking Tools
Large mixing bowl
parchment paper
Loaf pan
Hand mixer

Directions
Preheat the oven to 325ºF. Butter and line bottom of loaf pan with parchment paper cut to fit. Cream the butter and sugar, and add the lemon zest. Add the eggs one at a time with a tablespoon of the flour for each. Then gently mix in the rest of the flour, Almond flour and, finally, the lemon juice.  Place batter into greased prepared pan. Sprinkle with superfine sugar (about 2 tablespoons should do it) as it goes into the oven, and bake for 1 hour or until a cake-tester comes out clean. Remove to a wire rack, and let cool in the tin before turning out. Place candied lemon peels on top and serve with a glass of Madeira wine.

Ingredients
1 Angel Food Cake (store bought) 
3-4 cups assorted fresh berries
1/4 cup super fine sugar
whip cream

Caramel Sauce
Ingredients
1 cup light brown sugar
1/4 cup evaporated milk
1/2 stick butter
1 tsp vanilla extract
pinch of salt 

Cooking Tools
Small sauce pan
Medium mixing bowl


Directions
In a small sauce pan, add; brown sugar, milk, butter, vanilla extract, salt and stir on low heat until desired consistency.  Remove sauce from heat and cool. In a mixing bowl, add; berries, sugar and toss until sugar dissolves.  Place mixed berries on top of Angel Food Cake and drizzle with Caramel sauce.  Top with whip cream if desired.
