Ingredients1 lb. large shrimp, shelled, deveined, tail on1 cup roasted red pepper, diced2 cups, assorted tomatoes, diced1 small shallot, minced2 garlic cloves, minced1/4 cup green onions, chopped4 tbsp clarified butter1/4 cup olive oil1 tbsp parsley, mincedsaltpepper
Cooking ToolsCast iron or medium skillet
Directions
Melt butter and oil on medium heat. Saute garlic & shallots for a 2 minutes. Add in shrimp, toss and cook for 3 to 4 minutes until pink. Top with peppers, green onions and tomatoes to heat through, salt and pepper to taste. Garnish with minced parsley.
