Grouper Summer Shandy

Grouper Summer Shandy
Served Over A Potato Galette!
Difficulty: Easy
Prep Time: 20 minutes
Cooking Time: 10 minutes

Serve Over Potatoes, Rice Or Pasta!



Ingredients
4 Grouper filet
1 cup Leinenkugel's Summer Shandy
1/2 stick butter
4 tbsp light olive oil
1 cup flour
1 tsp garlic powder
1 tsp onion powder
minced parsley for garnish
1/2 tsp sugar
salt
pepper

Cooking Tools
Shallow nonstick skillet
Fine mesh strainer


Directions
Prepare Grouper Filet: Pat dry filet, dust each filet with garlic powder, onion powder, salt & pepper on both sides. Lightly dredge filet in flour.  Melt butter and oil in a shallow skillet on medium heat. Fry each side for 3-4 minutes, depending on thickness of fish. Remove fish and set in a warm place.  Stain butter and oil through a fine mesh strainer.  Keep the oil, discard the fine bits. Pour oil back in skillet and add the Summer Shandy, sugar and reduce liquid by half on medium heat. Season to taste and pour over fish, garnish with minced parsley.

Filet Oscar

Filet Oscar
Crab In Bearnaise Sauce Is Absolutely Delicious!

Ingredients4  8oz. Filet Mignon
1 1/2 cups cooked jumbo lump crab
4 egg yolks
1 stick butter
1/2 tbsp white wine vinegar
1/2 tbsp fresh lemon juice
1 tbsp fresh tarragon leaves
salt
Cooking Tools
Small food processor
Small saucepan 


Directions
Melt butter in a small sauce pan until a simmer.  Add in egg yolks, vinegar, lemon juice in the food processor and pulse. Start to stream the melted butter through the top of food processor as you continue to pulse the egg mixture.  Add in tarragon and pulse for a few more seconds to a Bearnaise sauce. Pour sauce back into the saucepan on very low heat, add lump crab meat and toss gently in the sauce just to heat through and the sauce thickens.  Cook's Note: If the temperature is too high, the sauce will separate and break.  Remove from heat. Cook Filet too your liking and top with the Oscar sauce!

Buttery Chili Shrimp

Buttery Chili Shrimp

Ingredients
1 lb. head/shell on jumbo shrimp
1/2 stick butter
2 tbsp olive oil
3 cloves garlic, sliced thin
1/2 tsp sweet paprika
1/4 tsp chili powder
1/2 cup cilantro, rough chop
juice of 1 lime
salt
Cooking Tools
Wok/ deep skillet
 



Directions
Rince and dry shrimp.  Melt butter and olive oil in a wok until simmering.  Saute garlic, paprika, chili, powder for a few minutes. Toss in shrimp and cilantro leaves and cook for approximatley for 6-8 minutes, depending on the thickness of the shrimp. Squeeze lime juice the last few seconds of cooking, salt to taste.

Chunky Cherry Fudge Ice Cream

Chunky Cherry Fudge Ice Cream
No Churn Homemade Ice Cream!
Difficulty: Easy
Prep Time: 30 minutes
Cooking Time: No cooking required
Chill Time: 6-8 hours

Ingredients
2 cups heavy cream
1 can sweet condensed milk
1 tsp vanilla extract
1 tbsp Cherry Kirsch syrup
12 fresh cherries, pitted, halved
1 1/2 cups ready made fudge, small chunks
chocolate sauce (optional)

Cooking Tools
Electric hand mixer
Large mixing bowl
Container with lid 

Directions
In the mixing bowl, whip heavy cream, cherry kirsch and vanilla until light and fluffy, drizzle sweetened condensed milk in a steady stream until blended well.  Fold in cherries and chocolate fudge.  Place in container and freezer until set, about 6 hours.
Serve with chocolate sauce

Filipino Mango Float

Filipino Mango Float

Chill Time: 3 hours +


Ingredients
3 ripe mangoes, diced
2 cups cold heavy cream
1 can sweetened condensed milk
1 tsp vanilla extract
2 cups crushed graham crackers
3 tbsp butter, melted
mint leaves for garnish

Cooking Tools
1 medium mixing bowl
1 freezer ziploc bag
4 dessert cups/bowls
Electric hand mixer 


Directions
Place graham crackers in a ziploc bag and crush.  Mix in the melt butter into the crushed graham crackers and coat well. In a mixing bowl, whisk heavy cream and vanilla extract until almost completely whipped. Slowly add sweetened condensed milk in a steady stream as you continue to whip with the electric hand mixer. Layer each dessert cup with the crushed graham cracker, sweetened whip then diced mangoes, repeat another layer. The last layer should be mangoes and sprinkle of graham cracker crust.  Garnish with mint leaves. Chill in refrigerator for 3 hours before serving.

