Ingredients3/4 cup pancake mix2 egg yolks4 egg whites1/4 cup super fine sugar1/2 cup milk1/2 tsp vanilla bean extractPam cooking sprayconfectioners sugar for dustingfresh raspberriesmaple syrup
Cooking ToolsLarge non stick Frying pan with Dome lid2 3" inch ring mold2 medium mixing bowlElectric hand mixer
Directions
In one bowl, add; pancake mix, egg yolk, sugar, milk and vanilla extract and mix well. In a separate bowl, whisk egg white on high with a electric mixer until stiff peaks. Fold in egg whites into the pancake mixture until blended, gently fold not to deflate the batter. Heat pan on low, spray interior of rings and pour batter 3/4 the way up. Place lid on the fry pan and cook approx. 10 minutes. Carefully using a spatula or tongs, flip the rings intact and place lid back on the pan and cook a additional 5 minutes. Cook in batches. Release pancakes from ring and serve with a dusting of confectioners sugar and fresh raspberries, pour syrup.
