Frozen Berries With Hot Chocolate Caramel Sauce
Cold & Hot Makes This Dessert Fabulous!

Cooking Time: 15 minutes

Ingredients
2 cups fresh strawberries, halved
1 cup fresh blueberries
1 1/2 cups raspberries
1 can Dulce de leche
1/2 cup semi sweet chocolate chips

Cooking Tools
Small sauce pan
Sheet trays
Directions
Place cleaned and dried berries on a sheet pan and place in the freezer for a few hours.  Right before serving, Melt chocolate ans Dulche de leche in a saucepan on low heat.  Place frozen berries in a serving bowl and pour hot caramel over top, serve immediately.
Serves 4

Spinach Stuffed Chicken With Parsnip Puree

Ingredients
8 boneless, skinless chicken thighs
2 boxed frozen spinach, thawed & drained
1 cup onions, small dice
1 garlic clove, minced
1/2 cup grated Parmesan cheese
2 tbsp butter
3 tbsp olive oil + drizzle
salt
pepper

Parsnip Puree
Ingredients
8-10 parsnips, peeled & diced
1/2 cup onion, dice
1 clove garlic
1 1/2 cups whole milk
1/2 stick butter
pinch of nutmeg
sat
pepper 
Directions
Place all ingredients in a pot on medium low heat with lid on and cook until soft.  Use an emersion blender to create a puree. Adjust any seasoning.

Directions
In a frying pan, add butter and olive oil to medium heat.  Saute spinach, onions, garlic until tender and all water has evaporated.  Toss in cheese, nutmeg and salt & pepper to taste.  Set aside to cool. Stuff each thigh with spinach mixture and close seam with wooden skewers.  Place each thigh into a greased baking dish and coat with some olive oil and salt& pepper on top.  Bake in oven for 50-60 minutes.  Place sliced chicken on top of Parsnip puree and pour some of the cooking juices on to sliced thighs.

Ingredients
2 cups grape tomatoes, sliced
1 cup fresh mango, small dice + juices
1 avocado, diced
2 tbsp red onion, minced
juice of 1 lime
1 tbsp minced parsley
1 tbsp minced cilantro
1 tbsp minced green onions
1 tbsp minced jalapeno peppers (optional)
tortilla chips
salt

Cooking Tools
Salsa bowl
Small mixing bowl

Directions
Place all diced ingredients and lime juice in a mixing bowl and let stand at room temperature before serving.

Berry Crumb Pie

Berry Crumb Pie
Perfect For A Party Of Two!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: 30-35 minutes


Ingredients
1 box Pillsbury Pie Crust
2 cups strawberries, halved
1 1/2 cups blueberries
1 1/2 cups black berries
1 1/2 cups flour
1/2 cold stick butter, diced
1 cup sugar, divided
1 tsp vanilla extract

Cooking Tools
2 Small cast iron pan
Small mixing bowl
Pastry cutter
Parchment lined sheet pan

Before you pop in the oven!

Directions
preheat oven to 400 Degrees F. In a small mixing bowl, add; flour, 1/2 cup sugar, diced butter and vanilla extract.  Cut flour mixture with a pastry cutter until it resembles crumbs, you can also use your fingers. Place pastry dough into cast iron, trim off excess dough and create pleates along edges. Place some of the flour mixture just to line the bottom of the pie before adding berries. Equally place berries into each of the dough lined cast iron pans. Sprinkle evenly the rest of the sugar on top of the berries and layer more of the flour mixture on top of the berries.  Place pie on sheet pan and bake in oven for 30-35 minutes or until golden and bubbly.  Completely cool before serving.

Beef Shish Kabobs

Beef Shish Kabobs

Prep Time: 2 hours, 30 minutes
Cooking Time: 8-10 minutes



Ingredients
4  8oz. filet mignon, cubed
1 red onion quartered
8 oz. button mushrooms, halved
1 zuccini, sliced & halved
1 yellow squash, sliced & halved
10 oz. Baby sweet peppers, assorted
minced green onion, garnish
vegetable oil
salt
pepper

Marinade
Ingredients
1 cup low sodium soy sauce
1/4 cup Mirin
1 tsp fish sauce
2 garlic cloves, pressed
3/4 cup brown sugar
1/2 tsp sesame oil
pepper 


Cooking Tools
Large freezer bags
Wooden skewers (long)
Outdoor grill


Directions
Whisk all the ingredients for the marinade. Place filet cubes into the freezer bad and pour in the marinade. Marinade in refrigerator for 2 hours. prepare your vegetable and coat with a little vegetable oil, salt & pepper.  Make your kabobs alternating meat and vegetable on the skewers. Preheat grill on high and grill for 4 minutes on each side, flipping only once.  Let rest before serving and garnish with minced green onions..

Crispy Smashed Potatoes

Crispy Smashed Potatoes

Difficulty: Easy
Prep Time: 10 minutes
Cooking Time: 1 hour



Ingredients
16 baby red potatoes
16 pats of butter
olive oil
garlic powder
dried oregano
dried tarragon
salt
pepper

Cooking Tools
Large stock pot
Parchment lined baking sheet 

Directions
In a stock pot add potaoes and cold water to cover potaoes and set temperture on high to boil for approx. 30 minutes or longer until potatoes are cooked but not falling apart. Preheat oven to 420 Degress F. Drizzle oil on parchment lined baking sheet, add potatoes and using a spatula, smash down to flatten potatoes. Drizzle with additional oil and lay a pat of butter on each potato.  Sprinkle each potatoes with garlic powder, dried oregano and tarragon.  Salt and pepper potatoes.  Bake in oven for 30 minutes or until edges are crispy.

Walnut Caramel Monkey Bread

Walnut Caramel Monkey Bread

Ingredients
1 Pillsbury Grand biscuit dough
1 cup brown sugar
1/4 cup caramel sauce
1 stick butter, melted
3/4 cup walnut bits
1/2 cup raisins

Cooking Tools
Tin bread loaf pan
2 Small mixing bowls



Directions
Preheat oven to 400 Degrees F. Uncan biscuit dough and seperate each biscuit dough and cut into fourths.  Spread caramel sauce evenly at the bottom of loaf pan. Sprinkle with some walnuts and raisins.  Dip each dough into the melted butter and roll into brown sugar.  Place each ball into loaf pan.  Sprinkle walnut and raisins inbetween dough balls.  Do not press down, layer until all dough balls are used.  Bake in oven for 30 minutes.  Remove from oven and let cool for 15 minutes and place a plate on top and invert loaf.
Serves 6
