Potato Frittata

Ingredients1 large red potato, sliced thin5 eggs1/4 cup cream3/4 cup fresh tomatoes, diced1/4 cup onion, minced1 tsp parsley, minced1/4 tsp garlic powder1 tbsp butter1 tbsp olive oilsaltpepper

Directions
Preheat oven to 375 Degrees F. Melt butter on medium heat, and layer potatoes in a single layer including sides and overlapping ends. Fry in skillet, do not mix, keep the layer intacked. Cook for 10 minutes, then remove from heat. Whisk eggs and cream, then fold in onions, parsley, tomatoes, garlic powder, salt & pepper. Pour egg mixture over top of potatoes and bake in the oven for 20-25 minutes. The eggs should look puffed and set. Remove from oven and let rest for 5 minutes. Place a serving dish on top of pan and invert.
