Eggs Verde

Eggs Verde
Served Over Potato Pancakes!
Difficulty: Easy
Prep Time: 40 minutes
Cooking Time: 20 minutes



Ingredients
9 eggs
1 cup Bisquick pancake mix
1 cup leftover mashed potatoes
1/2 cup milk
butter
vegetable oil
salt
pepper

Cooking Tools
Non stick skillet
Medium mixing bowl
Food processor


Directions
Prepare Salsa Verde in advance and set aside.
Place Bisquick, 1 egg, milk in a mixing bowl and whisk until lumps are smooth.  Whisk in mashed potatoes and whisk until lumps are smooth. Melt butter in a non stick skillet and pour even amounts to form 4 pancakes, cook on both sides until browned. Set aside pancakes in a warm location. In the same non stick skillet, use vegetable oil to fry each egg over easy, sprinkle with salt& pepper. Place 2 fried eggs over 1 pancake and drizzle Salsa Verde on top.

Potato Frittata

Potato Frittata
Great For A Main Course Or A Side Dish!
Difficulty: Easy
Prep Time: 25 minutes
Cooking Time: 35 minutes


Ingredients
1 large red potato, sliced thin
5 eggs
1/4 cup cream
3/4 cup fresh tomatoes, diced
1/4 cup onion, minced
1 tsp parsley, minced
1/4 tsp garlic powder
1 tbsp butter
1 tbsp olive oil
salt
pepper

Cooking Tools
6 or 8 inch non-stick oven safe frying pan
Medium mixing bowl
Mandolin 

Before Inverting

Directions
Preheat oven to 375 Degrees F. Melt butter on medium heat, and layer potatoes in a single layer including sides and  overlapping ends. Fry in skillet, do not mix, keep the layer intacked.  Cook for 10 minutes, then remove from heat.  Whisk eggs and cream, then fold in onions, parsley, tomatoes, garlic powder, salt & pepper. Pour egg mixture over top of potatoes and bake in the oven for 20-25 minutes. The eggs should look puffed and set.  Remove from oven and let rest for 5 minutes.  Place a serving dish on top of pan and invert.

Deep Fried Lasagna Bites

Deep Fried Lasagna Bites
What To Do With Leftover Lasagna?
Difficulty: easy
Prep Time: 40 minutes
Cooking Time: 10 minutes



Ingredients
leftover cold lasagna, cut into 1" X 2" bite size pieces
2 cup panko bread crumbs
1/2 cup Parmesan cheese + garnish
2 eggs, whisked
oil for frying
minced parsley for garnish

Deep fryer
Spider
1 medium mixing bowl
1 small mixing bowl
Paper towel lined sheet pan 





Directions
Cut cold left over lasagna into bite size pieces.  Whisk eggs in a mixing bowl, and mix bread crumbs and cheese in another mixing bowl. Dip each lasagna bite into the eggs then into the Panko bread crumbs.  Place each Lasagna bite on a sheet pan and place in freezer for 20 to get set up.  Preheat oil to 350 Degrees F.  Fry little bites in small batches, cook for 1-2 minutes or until golden brown.  Drain on paper towels. Garnish with more Parmesan cheese and minced parsley.
Serves 2-4

Pappardelle With A Tasso Ham Cream Sauce

Pappardelle With A Tasso Ham Cream Sauce
A Beautiful Creamy Pasta Dinner!

Prep Time: 15 minutes
Cooking Time: 30 minutes



Ingredients
Fresh or dried Pappardelle pasta (4 servings)
(4 ) 1/4 inch slices of Tasso Ham, julienned
1 medium sweet onion, sliced thin
4 cloves garlic, sliced thin
1/2 cup half & half
1 cup heavy cream
1/4 stick butter
1/tsp Smoked paprika
1/2 cup reserved pasta water
minced parsley for garnish
salt
pepper

Cooking Tools
Stock pot
Large skillet 


Directions
Bring salted water to a boil and cook pasta according to directions.  In a skillet, add; butter on medium heat, then add onion slices, paprika and garlic.  Saute onions and garlic until tender.  Add in Tasso ham and saute for 5 minutes.  Pour in half & half, heavy cream and reduce heat to a simmer and cook until sauce thickens. Drain pasta, but reserve some pasta water.  Toss past in the Tasso cream, add pasta water to sauce if needed to thin the sauce.  Salt and pepper to taste. (Be careful not to over salt, the Tasso ham brings salt to the dish) Garnish with minced parsley.

Adjaruli Khachapuri

Adjaruli Khachapuri
Georgian Cheese Bread
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 40-45 minutes


Ingredients
pizza dough (store bought)
1 1/4 cup Ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup crumbled Feta cheese
2 tbsp butter, small dice
olive oil
salt
pepper
1 egg

Cooking Tools
Parchment lined sheet pan
Small mixing bowl

Directions
Preheat oven to 400 Degrees F.  Using your hand to push out dough to create a football shape with the perimeter about 1 inch higher than the bottom. In a mixing bowl, mix; Ricotta cheese, mozzarella cheese, Feta cheese, diced butter, salt and pepper.  Place cheese mixture into the hollow portion of the bread bowl evenly.  Drizzle olive oil on the bread perimeter.  Bake in oven for about 40 minutes or until bread is cooked and cheese is hot and bubbly.  Remove from oven and crack a egg on top and mix in the hot cheese until mixed in. To serve, gently pull apart bread and dip into the cheese mixture.
