Ingredients2 cups Bob's Red Mill gluten free flour5 ripe bananas, mashed2 ripe bananas, sliced long ways3/4 cup Swerve, sugar replacement1 stick butter, room temperature2 eggs2 heaping tbsp plain yogurt1/2 tsp vanilla bean extract or paste1 tsp baking powder1 tsp baking soda1/4 tsp salt1 cup chopped walnutsbutter cooking spray
Cooking Tools2 medium mixing bowl1 large bread loaf pan or 2 medium
DirectionsPreheat oven to 350 Degrees F. Grease pans with butter cooking spray. Mix dry ingredient in mixing bowl 1. Mix bananas, sugar, eggs, butter, yogurt, vanilla extract in mixing bowl 2. With a whisk, add dry ingredients into wet ingredients 1/2 cup at a time until mixed well. Fold in walnuts and pour batter into prepared pans. Lay sliced bananas on top of batter. Bake in preheated oven for 50-60 minutes or until toothpick test come out clean. Let bread slightly cool before removing and slicing.Yields 1 or 2 loaves
