I Love Creole Style Cooking!

Ingredients
5 ears fresh corn, kernels removed
1 cup roasted red pepper, diced
1 cup onion, diced
1 clove garlic, minced
2 cup heavy cream
minced green onion (garnish)
pinch ground red pepper
salt
pepper
Shrimp Wrapped Prosciutto
Ingredients
1 lb medium shrimp, (shelled, deveined, tail on)
12 slices of Prosciutto
1 cup BBQ sauce
Cooking ToolsLarge skilletIndoor grill panSmall sauce pan
Directions
In a skillet on medium heat, melt butter. Add in the fresh corn kernels, onions, red peppers and garlic, saute for 10 minutes. Pour in heavy cream and reduce heat to a simmer. Season with salt, peeper and red pepper. Simmer for 25 minutes, the liquid to a thick sauce consistency. Slice each slice of prosciutto in half length wise and wrap each shrimp with a slice. Preheat grill pan on high and lay shrimp seam side down on the grill pan. Cook approximately 2 minutes on each side or until cooked. Heat BBQ sauce and coat each cooked shrimp before placing on Maque Choux. Garnish with minced green onions once plated.
