Fried Chicken Drumettes

Fried Chicken Drumettes!
Serve This Appetizer In A Fun Waffle Bowl!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 10-12 minutes


Ingredients
1-1 1/2 lbs. chicken drumettes
Artisan waffle bowls (optional)
2 cups flour
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp pepper
2 eggs, whisked
oil for frying
honey for drizzle
minced parsley for garnish

Cooking Tools
Deep fryer
Medium mixing bowl

Directions
Heat fryer with oil for deep frying to 350 Degrees F.  Mix flour and seasonings in a mixing bowl. Dredge each chicken drumettes into the flour first, then dip into the whisked eggs, then back into the seasoned flour.  Fry the drumettes for 10-12 minutes or until fully cooked.  fry in batches, drain on plate lined with paper towels.  Before serving in waffle bowls, drizzle with honey and garnish with minced parsley.

Ingredients
16 oz. fresh figs
1/2 cup apple juice
3/4 cup raw sugar
1/2 tsp vanilla bean extract
2 tbsp pectin

Medium saucepan
Jam jars



Directions
In a saucepan, add; figs, juice, sugar.  Cook down for 15 minutes, break down figs as they cook.  Add in vanilla and pectin and cook for additional minute.  Cool down and place in jam jars.  Refrigerate and store Fig jam in the refrigerator.

Derby Chicken Salad

Derby Chicken Salad
Serve With Toast, Or As A Simple Salad!

Cooking Time: No cooking required


Ingredients
Toast
3 cups cooked chisken breast, cubed
2 cups seedless grapes, halved
3/4 cup onions, chopped
1 green onion, chopped
3/4 cup walnuts pieces
2 celery, sliced thin
2 cups watercress
1 cup mayonnaise
1 tbsp white vinegar
salt
pepper

Cooking Tools
Large mixing bowl


Directions
Whisk together, mayo and vinegar.  Toss in cooked chicken, grapes, onions, green onions, walnuts and cerlery.  Mix ingredients salt & pepper to taste.  Toast bread, create a sandwich and top with watercress.

Ginger Pork Pot Roast

Ginger Pork Pot Roast

Ingredients
6 lb. pork butt or shoulder, bone-in
1 Vidalia onion, sliced
1 green pepper, sliced into rings
1 yellow pepper, sliced into rings
1 red pepper, sliced into rings
2 cups, baby carrots
2 celery stalks, large chop
5 slices fresh ginger, peeled, 1/4" thick
5 garlic cloves, sliced
1 can stewed tomatoes
3 cups ginger ale
1 1/2 cups ketchup
2 envelopes, Lipton onion soup mix
1/4 cup brown sugar
3 tbsp corn starch
1/2 cup water
minced parsley, garnish
salt
pepper

Directions
Preheat oven 325 Degrees F. Place all the vegetables and ginger at the bottom of pan and place pork shoulder on top of vegetables.  In a small mixing bowl, whisk together, ginger ale, ketchup, soup mix and brown sugar.  Pour liquid over pork and vegetables.  Place foil over pan and seal.  Bake in over for 6 hours.  Remove foil the last half hour, mix cornstarch and water and pour into liquid surrounding the pork roast and stir (this should be done the last half hour of cooking).  The sauce will thicken as it cooks for 30 minutes. Salt and pepper to taste, garnish with minced parsley.  Serve with mashed potatoes or rice.

Shrimp Scampi

Shrimp Scampi
Serve With Pasta Or A Perfect Slice Of Crusty Bread!

