Pappardelle With A Tasso Ham Cream Sauce

IngredientsFresh or dried Pappardelle pasta (4 servings)(4 ) 1/4 inch slices of Tasso Ham, julienned1 medium sweet onion, sliced thin4 cloves garlic, sliced thin1/2 cup half & half1 cup heavy cream1/4 stick butter1/tsp Smoked paprika1/2 cup reserved pasta waterminced parsley for garnishsaltpepper

Directions
Bring salted water to a boil and cook pasta according to directions. In a skillet, add; butter on medium heat, then add onion slices, paprika and garlic. Saute onions and garlic until tender. Add in Tasso ham and saute for 5 minutes. Pour in half & half, heavy cream and reduce heat to a simmer and cook until sauce thickens. Drain pasta, but reserve some pasta water. Toss past in the Tasso cream, add pasta water to sauce if needed to thin the sauce. Salt and pepper to taste. (Be careful not to over salt, the Tasso ham brings salt to the dish) Garnish with minced parsley.