Miso Glazed Halibut

Miso Glazed Halibut

Cooking Time: 8-10 minutes


Ingredients
4 Halibut Filet, skinless
2 tbsp Miso paste
1 tbsp sugar
1 tbsp vegetable oil + greasing
1/2 tsp sesame oil
1 garlic clove, paste
1/4 tsp ginger, grated
1/4 cup Mirin
1 tbsp Sake
pepper
Cooked Rice
soy sauce for dipping
black sesame seeds for garnish
micro greens for garnish

Cooking Tools
Small mixing bowl
Large ziploc freezer bag
Indoor grill pan 

Directions
Whisk together all the ingredients in the mixing bowl. Place Halibut filet in a freezer bag and pour in the whisked glaze.  Remove as much of the air out of the bag and seal and place in the refrigerator for at least 2 hours.  Remove from bag and prepare grill pan on high heat and grease with some oil. Grill fish for 4 minutes on each side, depending on the thickness of the fish.  Serve with hot cooked rice and soy sauce for dipping.  Garnish with sesame seeds and micro greens.

Granola Pancakes

Granola Pancakes

Difficulty: Easy

Cooking Time: 5 minutes



Ingredients
2 cups Bisquick pancake mix
2 eggs
1 cup milk
1 1/4 cups granola
1/2 tsp vanilla extract
butter
Maple syrup

Cooking Tools
Nonstick skillet
Metal rings molds (optional)
Medium mixing bowl 

Directions
In a mixing bowl, add; Bisquick, eggs, milk, vanilla and whisk.  Fold in the granola and blend well. Heat some butter in a skillet on low and if using the rings, make sure you grease the inside before placing in the skillet. Ladle batter into the rings or the skillet.  Wait until you start to see bubbles and the sides start to firm. Flip pancakes and cook for additional minute. Cook's Notes: If using a ring, fill the batter half way up the ring and the cooking time might be just a bit longer due the thickness of the pancake. Flip the ring along with the pancake to keep the shape as it finishes cooking. Serve with butter and Maple syrup.
          Yields 4-6

Plantain Street Tacos

Plantain Street Tacos

Ingredients
1 1/2 cups ripe plantain, diced
8 count small corn tortillas
1/2 cup onions, diced
1/2 cup green pepper, diced
1/2 cup red pepper, diced
1/4 cup canned green chilies,  small dice
2 cloves garlic, minced
1 ear of corn, kernels removed
1 cup canned black beans, rinsed & drained
1/2 cup cilantro, chopped
1 cup tomatoes, diced
2 tbsp olive oil
1 tbsp vegetable oil
1/2 tsp chili powder
crema (optional)
salt
pepper

Cooking Tools
Nonstick skillet 

Directions
Prepare corn tortillas by frying tortilla in a small amount of vegetable oil on both sides for about 30 seconds on each side, set aside. In a nonstick skillet, heat olive oil on medium heat and fry diced plantains until cooked to a golden brown. Add in the rest of the ingredients (except the tomatoes) and saute until vegetables are tender, salt & pepper to taste. place ingredients into the prepare tortillas, top with fresh diced tomatoes & crema.

Truffle Butter Buns

Truffle Butter Buns

Prep Time: 15 minutes
Cooking Time: 20-25 minutes


Ingredients
uncooked pizza dough, rolled out
1/2 cup Truffle butter, softened
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup + garnish
olive oil
salt
pepper

Cooking Tools
6 count muffin tin
Rolling pin
Pastry brush 

Directions
Preheat oven to 400 Degrees F.  Unroll pizza dough and roll into a rectangle. Spread softened Truffle butter ( can be found in a gourmet grocery store). Equally sprinkle on garlic powder, onion powder, Parmesan cheese, salt & pepper.  Starting at one end and roll to the other, looking like a pinwheel. cut into 6 rounds and place each one into a greased muffin tin. Brush buns with some olive oil and bake in oven for 20-25 minutes.
Sprinkle hot buns with Parmesan cheese.

Root Beer Brisket

Root Beer Brisket

Cooking Time: 6 hours




Ingredients
6 lb. beef brisket, trim excess fat
1 Vidalia onion, sliced
5 cloves garlic, slice thin
1 canned root beer
1 cup ketchup
1/4 cup A1 steak sauce
1/4 cup brown sugar
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper

Cooking Tools
Large Dutch oven with lid
Small mixing bowl



Directions
Preheat oven to 325 Degrees F.  Place brisket in Dutch oven fat side up. Place onion slices and garlic on top of brisket. Whisk together the rest of the ingredients and pour over top of brisket.  Place lid on top and bake in oven for 6 hours, remove lid the last 45 minutes of cooking. Remove cooked brisket from Dutch oven onto a cutting board, let rest for 5 minutes before slicing against the grain. Remove onions and garlic and place on top of sliced brisket. Remove as much grease from the pan juices, and pour the Au jus on top of the brisket.