Prep Time: 30 minutes
Cooking Time: 6-8 minutes

Ingredients
1 lb. large shrimp, shelled, deveined, tail on
1 cup roasted red pepper, diced
2 cups, assorted tomatoes, diced
1 small shallot, minced
2 garlic cloves, minced
1/4 cup green onions, chopped
4 tbsp clarified butter
1/4 cup olive oil
1 tbsp parsley, minced
salt
pepper

Cooking Tools
Cast iron or medium skillet



Directions
Melt butter and oil on medium heat.  Saute garlic & shallots for a 2 minutes.  Add in shrimp, toss and cook for 3 to 4 minutes until pink. Top with peppers, green onions and tomatoes to heat through, salt and pepper to taste.  Garnish with minced parsley.
Serves 4

Chocolate Pudding With A Drambuie Whip

Cooling Time: 4-5 hours



Ingredients
2 cups whole milk
1/2 cup sugar
1/3 cup natural cocoa powder
4 tsp cornstarch
3 large egg yolks
2 tsp pure vanilla extract
1/4 tsp fine salt
1 cup whipping cream
2 tbsp Drambuie
sliced strawberries, garnish
mint leaves, garnish

Directions
Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat.  Meanwhile, whisk the remaining 1/2 cup of the milk, cornstarch, salt, egg yolks, and vanilla in a bowl. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more. Pour the pudding into 6 small cups. Cover with plastic wrap and refrigerate for at least 4 hours or until set.  Just before serving pour the cream into a chilled bowl. Whip the cream with a whisk or a hand held mixer, and continue beating until soft peaks form. Take care not to over-beat the cream, pour Drambuie in the whip cream and whip for 10 secs.  Serve pudding with a dollop of cream, sliced strawberries and mint leaf for garnish.

Pan Fried Grouper With A English Pea Salad

Ingredients
2 Fresh Grouper Filet, skin removed
1 cup fresh English peas
1 1/2 cups assorted grape tomatoes, sliced
2 cups Watercress
2 lemons, halved
2 limes, halved
4 tbsp butter
4 tbsp olive oil + drizzle
1/4 tsp garlic powder
1/4 tsp onion powder
salt
pepper

Directions
Preheat grill on high and place lemon and lime halves, cut side down.  Grill lemon and lime for 5 minutes, set aside. Boil water in a small sauce pan and cook English peas for a few minutes.  Drain peas and shock in ice water to retain color.  Drain peas and place in small mixing bowl with sliced tomatoes and watercress.  Drizzle salad with olive oil, salt and pepper the salad.  In a preheated pan on medium heat, add butter and olive oil. Season Grouper filet with garlic and onion powder, salt, pepper. Pan fry Grouper in the butter/olive oil for 4 minutes on each side. Plate Grouper and drizzle with some cooking oil and top with salad.  Squeeze some lemon, lime juice on top.

Breakfast Loaf

Breakfast Loaf
Everything Delicious In One Package!

Ingredients
1 loaf Challah bread
5 eggs
1 cup roasted red pepper, diced
1 cup green pepper, diced
1 cup onion, diced
2 cups spinach leaves
1 garlic clove minced
1/4 cup green onions, diced
1/4 Lb. bulk breakfast sausage
3/4 cup shredded cheddar cheese
3 bsp butter
olive oil
salt
pepper

Non stick frying pan

Directions
Preheat oven to 350 Degrees F. Slice Challah bread long ways were the the top of the loaf crown meets the base. Hollow out inside both the top and bottom evenly, leaving at least 1/2 inch for support. Drizzle the inside with some olive oil and bake in the oven for 10 minutes, until toasted.  In a non stick pan on medium heat, cook and brown bulk sausage.  Add in red and green pepper, onions, green onions, garlic and cook for 10 minutes or until tender.  Add in spinach and cook for additional few minutes until wilted. Salt and pepper to taste, and set aside.  In a mixing bowl, whisk the eggs, add salt and pepper. Melt butter in a clean non stick pan on low heat and add whisked eggs and slowly cook egg until it is a soft scramble. Mix in the sausage with vegetables and cheese into the eggs, remove from heat.  Stuff egg mixture into the hollowed out cavity, both the bottom and top.  Carefully invert the top onto the bottom and let it set for 10 minutes before slicing.
