Ingredients
Hot cooked rice for 4
1 lb. pork tenderloin, sliced thin
1 onion, sliced thick
1 tbsp vegetable oil
1 tsp sesame oil
2 cloves garlic, pressed
1 tsp fresh ginger, grated
1/2 cup Mirin
3 tbsp soy sauce
1/2 tbsp Hoisin sauce
1 tbsp sugar
pepper
2 tsp cornstarch + 1/4 cup cold water (optional)

Directions
On high heat, add vegetable oil, garlic and ginger, toss very quickly for 30 seconds to prevent burning the garlic and ginger. Add pork tenderloin slices and toss until cooked: will cook fairly quickly, about 5-7 minutes. Remove to a plate, then add onions to the wok with 1 tsp sesame oil and toss quickly on medium high heat, until onions are slightly tender and golden. Put back in the wok the cooked pork tenderloin, Mirin, soy sauce, Hoisin sauce, sugar and pepper. Toss until well coated and the liquid reduces slightly. If you like a thicker sauce, add cornstarch to water to create a slurry and add to pork mixture and toss until it thickens. serve over hot rice.
